CHERRY BELLINIS
Cherry Bellinis - Made with homemade cherry liquer, cherry juice, and prosecco!

Steps:
- In an airtight jar, add the cherries and Everclear®. Close with lid and keep in a cool, dark place for 5-6 days to steep.
- After 5-6 days, drain the liquid into a saucepan over a fine strainer. Discard solids.
- Place the pan on the stove over medium low heat. Stir in the water and sugar until well-combined. Bring the mixture to a light boil. Lower the heat slightly and continue simmering for about 10 minutes. Remove from the heat and let cool. Store in the refrigerator.
- In two champagne flutes, divide the cherry juice and the liqueur evenly amongst each glass. Top with chilled prosecco. Stir gently. Serve.

BLACK CHERRY BELLINI
New Year's Eve Cocktail? Make the fruit Puree ahead of time for this Black Cherry Bellini cocktail so you can serve up them up in super-quick time!

- Place the juice from the cherries in kirsch(just the liquid), plus the cherry juice into a small saucepan. Bring to the boil, then simmer until reduced by approx one third (takes around 20 minutes).
- Leave to cool, then add the cherries back in and blend using a hand blender. At this point you can cover and refrigerate for 1-2 days until ready to use.
- To decorate the glasses, slice a lemon in half and run the lemon around the rim of the glasses. Mix together the sugar and gold glitter/lustre on a small plate, and dip the rim of the glasses in this sugar mixture.
- When you're ready to serve, fill around 1/3 of each glass with the black cherry puree. Top up with prosecco or champagne. Thread 2-3 cherries through a skewer and place in each glass to decorate before serving.

- Spread sugar over a small plate. Pour lemon juice onto another small plate. Dip the rim of a martini glass in the lemon juice, then into the sugar to coat.
- Fill cocktail shaker with ice. Add vodka, black cherry juice, grapefruit juice, and agave nectar. Cover shaker with lid and shake vigorously until chilled, about 10 seconds. Strain drink into prepared martini glass and garnish with maraschino cherry.

- Stir the sugar and water in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely.
- Puree the peaches and orange peel in a blender with 1 1/2 cups of the sugar syrup until smooth. Strain through a fine-meshed strainer and into a bowl. Transfer the puree into a pitcher or clear glass bowl.
- For each serving, pour 2 to 4 tablespoons of the peach puree into a Champagne flute. Slowly pour enough Prosecco into the flute to fill. Gently stir to blend. Garnish each with an orange peel twist, and serve.
- Do-Ahead Tip: The peach puree can be made 1 day ahead. Cover and refrigerate.
CHERRY BELLINIS
Steps:
- Put the sugar and 1/4 cup water in a small saucepan and bring to a boil over high heat. Boil until the sugar dissolves, about 5 minutes. Transfer to a bowl or measuring cup and cool in the refrigerator.
- Combine the cherry juice and half of the cooled simple syrup in a large pitcher. Add the cava and stir to combine. Taste and add more simple syrup if desired. Serve in chilled wine flutes.

- Place the prepared cherries in a bowl and add granulated sugar; stir to combine and let them sit for 15 minutes.
- Preheat oven to 350ºF while cherries are macerating.
- Using a slotted spoon, place cherries in a single layer on a baking sheet lined with parchment paper; keep the juice for later.
- Transfer to the preheated oven and reduce the heat to 250ºF; roast for 30 minutes.
- Halfway through cooking, turn the pan around and roast for the remaining 15 minutes.
- Remove from the heat and increase the temperature back to 350ºF.
- While the oven is getting warmer, toss the cherries around.
- When it's back at 350, return the baking sheet to the oven and this time, roast them for only 15 minutes.
- When time is up, remove from the heat and scoop up about ½ a cup of cherries to reserve for later.
- Add the remaining cherries to the bowl of a food processor including the reserved juice. Pulse until almost smooth, leaving some tiny pieces.
- Transfer the mixture to a large bowl and add sweetened condensed milk, cherry Brandy (substitute Cherry Simple Syrup) and fleur de sel; whisk until well blended and set aside.
- To make the whipped cream, add heavy cream and powdered sugar to the bowl of a stand mixer. Using the whisk attachment, process until stiff peaks form.
- Scoop half of the whipped cream into the cherry mixture and fold in gently. Add the cherry mixture to the remaining whipped cream and fold it in until well mixed.
- Coarsely chop the reserved cherries and add to the mixture; stir to blend.
- Pour the mixture into a 9x5x3 chilled metal loaf pan, cover with plastic wrap then foil.
- Transfer to the freezer until hard, about 6 to 8 hours.
