TUNA WITH WASABI SAUCE
Wasabi mayonnaise can be found in the Asian section of your local supermarket. Wasabi, an Asian plant similar to horseradish, has a fiery flavor. Add some plain mayonnaise to make a milder sauce.

- In a large resealable plastic bag, combine the teriyaki sauce, vinegar and oil; add tuna. Seal bag and turn to coat; refrigerate for up to 1 hour. Meanwhile, in a small bowl, combine the mayonnaise, onion and lemon juice until blended. Refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until medium-rare or until slightly pink in the center. Serve with wasabi sauce.

BLACK AND BLUE TUNA WITH WASABI SAUCE
If you like a good piece of tuna and you like wasabi, you are in for a real treat! Buy sushi-grade tuna so you don't have to cook the heck out of the fish. Tuna is best served when the middle is room temp. However, even if you like your fish charbroiled, you will love the wasabi sauce with it!

Steps:
- In a small saucepan, over medium heat, combine the wine, vinegar and shallots.
- Simmer until reduced to about 2 T. of liquid.
- Strain through a fine-mesh strainer, return the liquid to the pan, discard the shallots.
- Whisk in the wasabi and soy sauce.
- Over low heat, gradually whisk in the butter, on piece at a time, allowing the mixture to emulify.
- Do not let the mixture boil.
- When all the butter has been mixed in, remove from heat, pour into a small bowl and set aside.
- Brush the tuna steaks with a little oil.
- Either pan sear or BBQ to desired doneness.
- 3 minutes per side will leave a rare center.
- 5 minutes per side will be "pink".
- Watch closely, though.
- Serve with the sauce.

SESAME-CRUSTED TUNA

- In a dry skillet on medium heat, toast the white sesame seeds until they are just beginning to turn light golden brown and fragrant. Remove from heat and spread seeds on a plate. Add the black sesame seeds to the plate if using, and stir seeds around with fingertips to combine.
- Brush the tuna pieces on all sides with olive oil. Season on all sides with salt and pepper, and dip tuna pieces in the seeds, pressing to coat on all sides. Set aside on a wax foil lined cookie sheet.
- When ready to cook, heat the 2 tablespoons olive oil on medium high in the skillet. When oil is hot, add the butter, when the butter foams, add the fish to the skillet. Let cook without moving the fish for about 1 1/2 to 2 minutes, until the sesame crust begins to crisp and brown. When the crust is golden brown, turn the fish and cook until the other side is golden brown and crisp, about another 2 minutes, adding additional butter if needed to keep the fish from sticking and speed up the browning. Once the second side is browned, turn the fish pieces on edge with tongs, to brown the remaining sides.
- Remove from heat and set aside. Fish will be medium rare at this point. If you prefer fish more well done, place the ban with the fish in a 375 degree F oven for another 3 to 5 minutes.
- To serve, slice each portion in half and place on the pasta bed with the edges overlapping. Sprinkle with finishing salt, if desired.
SUNNY'S FRIED TUNA STICKS WITH WASABI MAYO SAUCE

- For the sauce: In a medium bowl, mix together the mayonnaise, honey, soy sauce, lemon zest and juice and wasabi. Taste--it should be salty, sweet and a bit tangy. Balance the seasoning if needed. Refrigerate.
- For the tuna: In a large bowl, mix together the tempura batter, cold seltzer and soy sauce. You want the batter to have a pancake-like consistency; you may not need all the seltzer. Set aside in the refrigerator.
- Slice the tuna against the grain into 3/4- to 1-inch-thick sticks. You should be able to make 4 to 5 sticks from each tuna steak. If using skewers (not needed), push one down the center of each. Dust each tuna stick all over with salt and pepper, then some flour. Transfer to a baking sheet lined with parchment paper and freeze for 30 minutes.
- Meanwhile, add enough oil to a pot to deep-fry the fish sticks and heat to 375 degrees F.
- When ready to fry, remove the batter from the refrigerator and the floured tuna from the freezer. Check all sides to make sure the flour is still dusty and not soaked in; sprinkle with flour again if needed, then dip into the batter and fry until golden, about 2 1/2 minutes. Remove and season immediately with everything bagel seasoning or a pinch of salt. Serve with the dipping sauce.
ASIAN-INSPIRED TACOS WITH BLACK AND BLUE TUNA

- Whisk 1/2 cup water and wasabi powder in medium bowl to form smooth paste. Whisk in soy sauce, 2 tablespoons peanut oil, Sherry, sesame oil and ginger. Stir in green onions. Set aside.
- Sprinkle tuna with salt and pepper. Heat remaining 1 tablespoon peanut oil in heavy large skillet over high heat. Add tuna and sear until opaque in center, about 3 minutes per side.

- Lightly brush a sheet of plastic with olive oil and lay a piece of fish on it. Lightly brush surface of fish with olive oil and lay another sheet of plastic on top. Using the flat side of a meat tenderizer or a rolling pin, gently pound fish until it is very thin, 1/4 to 1/8 inch thick. Take care not to tear the fish; if it seems that it will break apart, stop when it's a little thicker than 1/4 inch. Repeat with remaining pieces. Gently unpeel top layer of plastic and then set it back over the fish. Place in the refrigerator for at least 30 minutes.
- Whisk together wasabi, vinegar, soy sauce, yogurt, and cream in a small bowl or measuring cup.
- Toss cucumber with rice vinegar and sesame oil.
- Cut each piece of flattened fish into smaller pieces and fan out on plates or on a platter. Using a pastry brush, brush each piece of fish with the wasabi sauce. Place a spoonful of the cucumber salad on each plate, garnish with shiso, cilantro or chervil and serve.

- Mix sesame oil, soy sauce, garlic powder and ginger in small bowl. Place tuna in large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes.
- For the Wasabi Aioli, mix all ingredients in a medium bowl until well blended. Cover.
- Mix sesame seeds, black pepper and salt on large plate. Remove tuna from marinade. Discard any remaining marinade. Coat tuna steaks on both sides with sesame seed mixture, pressing firmly so the mixture adheres to the tuna.
- Heat large nonstick skillet on medium heat. Add tuna; cook 4 minutes on each side or until desired doneness. Slice tuna and serve with Wasabi Aioli.
