This is a very easy mocktail and if you love ginger beer like I do, you'll enjoy this. The basic idea is one part ginger ale to one part ginger beer. Serve in a nice tall chilled glass and chill out yourself for awhile. :)

This was created for ZWT8. Time does not include the time chill the coffee the previous day/night. For the licorice stick, use a high-quality licorice that isn't as sweet as U.S. licorice (preferably something from Great Britain or Australia).

1 cup brewed chocolate dessert coffee
1/2 cup thawed Cool Whip
1/4 cup caramel coffee creamer, chilled (liquid)
1 drop dark molasses
1/4 cup seltzer water, chilled
1 stick dark licorice

Steps:

  • At least 10 hours before you want to serve this, brew 8 oz. of strong chocolate-dessert coffee. Chill it. This would be best if made 24 hours in advance as it will bring out the chocolate flavor.
  • Mix liquid caramel creamer with 1 drop of dark molasses. Mix well. Fold in the thawed Cool Whip.
  • Put the coffee in a pilsner glass. Carefully spoon on the creamer mixture. Do not mix.
  • Put the seltzer into something that will allow you to pour a very fine thin stream of it quickly (e.g., a measuring cup with a lip). Put the seltzer in the middle of the drink, pouring it as finely yet quickly as you can. It should lift and sparkle the whole drink. Do not mix.
  • Put the licorice stick in; use it as a straw to drink the liquid if desired.
  • Serve.

DARK 'N' STORMY MOCKTAIL

Strongly brewed black tea anchors this nonalcoholic take on a classic Dark 'n' Stormy, lending its rich tannins to the final drink. When choosing a black tea, look to Darjeeling, English or Irish breakfast, or Assam. (For something without caffeine, reach for buckwheat tea and increase the brew time to 20 minutes.) The spices in the salted lime cordial are easily shifted to your pantry and preferences. If you don't have ground ginger, totally fine. If you want to add cardamom, go for it. The point is to infuse the cordial with a warmth that complements the ginger beer's sharp spice. Please don't, however, skip the salt. The hit of salinity enhances the cordial's flavors. Leftover cordial - sweet, spiced and deeply sour, can be mixed on its own with sparkling water or tonic or, if you're looking to incorporate it into an alcoholic drink, into a gimlet.

Finely grated zest from 6 limes
1 cup granulated sugar
1 teaspoon flaky sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon black pepper
1/8 teaspoon ground cloves
1 1/4 cups fresh lime juice (from about 6 limes)
2 black tea bags (or 2 tablespoons loose-leaf black tea), such as Darjeeling
Ice
3 ounces Chilled Black Tea
1 ounce Salted Lime Cordial
4 ounces fresh ginger beer
Lime wedge

Steps:

  • Make the cordial: In a medium bowl, combine the lime zest, sugar, salt, cinnamon, ginger, pepper and cloves. Use your fingers to rub the zest and spices into the sugar until the sugar is green and very fragrant. Slowly pour in the lime juice, whisking to combine and dissolve the sugar completely. Cover and refrigerate for at least 12 hours, up to 24. Strain through a fine-mesh sieve; pressing on the solids. (You should have about 1½ cups cordial.) Discard the solids, and keep the cordial in the refrigerator in an airtight container for up to 1 week.
  • Make the chilled black tea: In a tea kettle or small saucepan over high heat, bring 2 cups of water to a boil. Remove from the heat, add the tea. Allow to steep for 10 minutes, then remove the tea bags or, if using loose-leaf tea, strain through a fine-mesh sieve and set aside to cool completely, then refrigerate. Keep it chilled in the refrigerator, tightly covered in an airtight container, for up to 5 days.
  • Make the cocktail: Fill a highball glass with ice. Add the tea and cordial. Top with ginger beer, stir gently to combine and finish with a lime wedge.

BLACK AND BERRY (BEER)

This is a sweeter berry version of the "black and tan". Goes great after a nice meal. You can put more or less frambois in depending on your preference.

6 ounces guinness irish stout beer
6 ounces bavarian raspberry beer (Lindeman's Raspberry Frambois)

Steps:

  • Pour all of your 6oz frambois into a pint glass.
  • Using a spoon to defuse, slowly pour guinness over back of spoon. Let settle a few minutes.
  • It takes a few tries and a steady hand to get a perfect pour, but it tastes great whether you've got the layering effect down or not.
  • You can substitute Lindman's other flavors such as Pomme (apple), Cassis (black currant)(my second favorite), Kriek (cherry), or Peche (Peach).
  • Also try with double chocolate stout instead of guinness.
  • I like to use large wine glasses and layer for dinner parties. A very nice presentation for after dinner as a sort of dessert.

1 cup pineapple juice
1 cup orange juice
1 cup grapefruit juice
1 mango, peeled and sliced
1/2 papaya, cut into cubes
1 cup crushed ice
fresh mint leaves

Steps:

  • In a blender, combine the juices, and the fresh sliced fruit and blend to puree. Strain if desired and place in a pitcher. Chill in the fridge for an hour or so.
  • Serve in a large pitcher, over a bunch of crushed ice and decorated with mint leaves. Enjoy!
  • The original recipe called for just placing the chunked papaya and mango in a bowl with the juices and serving as punch, but I like it pureed with the juices. Do it the way you like best.

BLACK AND TAN ONION RINGS

Despite the title, this recipe contains no alcohol. I created this recipe one day and pretty much improvised. In any case, the reason for the title is the texture. This recipe yields onion rings that are crispy and tasty on the outside and tender on the inside. According to me the best results of this recipe are the texture of the product and the fact that these rings don't taste as fatty as most other varieties. Honestly, these are the best onion rings I have ever had. If you've seen other recipes for onion rings, you'll probably notice the absence of buttermilk and the presense of chicken or vegetable stock here. I did this because I simply had no buttermilk at the time and instead of using a bland ingredient or another ingredient that would yield more fat content, I opted for the stock.

2 large sweet onions (i.e. Vidalia, Mayan, etc.)
2 cups all-purpose flour
1 1/2 cups chicken stock or 1 1/2 cups vegetable stock (maybe more, see note below)
1 tablespoon salt (optional)
2 teaspoons paprika
1/4 teaspoon cayenne pepper
2 dried ancho peppers, flaked (or use your favorite chili pepper)
to taste vegetable oil (for frying)

Steps:

  • Cut onions into 1/4-inch slices and separate concentric rings. Set aside.
  • Mix flour, salt (optionally), paprika, cayenne pepper, and the pepper flakes.
  • Add stock until mixture takes on a batter consistency -- see note below.
  • Pour oil into heavy saucepan, wok, or deep fryer to a depth of 2 to 3 inches. Heat to 350F.
  • Preferably with tongs, coat each ring individually until completely covered with batter.
  • In batches, place rings into the oil until batter takes on various shades of medium and dark brown.
  • Remove rings from oil and place on dioxin-free paper towel to absorb the excess oil.
  • * I'm not sure exactly how much stock to use here but start with the recommended 1 1/2 cups and add flour and stock intermittently until a batter texture is achieved.
