This turkey marinade is a combination of olive oil, fresh herbs, spices and citrus, all blended together to make the most tender and juicy turkey ever! A quick and easy way to infuse flavor into your holiday turkey with minimal effort.

1 cup olive oil
1/3 cup soy sauce
1/4 cup lemon juice
1/4 cup orange juice
1 teaspoon lemon zest
1 teaspoon orange zest
1/2 cup parsley leaves (finely chopped)
1/4 cup chives (thinly sliced)
1/4 cup sage leaves (finely chopped)
2 tablespoons rosemary leaves (finely chopped)
1/4 cup thyme leaves (chopped)
1 tablespoon garlic (minced)
2 teaspoons smoked paprika
1 teaspoon sweet paprika
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Place all of the ingredients in a medium bowl. Whisk until well combined.
  • Pour the marinade over a whole thawed turkey. Rub the marinade to coat all over the outside, then loosen the skin and rub some of the marinade under the skin.
  • Let the turkey sit in the marinade for 12-24 hours.
  • Scrape any large pieces of herbs and garlic off the marinated turkey so that they won't burn when cooked.
  • Roast, smoke or grill the turkey as desired, then serve and enjoy.

1 (10-12 lb.) whole turkey, neck and giblets removed
1/2 medium onion
1/2 lemon
1 head of garlic, cut in half lengthwise
4 sprigs fresh thyme
1 tablespoon five-spice powder
2 tablespoons soy sauce
1 tablespoon Shaoxing cooking wine
1 tablespoon olive oil
1 teaspoon sesame oil
1 teaspoon Worcestershire sauce
2 teaspoons sugar
1 tablespoon salt
1 teaspoon ground black pepper

Steps:

  • Remove the turkey neck and giblets from inside the cavity and set it aside if making homemade gravy, otherwise discard. Wash and pat dry the turkey completely with paper towel before adding seasoning.
  • In a small bowl, whisk to combine five-spice powder, soy sauce, Shaoxing cooking wine, olive oil, sesame oil, Worcestershire sauce, sugar, salt and pepper, into a smooth paste.
  • Place the turkey on a clean cutting board, and rub half of the marinade over the entire turkey including inside the cavity and underneath the skin of the breast. To spread the marinade underneath the skin, use a knife and a spoon to gently loosen the skin of the turkey breast, then place 2 tablespoons of the marinade under the skin and slowly press down on the skin to spread the marinade evenly. Wearing disposable gloves helps make clean up easier.
  • Transfer the turkey (breast side up) onto the rack of a large roasting pan and tuck the wings underneath. Insert onion, lemon, garlic and sprigs of thyme inside the cavity. Optionally, truss the turkey by tying the legs together with kitchen string so that they stay close to the body.
  • Wrap the roasting tray tightly with aluminum foil and let the turkey marinate in the refrigerator overnight, up to 2 days.
  • Store the remaining marinade in the refrigerator until the turkey is ready.
  • Remove the roasting pan and extra marinade from the refrigerator and place on the counter to slowly bring the turkey to room temperature, about 2 hours. Roasting the turkey directly from the refrigerator will cause uneven cooking.
  • Preheat the oven to 450 F with a rack positioned in the lowest level of the oven. Place the second rack out of the way on the highest level at the top of the oven, or you may have to completely remove the second rack out of the oven to make room for the turkey, depending on how large your turkey is.
  • Generously brush the entire turkey with the remaining half of the marinade. Add 1/2 cup of water or more to the bottom of the roasting pan to prevent the pan drippings from burning. Transfer the roasting pan to the lowest rack and roast at 450 F for 45 minutes.
  • Lower the oven temperature to 350 F and continue to roast until the internal temperature of the turkey reaches 165 F. Check the internal temperature of the turkey by inserting a meat thermometer into the thickest part of the turkey breast, without touching the bone. For a 10-12 pound turkey, this should take approximately 1.5 hours. Every 30-45 minutes, remove the pan from the oven and tilt to release juice from the cavity into the pan. Use a brush to baste the turkey with the pan drippings and return to the oven. This will help achieve a golden brown crispy skin.
  • Also, monitor the turkey closely during these intervals to make sure that the skin doesn't become too burnt because of the five-spice rub. Cover the turkey by lightly tenting with aluminum foil if needed to prevent further browning.
  • Remove from oven and loosely cover the turkey with aluminum foil. Let the turkey rest for 20 minutes. Resting helps the juices redistribute into the meat as the internal temperature continues to rise by 5-10 degrees, reaching 170 F while resting. Meanwhile, remove the turkey drippings and set aside for making homemade gravy.
  • Carve the turkey with a sharp knife or electric carving knife and serve.

1 turkey breast ((bone-in or boneless, skin-on, about 2 - 2 1/2 lbs))
3 rosemary twigs for garnish
1/4 cup olive oil
2 Tbsp sesame oil
1/2 cup low sodium soy sauce
2 Tbsp Worcestershire sauce
Juice from 1 lemon
1/2 cup honey or maple syrup
8 cloves of garlic (minced)
3 rosemary twigs (whole)
1 tsp freshly ground black pepper
4 tsp kosher salt (plus more to taste)

Steps:

  • Prepare the marinade by mixing all of the ingredients together in a large bowl or a plastic Ziplock bag. Add the turkey breast and make sure that every part is covered with the marinade. If using a Ziplock bag, expel as much air as possible before sealing it. Marinate in a fridge for 12-24 hours. If marinating is not an option, roast the breast immediately and serve with those delicious pan juices - it will still be awesome.
  • Preheat oven to 325F.
  • Place the turkey breast into a deep baking dish and pour in the marinade. It's best to use a baking dish that is not too big otherwise too much liquid will evaporate. Bake uncovered on middle rack for about 1 to 1 1/2 hours, depending on size, until the internal temperature of the meat in the thickest part reaches 160F - the temperature will rise to 165F during resting (see Notes). Baste the top and the sides of the breast with pan juices about every 20 minutes - this will prevent the top from drying out and will help with browning.
  • If toward the end of baking the skin did not brown enough, turn on the broiler on high for 2-3 minutes. Do this before the internal temperature reaches 160F. I normally do it at about 150F internal. Monitor broiling process very closely as the skin can go from a nice deep-golden brown to charred pretty quickly.
  • Remove the turkey breast from the oven and let it rest for 5 minutes before carving and serving. I find that it's best to transfer the breast to a serving platter immediately upon removing from the oven. If left to rest in the hot baking dish, the internal temperature will rise too much and meat will lose more moisture.
  • Carve the meat, place on a serving platter and garnish with fresh rosemary twigs. Serve with the pan juices (don't forget to discard the cooked rosemary twigs), they are out-of-this-world delicious.

1/4 pound (1 stick) unsalted butter
1 lemon, zested and juiced
1 teaspoon chopped fresh thyme leaves
1 fresh turkey (10 to 12 pounds)
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme
1 whole lemon, halved
1 Spanish onion, quartered
1 head garlic, halved crosswise

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a small saucepan. Add the zest and juice of the lemon and 1 teaspoon of thyme leaves to the butter mixture. Set aside.
  • Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the bunch of thyme, halved lemon, quartered onion, and the garlic. Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.
  • Roast the turkey about 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.
  • Slice the turkey and serve.

"I have adopted several different methods to make this a super easy recipe with off the shelf spices that you probably already have. The preparation is easy and not fussy to get it right. The only problem I've found is that I usually don't have any leftovers, everyone seems to love it! This is enough marinade for a turkey up to 14 lbs, double the quantities for a large 22+ LB bird." You will need 1 thawed turkey, 1 large turkey oven bag, 1 cake cooling rack

1/2 cup olive oil
1/4 cup soy sauce
2 tablespoons prepared yellow mustard
1 tablespoon lemon juice concentrate
1 tablespoon of minced garlic
1 tablespoon dry mustard
1 tablespoon of minced onion
1 tablespoon italian seasoning mix, seasoning blend
1 tablespoon parsley, spice
1 tablespoon poultry seasoning
1 teaspoon paprika
1 teaspoon marjoram
1 teaspoon sage, spice
1 large turkey oven cooking bag (Reynolds seems to be the best)
2 tablespoons flour, to dust bag

Steps:

  • Trim off any excess fat/skin. Wash bird well, remove all innards/giblets, turkey neck; save if you are going to use them to make gravy, otherwise discard, pat bird dry, inside and out.
  • Blend all marinade wet and dry ingredients, heat to warm and blend either in microwave or on stove but do not let it scorch.
  • Put 1 TBS of flower in a turkey roasting oven bag, shake to coat insides. Put a cake cooling rack (coat w/ cooking spray to keep from sticking) inside of bag to help raise bird off bottom, set inside of turkey roasting pan.
  • Pour/rub marinade ingredients all over, making sure to get between skin, inside cavity of bird.
  • Fold back wings, let legs lay free, put bird breast up in bag.
  • Tie off bag and trim any excess beyond tie;.
  • Puff up bag to keep it off skin as much as possible.
  • Let bird marinate overnight in bag, in the pan ready to go in oven.
  • Remove middle rack and put rack/roasting pan in lowest oven position. Preheat oven to 325, cook approximately 11 minutes per LB until core is up to 160 degrees, Before putting pan on oven, put 6 @ 1/2" long knife slits in bag around perimeter of breast to allow for venting.
  • At half way point turn pan around 180 degrees in oven to allow even cooking in case oven has hot spots. Oven bag will suggest 350, I have found this cooks the bird too hot, too fast with less forgiveness.
  • Pull out of oven, use scissors to cut slit in bag across top to allow it to sit for 30 minutes, tent a piece of aluminum foil over bird to help trap heat and moisture back inches.
  • I usually go top down, starting with removing each breast half, and the cross cut against grain into portion slices, then cut drumsticks and present them whole, then remove thighs and wings and proceed to scrape and cut into portions.
  • I will drizzle just a little of the pan drippings over cut portions in pan, helps to give the white meat a little more flavor and moisture.

This was the first turkey that I ever made. Not sure where the recipe came from now, but this is hands down the best turkey I have ever had. If you can't find the fresh herbs mentioned in the recipe just use any other fresh herbs that go well with turkey.

2 cups apple cider
1/3 cup real maple syrup
4 tablespoons chopped fresh thyme
4 tablespoons chopped fresh marjoram
4 tablespoons chopped fresh sage
2 tablespoons grated lemon zest
1 lemon, juice of
3/4 cup butter, softened
salt and pepper
1 (12 lb) whole turkey, neck and giblets reserved
2 cups chopped onions
1 1/2 cups chopped celery
1 1/2 cups chopped carrots
3 cups chicken broth
1/4 cup all-purpose flour

Steps:

  • Combine apple cider and maple syrup in a saucepan, and bring to a boil over medium-high heat. Continue cooking until reduced to 1/2 cup, then remove pan from heat. Stir in 1 tablespoon thyme, 1 tablespoon marjoram, 1 tablespoon sage, and lemon zest. Stir in butter until melted, and season with salt and pepper. Cover, and refrigerate until cold.
  • Preheat oven to 375 degrees F (190 degrees C). Place rack in lower third of oven.
  • Place turkey on a rack set in a roasting pan. Reserve 1/4 cup maple butter for gravy, and rub the remaining maple butter under the skin of the breast and over the outside of turkey. Arrange onion, celery, carrots, reserved left over lemon, turkey neck and giblets around the turkey. Sprinkle 2 1/2 tablespoon thyme, 2 1/2 tablespoons sage, 2 1/2 tablespoon marjoram, and lemon juice over vegetables. Pour 2 cups broth into pan.
  • Roast turkey for 30 minutes in the preheated oven. Reduce oven temperature to 350 degrees F (175 degrees C). Cover entire turkey loosely with foil. Continue roasting for about 2 1/2 hours, or until a meat thermometer inserted into thickest part of thigh registers 180 degrees F (85 degrees C). Transfer turkey to platter, and let stand 30 minutes.
  • Strain the pan juices into a large measuring cup, and then remove any excess fat. Add enough chicken broth to pan juices to measure 3 cups. Transfer liquid to a saucepan, and bring to boil. In a small bowl, mix 1/4 cup maple butter and 1/3 cup flour until smooth. Whisk flour and butter mixture into broth mixture. Stir in remaining thyme. marjoram, and sage. Boil until reduced to sauce consistency, stirring occasionally, about 10 minutes. Season with salt and pepper to taste.
  • Note: I use a turkey baking bag and make this in my counter top roaster oven so that I have my oven free for all the other items.

1 teaspoon lemon pepper
1 tablespoon season salt
1/4 cup cooking oil

Steps:

  • Make sure turkey is thawed. Preheat oven to 325 degrees. Rinse inside of turkey, pat inside and outside dry with paper towels. Sprinkle inside of turkey with a little lemon pepper.
  • Prepare turkey dressing, spoon into turkey cavities. (If do not use stuffing inside turkey, place large pieces of onion inside.). Tuck ends of drumsticks under band of skin across tail or wire or nylon leg clamp. Twist wing tips under back.
  • Brush the whole turkey with oil/butter. Season the whole turkey with seasoning salt and lemon pepper lightly.
  • Place the turkey breast side down; on a rack in a roasting pan. (I know! Everyone bakes them breast side up but that makes the breast dry! Cooking it breast side down lets the yummy juices flow into the breast.).
  • If using a meat thermometer, insert it into the center of inside thigh muscle. The thermometer should not touch bone. Cover turkey loosely with foil.
  • Roast turkey for 2 1/4 hours. (Adjust baking time according to turkey size).
  • Remove foil; cut band or string between drumsticks so thighs cook evenly. Continue to cook until meat thermometer or instant-read thermometer registers 180 degrees F. Juices should run clear and drumsticks should move easily in sockets.
  • Remove turkey from oven. Cover loosely with foil; let stand for 20 minutes before carving.

1 onion, quartered
fresh bay leaves, to flavour and serve
4.5-5.6kg/10-12lb Bronze turkey, giblets removed
1 quantity of stuffing
85g butter, softened
1 whole nutmeg
10 rashers streaky bacon
glass red wine, such as Merlot
pigs-in-blankets

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Put the onion and a large sprig of bay in the cavity between the legs. Now pack half the stuffing into the neck end, pushing it towards the breast. Secure the neck skin in position with skewers and tie the turkey legs together at the top of the drumsticks to give a neat shape.
  • Weigh the turkey and calculate cooking time at 20 mins per kilo, plus 90 mins. (You may need to use your bathroom scales.)
  • Put a large sheet of extra-wide foil in a large roasting tin, then put the turkey on top. Smear the breast with the butter, grate over half the nutmeg and season well. Cover the breast with bacon, pour over the wine, then loosely bring up the foil and seal well to make a parcel.
  • Roast in the oven, then 90 mins before the end of cooking, open the foil, discard the bacon, and drain off excess fat from the tin. Leaving the foil open, return the turkey to the oven to brown, basting with the juices several times. Then 30 mins before the end of cooking, place pigs-in-blankets and stuffing of your choice around the turkey, or cook in a separate lightly oiled tin.
  • To test whether the turkey is cooked, push a skewer into the thickest part of the thigh - the juices should run clear. If they are pinkish, cook for 15 mins more, then test again.
  • Transfer the turkey, stuffings and pigs-in-blankets to a platter, cover with foil, then a couple of tea towels and allow to rest for up to 30 mins before carving. This gives the juices time to settle back into the meat, ensuring that the turkey will be juicy. Garnish with sprigs of bay.

1 (16 lb) turkey, defrosted
butter
salt
lemon pepper
poultry seasoning
1 can chicken broth
4 small chicken bouillon cubes
1 large vegetable stock cube
2 carrots, cut in half
1 large onion, cut in half

Steps:

  • Preheat oven to 400 degrees.
  • Remove bag containing turkey parts from cavity.
  • Rinse turkey and let drain.
  • Place turkey inside of Dutch Oven or a roaster.
  • Put salt, lemon pepper, poultry seasoning all over turkey including inside of cavity.
  • Place butter slices under skin and inside cavity.
  • Place carrot halves and onion inside cavity.
  • Pour broth over turkey and in pan.
  • Add bouillons and cover with lid. Put turkey in oven and let cook for 45 minutes at 400 degrees.
  • Turn oven down to 250 and let cook 3 more hours.
  • Occasionally basting with broth in bottom of pan. To brown the turkey, remove lid during last 30-45 minutes.
  • Remove from oven, let stand 15 minutes or so and then it is ready to serve.
  • This recipe is really easy and it makes a delicious turkey!
