BLACK BEAN BURGERS

Black Bean Burgers image

"Before I met my husband, I was a vegetarian. I don't make many meatless dishes on our cattle ranch, but I still love this one."

Provided by Ree Drummond : Food Network

Time 45m

Yield 4 servings

Number Of Ingredients 12

2 cups canned seasoned black beans, drained
1 cup seasoned breadcrumbs
1/4 cup grated onion
1/2 teaspoon chili powder
1 large egg
Salt and freshly ground pepper
Canola oil, for the pan
4 slices Swiss cheese
1/2 cup mayonnaise
Hot sauce
4 burger buns, toasted
Lettuce and sliced tomatoes, for topping

Steps:

  • Mash the beans.
  • Using a fork, mash the beans in a medium bowl until they are mushy but still have some whole bean pieces throughout.
  • Make the burger mixture.
  • Mix the breadcrumbs, grated onion, chili powder, egg and some salt and pepper into the beans. Add a splash of water if the mixture looks dry. Set aside for 5 minutes. Preheat a large cast-iron skillet over medium-high heat and add a few tablespoons of canola oil.
  • Form the patties.
  • Divide the bean mixture into 4 equal balls and form into 4 nice, neat patties. Black bean burgers don't shrink when they cook, so whatever size you make them when they go into the skillet will be the size they are when they come out.
  • Cook the burgers.
  • Cook the burgers until browned, 4 to 5 minutes on each side. Add a slice of Swiss cheese to the top of each burger. Invert a second skillet on top of the first skillet and continue cooking, 2 minutes, until the cheese is melted.
  • Top the burgers.
  • Combine the mayonnaise and some hot sauce in a small bowl. Serve the burgers on toasted buns with the spicy mayonnaise, lettuce and sliced tomatoes.

Take a bite out of Sandra Lee's Black Bean Burger recipe from Sandra's Money Saving Meals on Food Network for a budget-friendly vegetarian meal from the grill.

Provided by Sandra Lee

Categories     main-dish

Time 27m

Yield 4 burgers

Number Of Ingredients 13

1/2 medium yellow onion, roughly chopped
1 tablespoon chopped garlic
2 (15-ounce) cans black beans, rinsed and drained, divided
2 tablespoons freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper
4 hamburger rolls
1 tomato, sliced
4 small Romaine lettuce leaves, or any other type you have on hand
1/4 cup ketchup

Steps:

  • Heat a grill or grill pan over medium-low heat.
  • In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
  • Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
  • Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

BLACK BEAN RANCH BURGER PATTIES

Black Bean Ranch Burger Patties image

I really like veggie burgers but they are kind of pricey for my budget, so I looked for recipes then went to the store for breadcrumbs when I noticed the ranch packets on sale so made ranch burgers! I've only made them in the oven, but let me know if they work other ways. I ate mine with miracle whip!

CHIPOTLE RANCH BLACK BEAN BURGERS #RSC

Chipotle Ranch Black Bean Burgers #RSC image

"Ready, Set, Cook! Hidden Valley Contest Entry" Creamy ranch seasoning mingled with smoky chipotle makes these thick meaty black bean burgers one of a kind! Serve with Hidden Valley® Original Ranch Dressing instead of mayo for an extra kick of Hidden Valley goodness. Oh yeah? Did I mention that with the help of a food processor you can whip up these scratch made bean burgers in 10 minutes! Then just pop um' in the oven, sit back and relax.

Provided by Kristy Pea

Categories     Black Beans

Time 45m

Yield 6 burgers, 6 serving(s)

Number Of Ingredients 11

2 (15 ounce) cans low-sodium black beans, drained well
1 1/2 cups frozen corn kernels, thawed
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
1 chipotle chile in adobo, plus
1 teaspoon adobo sauce
1 (6 ounce) bag Baby Spinach
1 cup diced shallot
1 egg
3/4 cup panko breadcrumbs
1 tablespoon olive oil, plus extra for oiling pan
1 cup Hidden Valley® Original Ranch® Dressing (as a condiment)

Steps:

  • Heat 1 tablespoon olive oil in large skillet over medium heat, add shallots and sauté for 2 minutes or until slightly translucent. Add spinach and sauté for one minute or until spinach is wilted. Set aside to cool.
  • In a food processor fitted with the chopping blade combine black beans, corn, spinach, shallots, egg, bread crumbs, Chipotle pepper, Adobo sauce and the Hidden Valley Ranch Original seasoning mix. Pulse several times (stopping to remove lid and scrape down sides as needed) until mixture is desired consistency (I prefer my bean burgers fairly smooth some prefer chunky).
  • Line baking sheet with lightly oiled parchment paper.
  • Divide bean mixture into 6 portions onto prepared pan using a ½ cup measuring cup. With oiled hands shape them into thick patties.
  • Bake for 35 minutes, flipping one through cook time.

CUBAN BLACK BEAN PATTIES

Cuban Black Bean Patties image

This is my adaptation of a recipe from Cooking Light Magazine (03/07). These black bean burgers are a delicious vegetarian entree and reheat very well in a toaster oven or in a pan. I recommend serving them with rice, greens, salsa and sour cream. Be careful to fully drain the beans and cook the patties long enough so that they will stay together.
