RICE PILAF
This easy homemade Rice Pilaf is so flavorful and versatile it can be served with almost anything. You'll never reach for a box mix again!

Steps:
- Add rice to a fine mesh strainer or colander and rinse really well, until the water runs clear. Set aside to drain.
- Melt the butter in a medium saucepan over medium heat. Add the rice and cook, stirring often, until lightly golden. Add onion, garlic, salt, and pepper and cook until onion has softened.
- Add chicken broth and bring to a boil. Cover pot with a tight fitting lid and reduce heat to a simmer. (Do not ever remove the lid from the pot during cooking!) Cook for 15-18 minutes. Remove pot from heat and allow to rest, with the lid still on, for 10 minutes.,
- Remove lid and gently fluff the rice with a fork. Gently stir in chopped parsley.

EASY GARLIC RICE PILAF RECIPE
Garlic Rice is the side dish that goes with pretty much anything! It's packed with flavor, easy to make, and the whole family will love it! With just four ingredients, this garlic rice is a winner! Tender white rice, plenty of garlic, butter, and then some vegetable broth to make sure each grain soaks up the maximum flavor! This simple rice dish work with so many different main courses. And leftovers are great for lunches as it reheats well.

Steps:
- Rinse the rice in cold water at least three times to remove any excess starch. (see note 3)1 ½ cups white rice
- Peel and finely chop the garlic.10 cloves garlic
- Add the butter to a large shallow skillet/pan (one with a lid).3 tbsp butter
- Add the garlic and place over low heat.
- Once the garlic has softened and is smelling aromatic, remove a tablespoon of butter and garlic from the pan and set to one side.
- Add the washed rice to the remaining butter in the pan and stir to coat.
- Pour in the hot broth and the salt, then bring to a simmer.1 ½ cups hot broth½ tsp salt
- Reduce the heat to low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid has been absorbed.
- Remove from heat, but don't lift the lid. Let the finished pilaf stand for 5-10 minutes, then fluff with a fork.
- Serve the cooked rice with the reserved garlic butter and a sprinkle of fresh herbs.

RICE AND BLACK BEAN PILAF
Steps:
- Place rice and chicken broth in a saucepot and bring to a boil. Reduce heat and cook rice, covered, until tender and all the liquid is absorbed, 30 to 35 minutes. Remove from heat, uncover, and fluff with a fork.
- Heat the oil in a large saute pan over medium-high heat. Add onions and cook until onions are soft and translucent, about 5 minutes. Add garlic, oregano, celery, carrot, cumin and chili flakes and cook, stirring occasionally, until carrots are tender but not mushy, about 6 minutes. Stir in black beans and cook until just warmed through, about 1-2 minutes.
- Combine onion-black bean mixture and hot rice in a serving bowl and toss to combine. Garnish with parsley.

BAKED GARLIC RICE PILAF
This is so good, it's hard to stop eating it. Great texture with crunchy edges, great flavor with garlic and black pepper. I like to serve it with poultry, pork, or fish. Plan ahead, it bakes for 70 minutes.

Steps:
- Preheat oven to 375*.
- Heat butter in a skillet; add garlic and rice and cook until both are golden brown.
- Add 1 cup of broth and the salt and pepper.
- Bring to a boil and pour into a covered casserole; bake for 25 minutes.
- Stir in remaining 1 1/2 cups broth; cook for another 45 minutes.
- This can be doubled without increasing the cooking time.
RICE PILAF
Steps:
- Preheat oven to 350 degrees.
- In a heavy, wide, lidded pan, melt butter over medium-low heat. Add onion, red pepper, and kosher salt. Sweat the onions and peppers until aromatic, stirring constantly. Add the rice and stir to coat. Continue stirring until rice smells nutty. Add chicken broth, orange zest, saffron and water, and bay leaf. Bring to a boil. Stir once, then cover pan with moistened dish towel (or tea towel). Place lid on pan and fold towel corners over lid. Bake for 15 minutes. Then rest at room temperature for 10 to 20 minutes without removing the cover.
- Meanwhile, simmer peas in salted water until heated through or heat in a microwave.
- Remove lid from rice and turn out onto a platter. Add peas and fluff with a large fork. Add raisins and pistachios.
SWEET NUTTY BLACK RICE PILAF
From the Prepared Pantry, up here for safekeeping-- love black rice and its versatilities! The meal suggestion in my inbox was to have this with sweet chili glazed Alaskan salmon with steamed or roasted asparagus. I changed the recipe a bit after making it once, because the first run was pretty bland. Lower the water a bit if you want to omit the raisins.

- In a 2-quart sauce pan, heat the oil over medium heat, add onions and sauté until translucent, about 5 minutes, making sure not to brown the onions.
- Add the orange zest to the onions. Stir in the rice and immerse it in the oil until the rice is hot.
- Stir in the water, add salt and bring to a boil. Cover, lower heat and simmer over low heat for 30 minutes or until the rice is nearly tender.
- Let rest for a few minutes before fluffing. Add the chopped raisins and walnuts on top and serve.

This is a quick and easy family favorite that is asked for at home and at potlucks and parties. What makes this recipe so good is the endless ways that you can season it. It's also easily converted for a very large amount. I have made it for as little as my husband and I all the way to a group of 80 for my son's engagement party. Use Greek, Old Bay®, seasoned salt, garlic powder - endless possibilities.

- Dissolve chicken bouillon in water in a bowl.
- Melt butter in a skillet over medium-high heat. Cook and stir vermicelli pieces until golden brown, about 5 minutes.
- Pour bouillon mixture into the skillet with the vermicelli.
