RUSSIAN BLACK BREAD
I have been looking for a good Russian Black Bread recipe. This one is the closest I have come. The vinegar adds a bit of a bite, but believe me, with cheese it is marvelous.

Steps:
- Place ingredients into the bread machine in order suggested by the manufacturer.
- Use the whole wheat, regular crust setting.
- After the baking cycle ends, remove bread from pan, place on a cake rack, and allow to cool for 1 hour before slicing.

ROMANOV RUSSIAN BLACK BREAD
Delicious traditional Russian black bread.

Steps:
- In a medium bowl, stir together the warm water and corn syrup. Sprinkle the yeast over the top, and let stand until foamy, about 5 minutes.
- Add 2 1/2 cups of the rye flour to the yeast mixture, and beat until smooth. Stir in the salt. Set bowl in a warm place, and cover with a cloth or towel. Let rise for 30 minutes.
- Stir in more flour 1/2 cup at a time, until the dough is stiff. Turn the dough out onto a floured surface and knead in more flour by hand as needed to form a stiff but slightly sticky dough. You may use less or more flour. Form dough into a ball. Clean the mixing bowl, and lightly grease it. Place the dough in the bowl, and cover with a towel. Place in a warm place to rise until doubled. This may take as long as 2 hours.
- Turn the risen dough out onto a floured surface, and press out the air bubbles. Roll dough into a loaf, and place into a greased 9x5 inch loaf pan. Turn the loaf so that the seam is on the bottom. Cover the pan with plastic wrap, and let rise in a warm place until doubled, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from loaf pan.
- Bake for 30 to 35 minutes in the preheated oven, or until the loaf sounds hollow when tapped on the bottom. Bread will not brown very much.

OLD-WORLD DARK BREAD
I came up with this recipe in an attempt to re-create a wonderful Russian bread I enjoyed as a child. It makes a dense, crusty loaf that dark-bread lovers are sure to savor.

- In a large bowl, combine the first 10 ingredients. In a saucepan, heat 2-1/2 cups water, molasses, butter, vinegar and chocolate to 120°-130°. Add to dry ingredients; beat just until moistened. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Turn onto a lightly floured surface. Divide dough in half; shape each portion into a ball. Place on greased baking sheets. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 50-55 minutes or until golden brown. Remove from pans to wire racks to cool. , In a small saucepan, combine the cornstarch and remaining water until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Brush over bread.

RUSSIAN BLACK BREAD (BREAD MACHINE)
Adapted from the cookbook Big Book of Bread Machine Recipes. I make this *dense* (meaning not high rising) bread in the cold months and serve with a hearty stew or soup. Not too sour a loaf of bread either as some black bread can be.

- *Variation: Instead of 3/4 cup brewed coffee, substitute 3/4 cup warm water and add 2 teaspoons of instant coffee granules.
- Place all ingredients except for sunflower seeds into bread pan in order directed by bread machine manufacturer's instructions.
- Add sunflower seeds (if using), at fruit/nut beep cycle.
- Yield: 1 1/2 pound loaf.

- In bread machine pan, place all ingredients in order listed. Insert bread pan into machine, close lid.
- Press your select buttons to read Whole Wheat | Dough | Large and press start. Once dough is finished, remove from machine pan, kneading it once or twice, shaping it into a loaf shape. Place in a greased loaf pan. Using a sharp knife, slice 3-4 slits in the top of the bread dough.
- Cover with sprayed plastic and allow to rise in a warm place until doubled, about 30-45 minutes. Try using your oven with the light on for a warm spot, or if chilly, turn your oven on to 100 empty. Turn off and open the door for 5 minutes or so to allow to cool down slightly, then place your loaf to rise in the warmed, but not turned on oven.
- Once doubled, preheat oven to 375° (be sure to remove your loaf while preheating), remove plastic wrap and bake for 30-35 minutes until top is brown and crispy to the touch. Allow to rest and cool for 10-15 minutes before slicing with a serrated. Serve warm with butter.
