2 cups diced peeled sweet potato
2 medium shallots, sliced
2 cloves garlic, chopped
1 small red bell pepper, diced
3 sprigs fresh thyme
1 sprig fresh sage

Add the thyme, sage and bay leaf. Season with salt and pepper. Add the flour and curry to the vegetables and stir until incorporated. Cook for another 2 minutes.
  • Add the corn, chicken stock, heavy cream and sherry vinegar. Bring to a simmer and cook, covered, until the sweet potato is tender, another 20 to 25 minutes. Season with salt and pepper.
  • Plate into individual bowls and garnish with the crispy bacon and chives.

CHICKEN & BLACK BEAN CHOWDER

Chicken & black bean chowder image

Black beans are a staple of South American cuisine, whether cooked up with rice or in a feijoada (a smoky meat stew). We've gone for this satisfying chicken chowder, with chunks of griddled sweetcorn.

Provided by Jamie Oliver

Categories     Jamie Magazine     Chicken

Time 1h

Yield 6

Number Of Ingredients 15

½ a bunch of fresh coriander, (15g)
olive oil
2 onions
2 cloves of garlic
2 sticks of celery
250 g free-range cooked chicken
1 teaspoon ground cumin
1 pinch of cayenne pepper
1 x 400 g tin of black beans
750 ml organic chicken stock
2 fresh corn on the cob
1 fresh bay leaf
75 ml single cream
2 corn tortillas
1 lemon

Steps:

  • Pick the coriander leaves and set to one side, then finely slice the stalks. Peel and finely chop the onions and garlic, then finely slice the celery.
  • Place a large saucepan over a medium-low heat and pour in a good lug of oil. Add the onion, garlic, celery and coriander stalks, then sauté for about 10 minutes, or until the veg is softened but not coloured.
  • Add the cumin and cayenne to the pan and fry for a further minute. Stir in the black beans, along with their liquid, and the chicken stock.
  • Cut the corn from the cob and add it all to the pan, along with the bay leaf. Gently bring it all to the boil, then reduce the heat to low and let it simmer for 15 minutes.
  • If you prefer your chowder to be on the smooth side, you could blitz it just a little with a stick blender, otherwise just leave it nice and chunky.
  • Shred the chicken and add it to the pan with the cream. Season with sea salt and black pepper to taste, then return to the hob for a further 10 minutes.
  • Toast the corn tortillas in a hot, dry frying pan until lightly golden. Cut them into large pieces and serve them wedged into bowls of the soup, finished with the reserved coriander leaves and wedges of lemon for squeezing over.

SOUTHWEST POTATO AND CORN CHOWDER

Southwest Potato and Corn Chowder image

This Southwest Potato and Corn Chowder is full of all the goodness of classic corn and potato chowder and loaded with tons of southwestern flavor-- peppers, chiles, black beans, cumin, and chili powder!

Provided by Heather Cheney

Categories     Soup

Time 45m

Number Of Ingredients 16

3 cups russet potatoes (peeled and diced)
1 tablespoon olive oil
1/2 whole medium onion (diced)
1 clove garlic (minced)
1/4 teaspoon ground cumin
1/8 teaspoon chipotle chili powder
6 cups chicken or vegetable broth
14.5 ounces black beans (drained and rinsed)
15 ounces canned corn (or frozen)
4 ounces canned diced green chiles
2 tablespoons butter
2 tablespoons flour
12 ounces evaporated milk
1 cup Monterrey Jack Cheese (grated)
1/4 teaspoon kosher salt (more to taste)
2 tablespoons fresh cilantro (chopped)

Steps:

  • In a heavy-bottomed pot, heat oil over medium heat until it starts to shimmer. Place onions and garlic in oil and let cook until the onion starts to soften-- about 6 minutes.
  • Add in the cumin and chili powder and stir until very fragrant, about 1 minute. Add the chicken broth and diced potatoes to the pot, bring to a low boil, cover and cook until the potatoes pierce easily with a fork.-- about 20 minutes.
  • Once the potatoes are cooked, stir the corn, beans, and green chilies into the broth and potatoes.
  • Melt the butter in a medium-sized saucepan. Once melted stir in the flour and cook, stirring constantly for a minute.
  • Gradually stir in the milk and continue to stir, making sure to clean the bottom of the pan with each stir so it doesn't burn. As it comes to a boil, the mixture will start to thicken.
  • Continue to stir and cook for 1 minute longer. Remove from the heat and stir in the cheese.
  • Add the cheese sauce into the broth mixture and stir until well combined. Season with 1/4 tsp kosher salt, adding more depending on the salt content of the broth you used. Stir in cilantro and serve topped with fresh pico de gallo.

1 medium onion, diced
3 - 4 garlic cloves, minced
1 medium red bell pepper, diced
2 celery ribs (or green bell pepper), diced
1 teaspoon thyme
1/2 - 1 teaspoon smoked paprika
2 bay leaves
4 1/2 cups vegetable broth
8 ears of corn, shucked (or 6 - 7 cups frozen or canned)

1 large onion, diced
6 cloves of garlic, minced
3 stalks of celery, diced
2 carrots, diced

HEARTY BLACK BEAN CHOWDER - CROCK POT

Hearty Black Bean Chowder - Crock Pot image

I'm not really sure what makes a chowder a chowder, but this is thicker than soup and not as thick as stew.... so I'm calling it a chowder. Throw it all together and 8 hours later, it's done!

Provided by Brooke the Cook in

Categories     Chowders

Time 8h10m

Yield 6 serving(s)

Number Of Ingredients 10

1 medium onion, diced

1 cup fat free chicken broth (or vegetable broth for vegetarian's)
3 tablespoons taco seasoning

1/4 cup fresh cilantro, chopped (optional)
6 tablespoons nonfat sour cream (optional)

  • Add ingredients into the pot. Turn your Instant Pot to the saute setting so that it can start heating up and come to pressure quicker. Add in the chicken broth, chicken, corn, green chiles, beans, 1/2 cup picante sauce, 1 1/2 Tbsp taco seasoning, salt and pepper. Stir. Cut the potatoes and just add them to the top of the soup, don’t stir in, just let them sit on top.
  • Pressure cook. Turn off the saute setting. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 10 minutes (or if you don’t have a soup button use the manual/pressure cook button and set it to 10 minutes).
  • Pressure release. Let the pressure release naturally for 5-10 minutes and then move the valve to venting.
  • Shred chicken. Add in the cream cheese (it will melt in a couple minutes) and the bell pepper. Remove the chicken with tongs and shred* on a cutting board. Add the shredded chicken back into the pot. Stir in the remaining 1/2 cup of picante sauce and 1 1/2 Tbsp of taco seasoning.
