APPLE OATMEAL PUDDING IN THE CROCK POT

Apple Oatmeal Pudding in the Crock Pot image

This is comfort food at its best for me, and it is relatively healthy! This tastes like an apple pie with the crumb topping mixed in! This is a slight adaptation of a recipe in "Fix It and Forget it Lightly" and was credited to Sue Hamilton in Minooka, IL. This is very rich and we liked it topped with fat free cool-whip. The original recipe calls for regular white flour, I just prefer to use whole wheat pastry flour.

CROCK POT APPLE OATMEAL

Crock Pot Apple Oatmeal image

This oatmeal is so easy! I make it right before I go to bed, and I turn the crock pot off as soon as I get up. Everyone in my house loves it! Found this in 'Fix it and Forget it.' I also have to add in reference to some of the reviews, our family likes it mushy.

CHEATER'S OATMEAL PUDDING

Cheater's Oatmeal Pudding image

This is sort of a mix between a rice pudding and oatmeal. I generally like just plain oatmeal, but this is what I eat when I want a real treat. I'd imagine it would be a good way to get kids to eat oatmeal, if they don't mind the texture of it. Also, I make it with many different combinations of pudding/extract. Vanilla and almond are my personal favorite, but it's also good with chocolate or caramel pudding and other extracts. Play around with it!

Provided by vitalev

Categories     Breakfast

Time 7m

Yield 1 serving(s)

Number Of Ingredients 6

1/2 cup old fashioned oats
1 cup water
1 (4 ounce) container prepared sugar-free vanilla pudding (Like a Snack Pack, or Jello. I use sugar-free, feel free to use regular!)
1/8 teaspoon almond extract
Splenda sugar substitute, to taste (optional)
chopped almonds (optional)

Steps:

  • Combine oats and water in a deep microwaveable bowl (very deep to prevent spilling over).
  • Microwave on high for 5 minutes, or less if your microwave is strong. Let sit in microwave for about 2-3 minutes after it's done to let it thicken up (this is important).
  • Remove oats from microwave. Stir in pudding, extract, and sweetener.
  • Microwave for about 30 more seconds to re-warm.
  • Sprinkle with almonds if desired.
  • NOTE - I have NOT tried this using quick-cooking oats, I'm not sure how that would taste. Also, you can really cook the oats however you want, just make sure that they are thick before you add the pudding. I have a slow microwave, so 5 minutes is how long mine takes.
