2 3/4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon table salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
2 sticks unsalted butter, at room temperature
2 cups light brown sugar
2 large eggs
2 cups no-sugar-added applesauce
Powdered sugar, optional

Steps:

  • Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
  • Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. Alternate adding the flour mixture and the applesauce, ending with the flour, being careful not to over-mix. Transfer the batter to the prepared Bundt pan and bake until a toothpick inserted into the middle of the cake comes out clean, 55 minutes. Cool completely before inverting. Sprinkle with powdered sugar if using.

The ratios of sugar and butter to flour is far similar to the sweet layers of a tiered cake than to any legitimate loaf of bread. With that said, we love a variety of sliceable cakes and we thought we'd pass along a recipe for one of our favorite cake loaves out there (we just thought we'd call it what it really is): Applesauce Cake. This recipe is incredibly easy to make, taking only 20 minutes of hands-on time. As its name suggests, Applesauce Cake uses a significant amount of applesauce to lend sweetness, flavor, and soft moistness to the crumb of this cake. A bite is similar in texture to pumpkin bread, but the flavor is unmistakably a mix of cinnamon, ginger, and molasses. The warmth of the cinnamon and ginger complement the syrupy sweetness of the apple, molasses, and brown sugar, making for a loaf cake that will convince you a piece of dessert is perfectly acceptable with your morning cup of coffee.

I made a major mistake while mixing ingredients : since I was in a hurry, I dumped all the wet ingredients together. When I began mixing them I realized I must have done something wrong because the butter didn't blend in properly. I read the recipe again and realized I should have added the applesauce at the end, however, the cake came out just perfect, despite my mistake. I baked for 50 minutes.

⅛ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon nutmeg
¼ teaspoon ginger
½ cup butter
1 cup sugar
1 ½ cups unsweetened applesauce
1 cup chopped walnuts or pecans, or whole raisins
¼ cup hot water
2 teaspoons baking soda
1 stick (4 ounces) butter
1 cup brown sugar
¼ cup whiskey or cream
½ teaspoon salt
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 325ºF. Grease a 9x13-inch baking pan.
  • In a medium bowl, whisk the flour, salt and spices; set aside.
  • In a stand mixer fitted with a paddle attachment, beat the butter and sugar. Add the applesauce and mix until combined.
  • With the mixer set to low, gradually add the flour mixture, followed by the nuts or raisins, mixing until combined. Dissolve the baking soda in the hot water, then beat into the batter until evenly combined.
  • Spread the batter evenly in the pan. Bake for 30-35 minutes, until evenly golden and a toothpick inserted in the center comes out clean.
  • Allow to cool. Serve with a sprinkling of powdered sugar.
  • In a small saucepan over medium heat, melt the butter until it bubbles. Reduce heat to medium-low and cook until it just turns golden (about 2-3 minutes).
  • Add the brown sugar, whiskey or cream, salt and vanilla; stir continuously and low boil for 4 minutes.
  • Remove from heat, pour into a medium bowl, stirring to cool slightly. Spread over warm cake.

1/2 cup shortening (if using shortening or oil, add a dash of salt) or 1/2 cup oil (if using shortening or oil, add a dash of salt)
1 teaspoon vanilla extract
1 cup raisins (any) or 1 cup dried fruit (any)
1 1/2 cups unsweetened applesauce
2 teaspoons cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 1/2 teaspoons baking soda
2 cups unbleached all-purpose flour
1/2 cup almonds, for decorating top (sliced)

Steps:

  • Preheat oven to 350 degrees.
  • Cream Earth Balance, shortening or other oil with sugar. In small bowl, mix together vanilla extract, applesauce, spices and baking soda. Combine applesauce mixture with creamed margarine and sugar, and gradually add flour until all is combined. Fold in dried fruit, nuts or whatever you may be adding. Sprinkle with sliced almonds, if using, and spread batter into a well greased 9 x 13 pan. Bake 20-25 minutes, until top is golden, and knife inserted in middle comes out clean. The top will be spongy to the touch... which makes it pretty fun to poke.
  • If using smaller pan, recommended 8″-9″ pan, bake about 40-50 minutes, or until top is golden brown, and knife inserted in center comes out clean. Muffin cups should take a little less time than the 9 x 13 inch pan... watch until they have risen and are golden brown.
  • Let cool and serve.
