1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
Coarse salt and ground pepper
2 zucchini (about 1 pound total), halved lengthwise and thinly sliced crosswise
2 carrots, thinly sliced
1 tablespoon chili powder
1 teaspoon ground cumin
2 cans (19 ounces each) black beans, rinsed and drained
1 can (28 ounces) crushed tomatoes
1 package (10 ounces) frozen corn kernels, thawed

Steps:

  • In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until beginning to soften, about 4 minutes.
  • Add zucchini, carrots, chili powder, and cumin. Cook, stirring occasionally, until carrots are crisp-tender, 6 to 8 minutes. Add beans, tomatoes, corn, and 1 cup water. Simmer until slightly thickened and carrots are soft, 8 to 10 minutes more.

1 quart water, or as needed

Steps:

  • In a large pot over medium-low heat, mix the applesauce, brown sugar, coriander, cayenne pepper, cumin, oregano, cloves, rosemary, sage, thyme and asafoetida powder. Cook just until heated through. Stir in black beans and tomato paste. Mix in garlic, onion, squash, carrots, sweet potato and mushrooms. Pour in enough water to cover. Bring to a boil, reduce heat to low and simmer 45 minutes, stirring occasionally.

1/4 cup olive oil
2 cups chopped onions
1 2/3 cups coarsely chopped red bell peppers (about 2 medium)

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions, bell peppers, and garlic; sauté until onions soften, about 10 minutes. Mix in chili powder, oregano, cumin, and cayenne; stir 2 minutes. Mix in beans, 1/2 cup reserved bean liquid, and tomato sauce. Bring chili to boil, stirring occasionally. Reduce heat to medium-low and simmer until flavors blend and chili thickens, stirring occasionally, about 15 minutes. Season to taste with salt and pepper.
  • Ladle chili into bowls. Pass chopped cilantro, sour cream, grated cheese, and green onions separately.

2 cups brown rice (medium or long grain)
1 tablespoon olive oil
1/2 cup diced yellow onion (about one small onion)
1 medium red bell pepper (diced)
3 cloves garlic (minced)
1 small jalapeno (diced (optional))
3 cups vegetable broth (less or reduced sodium)
1 can (14-15 ounces) fire roasted diced tomatoes
1 tablespoon fresh chopped cilantro (plus more for topping)
2 teaspoons cumin
1 teaspoon chili powder
1/2 teaspoon dry oregano
1/2 teaspoon salt
2 15 ounce cans black beans (drained and rinsed)
fresh lime juice and chopped cilantro (for serving)

Steps:

  • Rinse the brown rice in a fine mesh colander or sieve. Set aside.
  • Heat one tablespoon olive oil in a dutch oven or large stock pot. Once hot, add diced onion and bell pepper. Saute until softened, about 5 minutes. Add garlic and jalapeno and saute a minute more.
  • Add vegetable broth, brown rice, tomatoes (with juices), cilantro, cumin, chili powder, dry oregano and salt. Stir to combine.
  • Bring to a boil over high heat. Once boiling, cover with lid and reduce to a simmer over medium-low. Simmer for 45 minutes, or until liquid is absorbed. If the rice isn't cooked through, continue cooking another 5 minutes. The rice is ready when softened but still holding its shape.
  • Stir in the black beans. Taste for seasonings. Serve with fresh lime and chopped cilantro.

2 1/2 cups dried black beans
Fail-Proof Brown Rice, recipe follows
9 cups water, plus more for soaking beans
2 tablespoons olive oil, divided
1 1/2 cups chopped onion
1 1/2 cups seeded, chopped green bell pepper
3 tablespoons minced garlic or pickled garlic
Kosher salt and freshly cracked black pepper
1 teaspoon oregano, dried
1 teaspoon ground cumin
1 bay leaf
2 tablespoons distilled white vinegar
3/4 dry Spanish wine
1 1/2 cups brown rice
1 egg white, beaten
3 cups water
1/2 chicken bouillon cube
Olive oil

Steps:

  • Add the beans to a large bowl, cover with water and let stand overnight. Drain and discard the water or cook in a pressure cooker for 18 to 25 minutes (do not discard the water if using the pressure cooker).
  • In a large Dutch oven, add the beans, 9 cups of water and 1 tablespoon of olive oil. Cover and bring to a boil over medium heat. Simmer for 1 hour until the beans are fork tender.
  • In a separate Dutch oven add the onion, green pepper, garlic and the remaining 1 tablespoon of olive oil and saute until opaque. Season with salt and pepper, to taste. (If using a pressure cooker, do not use the pressure cooker to saute the beans any further. Use a heavy pot or a Dutch oven.)
  • Add the cooked beans, to the pot with the onion mixture, along with the oregano, cumin, bay leaf, vinegar and wine. Cover and simmer over low heat for 15 to 20 minutes, stirring occasionally. Add additional salt and pepper, to taste. Transfer the beans to a serving bowl and serve over the Fail-Proof Brown Rice.
  • Preheat the oven to 350 degrees F.
  • In a medium skillet, add the brown rice and the egg white, stirring constantly over medium heat, until the mixture is dry. Mix the water and bouillon cube in a medium bowl.
  • Add a small amount of olive oil to a deep, large baking dish. (Cook's Note: I recommend a clear baking dish so you can monitor the water absorption).
  • Pour the bouillon water, rice and egg mixture into the baking dish. Put the dish in the oven, and do not interrupt the cooking process. After 30 minutes, cover with foil and continue to cook for 30 more minutes, a total of 1 hour. Remove from oven, fluff with fork and serve.

1 large onion, coarsely diced
3 garlic cloves, smashed (more or less to preference)
1 chicken bouillon cube (ham seasoning if you have it! sub veg bouillon if vegetarian)
6 cups water
1/4 cup tomato paste
1 tablespoon turmeric
1 tablespoon ground cumin
1 tablespoon paprika
2 tablespoons chipotle chiles in adobo, diced (~2 chiles)
1/2-1 cup diced tomato
1 cup cilantro, coarsely chopped
1 cup brown rice, cooked

Steps:

  • 1. Combine beans, onions, garlic, bouillon, and water in crock pot. Cook on LOW for 6 hours (or more-I cooked the beans overnight).
  • 2. Add remaining ingredients except rice, continue to cook on low for 1-2 hours. Add more water if needed, you want it to be pretty soupy since the rice will absorb a lot of liquid.
  • 3. Just before serving, add brown rice and stir to combine.
  • 4. Garnish with chopped cilantro, a sprinkle of sharp cheddar, diced green onions.
