1 Anaheim chili, chopped, or 1/4 cup canned chopped green chilies
1 garlic clove, crushed
1 tablespoon grated lime peel
3 tablespoons lime juice
1 medium tomato, chopped (3/4 cup)
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
2 cans (5 oz each) white tuna in water, rinsed, drained

Steps:

  • Heat oil in 10-inch skillet over medium heat. Cook onion, chili and garlic in oil about 2 minutes, stirring constantly, until onion is softened.
  • Stir in remaining ingredients. Cook about 5 minutes, stirring occasionally, until hot.

½ (15 ounce) can black beans, rinsed and drained
1 (5 ounce) can tuna, drained and flaked
½ cup mayonnaise
3 green onions, sliced
2 tablespoons bacon bits
½ lemon, juiced
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until cooled completely; drain and transfer to a large bowl.
  • Mix black beans, tuna, mayonnaise, green onions, bacon bits, lemon juice, and black pepper with the macaroni. Cover the bowl with plastic wrap and refrigerate until chilled.

3 to 4 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 (15-ounce) cans black beans (drained and rinsed)
2 large tomatoes (seeded and chopped)
3 jalapeño peppers (seeded and chopped)
1 small red onion (chopped)
1/4 cup loosely packed fresh cilantro leaves
1 avocado (peeled, seeded, and chopped)

Steps:

  • Gather the ingredients.
  • Cook corn in boiling water to cover for 5 minutes.
  • Drain and cool. Cut kernels from cobs and reserve.
  • In a large bowl, whisk together lime juice, olive oil, red wine vinegar, salt, and pepper.
  • Add reserved fresh corn kernels, drained and rinsed black beans, seeded and chopped tomatoes, seeded and chopped jalapeño peppers, chopped red onion, cilantro, and avocado. Toss to coat.

1 can black beans, drained and rinsed1 large cucumber, halved and thinly sliced1 cup cherry tomatoes, halved1 avocado, seeded and cut into cubes2 scallions, finely chopped2 cans tuna, drainedgood quality extra virgin olive oil, quantity as desiredjuice of half lime (optional)sea salt to taste

Steps:

  • Drain the black beans, rinse with water, then pat dry with a clean kitchen towel or paper towel. Remove the pit from the avocado (look HERE for detailed instructions), the score the flesh in cubes and remove with a large spoon. Combine the beans and avocado with the remaining ingredients in a large bowl and garnish wit scallions, lime juice, olive oil and sea salt and stir gently to combine all the ingredients. Serve cold or at room temperature. This is hearty enough all on its own but is also delicious scooped up with tortilla chips or stuffed into a pita. Store leftovers in the fridge for one day. If making in advance and storing in the fridge omit the salt (which will draw out all the water from the tomatoes and cucumbers leaving you with a soggy salad!) and season just before serving.

2 (6-ounce) cans dark meat tuna, packed in olive oil
2 (15-ounce) cans cannelini white beans, drained and rinsed
1/3 cup small capers, nonpareil in brine, drained and rinsed
6 tablespoons red wine vinegar
Sea salt and fresh ground black pepper
1 medium red onion, thinly sliced
1 1/2 cups cherry tomatoes
2 cups fresh arugula
6 fresh basil leaves

Steps:

  • In a large bowl, add the tuna, reserving the olive oil in a separate small bowl. Break tuna into bite-size pieces with a large fork. Add the beans and capers. Into the bowl of olive oil, add the red wine vinegar. You should have 1 part vinegar to 2 parts oil - add more extra-virgin olive oil if necessary. Season with salt and pepper. Pour dressing on the tuna, bean and caper mixture and allow the flavors to infuse while slicing the vegetables. Add the onion and tomatoes to tuna mixture and toss gently.
  • Place the arugula on large decorative platter and top with tuna mixture. Tear fresh basil leaves over the top and serve immediately.

My mom and I made this up when I was visiting last weekend... High protein and very tasty. She ate this with pork rinds (low carber) while I had it on bread. Other seasonings and amounts can be added to your taste, I'm sure. Tuna salads tend to be flexible. Not sure of the yield so I guessed, since I didn't measure.

1 (14 1/2 ounce) can Italian-style diced tomatoes, drained
1 (15 ounce) can black beans, rinsed and drained
1/2 cup shredded colby (a good handful) or 1/2 cup monterey jack cheese (a good handful)
1/4 cup mayonnaise
2 hard-boiled eggs, diced
1 tablespoon parmesan cheese (optional)

Steps:

  • Combine all ingredients in a medium sized mixing bowl, stirring well to combine.
  • Enjoy with bread, crackers, pork rinds, or with a spoon. Would also be good on lettuce.

1 (15 ounce) can black beans, drained and rinsed (I do this in a strainer)
1 (4 ounce) can chopped green chilies, drained
3 tablespoons chopped red onions
1 -2 tablespoon chopped fresh cilantro
1/4 cup mayonnaise (I used light)
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
fresh ground pepper, to taste

Steps:

  • In a medium-sized bowl, flake tuna with a fork; add beans, chiles, onions, and cilantro and toss to combine.
  • In a small bowl, stir together remaining ingredients; add to tuna mixture and carefully toss to incorporate ingredients.
  • Taste and adjust seasonings, if desired.

12 sweet piquante peppers, such as Peppadews, chopped, plus 2 tablespoons brine
2 tablespoons freshly squeezed lemon juice (from 1 lemon)
2 tablespoons extra-virgin olive oil

1 cup plain yogurt
1/4 cup tahini
1 large head red leaf lettuce, chopped (about 12 ounces)
Two 5-ounce cans white albacore tuna in oil, drained
1/2 teaspoon smoked paprika

Steps:

  • 1. Stir together the chickpeas, kidney beans, green beans, onions, peppadews, brine, 1 tablespoon lemon juice and the olive oil in a medium bowl. Season with salt and pepper.
  • 2. Whisk together the yogurt and tahini until smooth. Season with salt and pepper.
  • 3. Toss the lettuce with the remaining 1 tablespoon lemon juice and a pinch of salt. Divide the lettuce among 4 plates, top with the bean mixture and then the tuna. Drizzle with the yogurt dressing and sprinkle with the smoked paprika. Toss together just before eating.
