1/4 teaspoon ground cumin
Baked tortilla chip scoops

Steps:

  • In a large bowl, mix all ingredients except chips. Refrigerate until serving. Serve with chips.

1 jalapeno pepper, minced

1/4 cup extra-virgin olive oil
2 tablespoons cider vinegar
1/4 cup freshly chopped cilantro leaves
Kosher or fine sea salt and freshly ground black pepper
1 (15.5-ounce) can black beans, drained and rinsed
1/2 mango, peeled, flesh removed from the pit and cut into 1/2-inch dice (1 generous cup)
1/2 small jicama (about 1/2 pound), peeled, and cut into 1/2-inch dice (about 2 cup; see Note)
1/2 small red onion, cut in 1/2, then into thin slivers (about 1/4 cup)

Steps:

  • This is a delicious way for me to sneak more fruit and vegetables into our family dinners. More than a 15-minute side dish, this can be dressed this up by spooning it into a radicchio-leaf cup for a first course, complement the next batch of salmon fillets or steaks off the grill, or taken along on your next picnic.
  • Whisk the olive oil, vinegar, and cilantro together in a large bowl until blended. Season lightly with salt and pepper. Add the beans, mango, jicama, and onion and toss gently to coat with the dressing. Season with salt and pepper, to taste. Serve right away or let stand at room temperature for up to 30 minutes. Toss and check the seasoning before serving.

1 teaspoon ground cumin
1/3 cup canola oil
Kosher salt and freshly cracked black pepper
1/2 small ripe mango, peeled and diced into 1/4-inch pieces
1/2 yellow bell pepper, cut into small dice
1 (14.5-ounce) can black beans, drained and rinsed
1 small jalapeno, seeds and ribs removed, minced
1 small red onion, cut into small dice
1/4 cup fresh cilantro leaves, chopped

Steps:

  • In a small mixing bowl, combine the vinegar, lime juice, honey and cumin. Slowly whisk in the oil until incorporated. Season with salt and pepper.
  • Mix the mango, pepper, beans, jalapeno and onion together in a large bowl. Drizzle the vinaigrette over the ingredients and toss to combine. Season the salad with salt and pepper. Garnish with the cilantro.

3 cups dry black beans, picked over and rinsed
1 large onion, chopped
6 small cloves garlic, chopped, plus 2 large cloves garlic, minced
2 jalapenos, minced
6 tablespoons fresh lime juice
1 cup minced red onion
6 cups chopped mango (about 5 mangoes)
2 cups finely chopped fresh pineapple
1/2 teaspoon hot red-pepper flakes
1 1/2 teaspoons salt
1/2 cup chopped cilantro

Steps:

  • Soak beans overnight in cold water.
  • Drain and rinse the beans and place in a saucepan with the onion and chopped garlic. Cover with 6 cups of cold water and simmer over medium heat until tender but firm, 30 to 40 minutes. Drain. Rinse in cold water until chilled. (You should have about 8 cups.)
  • In a large mixing bowl, combine the cooked beans with all the remaining ingredients and toss well. Set aside until ready to serve.

My wife and I cobbled together this recipe a couple of years ago, and we've been making AND EATING it ever since. It is even fairly healthy!

Number Of Ingredients 13

1 (16 ounce) can black beans, drained and rinsed (or pinto beans if you're really hard up)
2 -4 tablespoons extra virgin olive oil (This is a recipe where less oil probably tastes best!)
1/3 cup fresh lime juice (If you use bottled juice, I may have to hurt you!)
3 tablespoons stemmed and chopped fresh cilantro leaves, more to taste
1 tablespoon minced pickled jalapeno pepper, more to taste
2 teaspoons minced fresh garlic
1/2 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
2 green onions, sliced,including both white and green parts

Steps:

  • In a medium bowl, whisk oil, lime juice, cilantro, jalapeno peppers, garlic, cumin, salt, and pepper.
  • Add bell red and green peppers and both types of onions, and toss well.
  • Add beans, and toss again.
  • Cover, and refrigerate several hours or overnight, mixing occasionally.
  • Taste, and adjust seasonings as necessary; extra salt and black pepper do wonders, even though Glenda gets upset if I add too much salt.
  • Toss well before serving, or drain if desired (only if you are a real wimp!) This recipe should be doubled or tripled!
  • It keeps a long time in the refrigerator, and it tastes great!
  • Actually, the longer it sets, the better it tastes, so make it in advance if you can.
