Southerner's typically serve black-eyed peas on New Year's Day for good luck. The tradition is to serve it with greens (symbolizing money and wealth). I typically make black eyed peas cooked with bacon or salt pork, and throw a penny in....the person that gets the penny is guaranteed good luck for the new year. This is a way to use up those leftover black eyed peas.

3/4 cup purple onion, finely chopped
1/2 cup red bell pepper, finely chopped
1 jalapeno pepper, seeded and finely chopped
1 tablespoon butter, melted
4 cups black-eyed peas, cooked and drained or 2 (16 ounce) cans black-eyed peas, drained
1/2 cup fine dry breadcrumb
2 egg yolks, lightly beaten
1/4 cup cilantro, chopped (half amount if using dried)
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dry mustard
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/3 cup yellow cornmeal
1/4 cup vegetable oil, divided
3/4 cup sour cream
1/4 cup green onion, chopped
1 1/2 cups salsa

Steps:

  • Saute the purple onion, red bell pepper, and jalapeno pepper in butter in a large skillet over medium-high heat, stirring constantly, until tender. Remove from heat; set aside, and let it cool slightly.
  • Mash the black-eyed peas in a large bowl. Add the onions, red bell pepper, and jalapeno to the black-eyed peas. Add the breadcrumbs, egg yolks, cilantro, garlic, cumin, mustard, oregano, thyme, and salt. Stir well. Shape the mixture into 12 2-1/2 inch patties. Dredge the patties in cornmeal.
  • Fry half of the patties in 2 tbsp oil in a large skillet over medium-high heat for 3 to 4 minutes on each side (depending on the heat of your stove), or until lightly browned. Transfer to a serving plate; set aside, and keep warm. Repeat with the remaining patties and other 2 tbsp oil.
  • Top each patty with 1 tbsp sour cream; sprinkle with green onions. Serve with salsa.

Eating black-eyed peas and greens on New Year's Day is thought to bring good fortune for the rest of the year (thanks to the peas' resemblance to coins and the greens' to folded dollar bills). Combine these with steel-cut oats for a dish that's packed with fiber, protein and, hopefully, a bit of luck!

2 tablespoons extra-virgin olive oil
1 large red onion, halved and thinly sliced (about 1 1/2 cups)
3 cloves garlic, minced (about 1 heaping tablespoon)
8 ounces ham steak (about 1/2-inch thick), cut into 1/2-inch cubes
2 large bunches collard greens, stemmed and leaves cut into 1/2-inch-thick ribbons (about 2 pounds total)

2 cups low-sodium chicken broth
1/2 cup apple cider vinegar
Kosher salt and freshly ground black pepper
One 15-ounce can black-eyed peas, drained and rinsed
2 tablespoons unsalted butter
2 cups steel-cut oats
Louisiana-style hot sauce, for serving

Steps:

  • Heat the oil in a large, low-sided stockpot or Dutch oven set over medium-high heat. Add the onions and cook until they start to soften and are brown in parts, about 5 minutes. Add the garlic and ham, and cook until the garlic softens, about 2 minutes. Add the collard greens, broth, vinegar, 1 teaspoon salt and 1/4 teaspoon pepper. Stir to combine and cook, covered, until the collards are tender, 20 to 30 minutes. Stir in the black-eyed peas and butter, and cook until the beans are warmed through, about 5 minutes.
  • Meanwhile, fill a large saucepan three-quarters with water. Salt lightly and bring to a boil. Add the oats and cook, stirring occasionally, until just tender, about 15 minutes. Drain the oats and divide them among six bowls. Top with the collard greens, ham and black-eyed peas. Serve immediately with hot sauce if using.

1 tablespoon olive oil
1 small yellow onion, diced
4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
2 smoked ham hocks
1 cup dried black-eyed peas
4 cups collard greens, chopped
1 teaspoon salt
1 teaspoon black pepper
2 cups chicken stock
2 bay leaves
1 teaspoon fresh thyme, chopped
1 teaspoon liquid smoke
2 tablespoons apple cider vinegar
3 -4 dashes hot sauce

Steps:

  • Set a 6-quart or larger Instant Pot to sauté. Once hot, add the oil, onions, garlic and crushed red pepper flakes. Cook until softened, about 3 minutes. Add the ham hocks and sauté for another minute. Turn off the machine and stir in the black eyed peas, collard greens, salt, pepper, chicken stock, bay leaves, thyme, and liquid smoke.
  • Lock the lid in place, making sure the valve is set to seal, and pressure cook on high for 25 minutes. Allow the machine to natural release for 10 minutes before manually releasing any residual steam.
  • Carefully open the lid and stir in the vinegar and hot sauce. Give it a taste and adjust seasoning accordingly. Discard the ham hock bones and serve immediately.

1 large red onion, slivered
4 cups collard greens, chopped (about half a bunch)
2 cups yams or 2 cups sweet potatoes, diced but not peeled
2 cups cooked or canned black-eyed peas, rinsed and drained
2 cups water
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons yellow cornmeal (optional)

Steps:

  • Heat the oil in a large flameproof casserole or Dutch oven. Add the onion and cook for about 8 minutes, stirring occasionally, until lightly browned.
  • Add the collard greens, yams, black-eyed peas, water, pepper and salt, and cover. Bring to a simmer and cook for about 20 minutes, stirring occasionally.
  • To thicken, gradually stir in the cornmeal and cook for 5 to 10 minutes more. Serve in large tureens or bowls, with cornbread.

3/4 lb boneless pork shoulder, trimmed and cut into 1/2-inch cubes
3 cups chicken broth, divided
4 cups loosely packed chopped collard greens
1 cup chopped red onion
1 cup chopped tomatillo
1/2 cup chopped fresh cilantro
2 teaspoons finely chopped jalapeno peppers
1/2 teaspoon dried Mexican oregano (such as McCormick's)
2 garlic cloves, chopped
1 (15 ounce) can black-eyed peas, rinsed and drained
1/4 teaspoon salt
1/4 teaspoon black pepper
6 lime wedges

Steps:

  • Preheat broiler.
  • Place poblano pepper on a foil-lined baking sheet; broil 3 inches from heat 8 minutes or until blackened and charred, turning after 6 minutes. Place in a heavy-duty zip-top plastic bag; seal. Let stand 15 minutes. Peel and discard skin; discard seeds, membrane, and stem. Coarsely chop pepper; set aside.
  • Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add pork; cook 4 minutes, browning on all sides. Add 1 cup broth, scraping pan to loosen browned bits. 1 -2 lb chicken wings (10 pieces)
4 cups chicken stock
1 onion, chopped
4 cloves garlic, minced
1 1/2 cups canned stewed tomatoes
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon dried oregano
salt and pepper
4 potatoes, peeled and cubed
2 cans black-eyed peas
3 sausages, cut into bite size (your preference)
2 pieces bacon, chopped
6 cups collard greens, chopped
hot sauce

Steps:

  • Add chicken wings and stock, chopped onions, garlic and spices to soup pot and bring to a boil.
  • Reduce heat, add tomatoes (crushed with your hands), salt and pepper and simmer until wings are tender.
  • Add potatoes, black-eyed peas, sausage, bacon and greens, simmer 30 minutes.
  • Remove chicken wings and allow to cool.
  • Separate chicken meat from bones and return meat to soup.
  • Season with hot sauce (optional) Serve with cornbread.

1 lb collard greens (substitute turnip, mustard, or beet greens)
1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
1 medium yellow onion, finely diced
1/4 cup sour cream
1 tablespoon dijon-style mustard or 1 tablespoon horseradish
1 pinch ground cayenne pepper (or to taste)
salt and pepper
1 (14 ounce) can black-eyed peas

Steps:

  • Remove coarse stems from greens and discard. Wash and spin dry, then cross cut into 1" square pieces.
  • Drop greens into a pot of boiling, lightly salted water. Cook uncovered 5-10 minutes, or until just tender. Timing will depend on the age and size of the greens. Very young greens will need only 1 or 2 minutes. Drain thoroughly.
  • Meanwhile, in a large non-aluminum skillet, melt butter and oil over medium heat. Add onion, stirring frequently, 5 minutes or until softened and slightly browned. Add black-eyed peas and drained greens. Toss to coat.
  • In a small bowl, combine sour cream, mustard (or horseradish if using), and cayenne pepper with a whisk or fork. Add to peas and greens and cook, stirring frequently, 3-5 minutes or until liquid has almost evaporated. Season with salt and pepper and serve warm. Have a little more sour cream/mustard (or horseradish) to serve on the side.

  • In a 6 - 7 qt slow cooker set on low, add in the Ham Hocks, Black Eyed Peas, halved Garlic Cloves, diced Onion, Bay leaves, Thyme and Pepper.
  • Pour the Chicken Broth and 1 cup of Water over the peas. Set to cook in your slow cooker for 6 hours on low. It can be kept at warm until you are ready to add in the Collard Greens.
  • In a skillet, cook the Bacon until crispy, remove to a paper towel lined plate for later. Over a medium heat, add the Collard Greens to the bacon drippings in the skillet and cook until they have wilted and are dark green, saute for about 10 minutes, stirring occasionally.
  • While the Collard Greens are sauteing, remove the Ham Hocks from the slow cooker and take the meat off the bone. Shred the meat with a couple of forks then return the meat to the slow cooker.
