1 small ham hock
1 (14 1/2 ounce) can Del Monte zesty jalapeno pepper diced tomato
1 (14 1/2 ounce) can diced tomatoes with green chilies
2 (10 1/2 ounce) cans chicken broth
1 stalk celery, chopped

Steps:

  • Pre-soak black-eyed peas according to the instructions on the bag.
  • Combine all ingredients and cook on low for 9-10 hours.

1 lb dried black-eyed peas
1 large onion, sliced
1 large ham hock
2 -4 slices bacon
1/8 teaspoon cayenne pepper (to taste)
1/2 teaspoon garlic powder or 1 fresh garlic clove, minced
1/2 teaspoon salt

Steps:

  • In a large saucepan, cover peas with water to 3 inches over the peas.
  • Bring to boil, reduce heat, then simmer for 45 minutes to 1 hour.
  • Place ham hock, sliced onion, bacon, pepper, garlic and salt in the slow cooker/crock pot.
  • Pour in 3 cups water.
  • Cover and cook on HIGH until peas are tender and ready to go into the crockpot.
  • When peas are tender, transfer to the slow cooker/crock pot.
  • Reduce heat to LOW; cover and cook for 7 to 9 hours.
  • Taste and adjust seasonings. Serve with hot cornbread.

1 1-pound package frozen black-eyed peas (about 4 cups), thawed

Steps:

  • Whisk the beef broth, tomato paste, maple syrup, molasses, vinegar, Worcestershire sauce, mustard and chili powder in a 4-quart slow cooker. Add the leek and set the pork on top; nestle the thyme sprigs in the liquid. Add the black-eyed peas. Cover and cook on low until the pork is fork-tender, 7 to 8 hours, or on high, 4 hours.
  • Remove the pork to a cutting board and slice. Add up to 1 cup water to the beans in the slow cooker to loosen; serve with the pork. Top with thyme.

2 lb dried black-eyed peas
2 medium onions, chopped
2 box chicken broth (32 oz each)
2 bay leaves
1 can(s) Rotel original or flavor of your preference, I use Rotel with habaneros (10 oz)
1 ham bone with some meat still on it
2 c bite-sized chunks of ham (from the ham bone plus any extra you want to add)
1 Tbsp garlic powder

Steps:

  • 1. Rinse peas. Drain and place in Crock Pot.
  • 2. Pour in chicken broth. Add water to bring the liquid just to the top of the peas.
  • 3. Bury the ham bone down into the peas. (If you don't have a bone I use chunks of ham and it works just as well.)
  • 4. Add the chopped onion, bay leaves, can of Rotel tomatoes, and garlic powder.
  • 5. Cover and set Crock Pot to low for 8 hrs.
  • 6. At that time, remove bone. Remove any meat from the bone. Cut into bite-sized pieces (you want about two cups total).
  • 7. Add ham to the Crock Pot. Recover and continue to cook for 2 more hours.
  • 8. Remove bay leaves. Serve with cornbread and enjoy!
  • 9. Note: If you do not use a ham bone and have only chunks of ham then just cook on low for 10 hrs and increase the amount of ham to about 3 cups. I use a 6 qt Crock Pot and it is full when all ingredients are added. If you are having trouble with room in the pot you can adjust the liquid to less.

6 slices bacon (cooked and sliced)
1 cup diced ham
1/2 cup diced sweet onion
1 garlic clove (minced)
1 tsp. oregano

about 1/4 tsp. salt (add to taste at the END of cooking time)
cornbread or garlic bread
collard greens
steamed white rice

Steps:

  • Add the dried peas to the slow cooker. NO NEED TO PRESOAK.
  • Add the chicken broth, can of diced tomatoes, bacon, ham, onion, garlic, oregano and pepper. Stir. WAIT TO ADD THE SALT.
  • Cover and cook on HIGH FOR 7 hours. Do not open the lid during the cooking time.
  • Add the salt to taste.

1/2 lb lean ham, pieces or 1 meaty ham bone
3 cups water
1 medium onion, chopped
6 -8 green onions, chopped

1 medium green bell pepper, chopped
2 -3 garlic cloves, minced
1 -1 1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 tablespoon cajun seasoning
1/4 teaspoon hot pepper sauce
1 tablespoon Worcestershire sauce
1 (8 ounce) can tomato sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 lb smoked sausage, sliced (andouille is best)
hot cooked rice
green onion, fans (to garnish) (optional)

Steps:

  • Sort and wash peas. Place in a large pan, cover with warm water and allow to soak overnight. Drain the peas and place in large 4 quart crock pot.
  • Add ham or ham bone to peas along with 3 cups of water. Stir in rest of ingredients except the cooked rice and green onion fans. Turn crock pot to low and allow to cook for 6 to 8 hours. Stir after 5 to 6 hours and check to see if additional water may be needed. If peas are to thick, add warm water to crock pot until desired consistency.
  • Serve over cooked rice and garnished with green onion fans.

1/2 stick (2 ounces) butter or margarine
1 large onion, cut into big cubes
1 large shallot, quartered
3 to 4 cups water
1/4 green bell pepper, cored, seeded and chopped

Steps:

  • Drain the peas, discarding the water, and set them aside. In a large skillet over medium heat, put the butter onion and shallot. When the butter is melted, increase the heat and add the peas.
