BEST BLACK BEAN BURGER

Best Black Bean Burger image

Hands down, this black bean burger recipe is the best one I've tried. The patties are hearty, well-charred, and packed with bold flavor. They're delicious with classic burger fixings like ketchup and mustard, but if you ask me, a slather of chipotle mayo or a scoop of guacamole really takes them to the next level.

Provided by Jeanine Donofrio

Categories     Main Course

Number Of Ingredients 14

3 cups cooked black beans (drained and rinsed)
⅓ cup grated yellow onion* ((about 1/2 medium))
2 garlic cloves (minced)
2 chipotle peppers from a can of chipotles in adobo (diced, plus 2 tablespoons adobo sauce)
1 tablespoon tamari
1 tablespoon balsamic vinegar
1 teaspoon cumin
½ teaspoon sea salt
½ teaspoon black pepper
1 egg**
1 cup panko bread crumbs
Extra virgin olive oil (for brushing)
Cooking spray (if grilling)
Hamburger buns and desired fixings (for serving)

Steps:

  • In a large bowl, combine the beans, onion, garlic, chipotles, adobo sauce, tamari, balsamic, cumin, salt, and pepper. Use a potato masher to mash until the mixture holds together but still has some visible chunks of black beans. Add the egg and use a spatula to fold until combined. Then, fold in the panko.
  • Use your hands to form the mixture into 6 patties. The mixture should be cohesive and a little wet. If it's too wet to handle, chill in the fridge for 20 minutes to firm up or mash your beans a little bit more.
  • Heat a cast-iron skillet over medium heat. Brush with a little oil and cook the burgers for about 5 minutes per side, until charred on both sides, turning the heat down as necessary. The exact timing will depend on the heat of your stove and cookware.
  • Alternatively, preheat an outdoor grill to 400°F. Lightly brush the patties with olive oil, spray the grill grates, and grill for 8 minutes on the first side and 4 minutes on the second side.
  • Serve with hamburger buns and desired fixings.

BLACK BEAN-QUINOA BURGERS

Black Bean-Quinoa Burgers image

I originally found this recipe on www.vegetariantimes.com. It is the perfect vegan summertime burger! Top it with some avocado, tomato, spinach, tomatoes, etc. and you are set to go:) Although it sounds a little weird to put steak seasoning (yes, it is vegan...) in a vegan recipe, it really works in this one and truly makes this black bean burger unique AND tasty!

Provided by molinda85

Categories     Lunch/Snacks

Time 1h

Yield 8 patties, 8 serving(s)

Number Of Ingredients 6

1/2 cup quinoa, dried
1 cup onion, finely chopped (roughly the size of a small onion)
1/4 cup sun-dried tomato packed in oil, finely chopped (about 6 pieces)
1 (15 ounce) can black beans, rinsed and drained, divided
2 teaspoons garlic, minced (about 2 cloves garlic)
2 teaspoons steak seasoning, dried (I use McCormick's Montreal Steak seasoning)

Steps:

  • In a small saucepan combine quinoa and 1 1/4 cup water seasoned with a dash of salt and bring to a boil.
  • Once boiling, cover, and reduce to medium-low heat to simmer for about 20 minutes or until all the liquid is absorbed. When the quinoa is done, you should have about 1 1/2 cups cooked quinoa.
  • While waiting for the quinoa to cook, put the onion and sun-dried tomatoes in a medium-sized frying pan and cook for 3-4 minutes or until the onion is soft. The genius part of having the sun-dried tomatoes in this step is that there is no need to add any extra oil, as the the tomatoes should have enough oil still on them to cook up the onion.
  • Add garlic, steak seasoning, 3/4 cup black beans, and 1/2 cup water (you can add a little more if you want, but I find that my burgers don't stay together very well using more water), stirring to combine.
  • Simmer this mixture for about 5 minutes or until most of the liquid has evaporated (VERY important as the less liquid you have, the more likely the patties will stay together).
  • Preheat oven to 350 degrees.
  • Place hot mixture along with 3/4 cup cooked quinoa into food processor and pulse until smooth.
  • Transfer blended mixture into a mixing bowl and stir in remaining 3/4 cup cooked quinoa and 3/4 cup black beans. You can choose to season with salt and pepper at this time, but I usually feel as if the steak seasoning is enough for my taste buds.
  • Allow the mixture to cool a couple minutes, so you don't burn your hands during the patty-making process.
  • Mold the mixture into 8 patties, or about 1/2 cup each by patting with hands.
  • Place on greased baking sheet and bake for about 20 minutes.
  • Flip burgers and bake for another 10 minutes (the outside should be crispier).
  • Serve with desired toppings on buns or bread and enjoy!

  • In large skillet over medium high heat add oil, diced onions and minced garlic to hot pan. Cook onions and garlic until fragrant, stirring occasionally for 4-5 minutes. Transfer to heat-safe bowl and place in fridge to cool.
  • Meanwhile add drained/rinsed black beans to large bowl and mash with fork or potato masher. Add cooked quinoa, cooled onion-garlic mixture, spices, salt and egg. Stir or mash until well combined and place mixture in fridge to chill for 30 minutes (up to overnight) – this will help the burger patties hold together better while cooking.
  • Using a 1/3 cup measuring cup, scoop burger mixture and shape with hands. You should get about 5 burger patties.
  • In large skillet over medium heat, spray with oil if using cast iron pan, then place burger patties in pan without crowding. Cook for about 4 minutes on one side, or until golden before flipping and cooking for an additional 3-4 minutes. Transfer cooked patties to tray and allow to cool slightly for 5 minutes before assembling buns. This will also help set the burgers a little more.

Finely chop or process the onion, garlic, chili pepper and cilantro and add to the pan. Stir to combine with the bell pepper and cook for approximately 7 to 10 minutes, or until the vegetables release their water and they begin to dry out. • First, cook the 1/4 cup dried quinoa according to package instructions and make the flax egg. While the quinoa is cooking, add the black beans to a bowl and mash until completely smooth. It's okay to leave a few black beans whole, but most should be mashed into a thick paste.
  • Once the black beans are mashed, add in the rest of the ingredients including the the quinoa, carrots, 1/4 cup of the almond flour, tomato paste, and spices. Mix together until the burger mixture is cohesive. The burger mixture should be moist but not too sticky or too dry. If too wet, add in up to 1/2 cup almond flour and if too dry add in 1 Tbsp of almond milk or water. The burger patties will be semi sticky and should not be dry.
  • Next, scoop out a 1/2 cup of the mixture, roll it into a ball, then pat into a patty that is 1-inch in height. Add the patties to the baking sheet lined with parchment paper and bake for 20-22 minutes. Don't overcook the patties or they will be get dried out.
