Bitter Melon and Black Bean Sauce Beef image

A classic Chinese dish that can be made with chicken instead of beef. If chicken is used, cooking time will be more depending on the thickness of the chicken pieces.

1 bitter melon, seeded and sliced
2 teaspoons soy sauce, divided
2 teaspoons cornstarch, divided
¼ teaspoon baking soda
6 ounces beef, sliced
1 tablespoon oil
1 teaspoon oil
½ onion, sliced
2 cloves garlic
1 tablespoon chopped fresh ginger
1 tablespoon black bean sauce
1 tablespoon oyster sauce
1 pinch white sugar, or to taste
¾ cup water
1 teaspoon water
salt to taste

Steps:

  • Fill a bowl with ice; add enough salted water to make an ice bath. Bring a large pot of lightly salted water to a boil. Cook the bitter melon in the boiling water until tender yet firm, about 2 minutes; strain the melon. Place the melon into the ice bath; allow to sit until bitterness is extracted, about 1 hour. Drain melon.
  • Whisk 1 teaspoon soy sauce, 1 teaspoon cornstarch, and baking soda together in a bowl. Add beef and toss to evenly coat. Marinate in the refrigerator for 1 hour.
  • Heat wok, or a large skillet, on high until smoking. Add 1 tablespoon oil. Lay beef evenly across the bottom of the wok; cook until browned, about 2 minutes per side. Remove beef. Pour in 1 teaspoon of oil; allow to heat. Add onion, garlic, and ginger; cook and stir until fragrant, about 30 seconds. Stir in bitter melon; cook until combined, about 1 minute.
  • Stir black bean sauce into melon mixture. Stir in remaining soy sauce, oyster sauce, and sugar. Pour in 3/4 cup water; cover and let simmer until flavors combine, 2 to 3 minutes. Uncover and mix in remaining cornstarch and 1 teaspoon water and stir until thickened.

1 lb flank steak, minced
1 teaspoon salt
1 tablespoon oil
8 bitter melons, remove seed and slice 1/2 inch slice
1 tablespoon ginger, minced
1 tablespoon garlic, minced
1 1/2 tablespoons black bean paste, Chinese
1 cup water
2 tablespoons sweet soy sauce
4 tablespoons oyster sauce

Steps:

  • In a mixing bowl add beef, salt and oil to coat the meat and let stand for 15 minutes.
  • In a high wok add the beef mixture and saute until the meat is halfway cook. Add in the melons slice, ginger, garlic and black bean sauce and stir fry for 5 minutes. Add in the water and bring to a boil and stirring at all time. Taste a piece of the melon for tenderness adds more water if needed. Simmer the mixture add in the sweet soy sauce and oyster to taste.

Easy beef in black bean sauce image

Try this simple stir-fry using tender rump steak, peppers, ginger, chilli and garlic. Opt for a good quality black bean sauce - it will make all the difference

2 x 250g rump steaks
1 tbsp cornflour
2 tbsp sesame oil
1 large white onion, cut into thin wedges
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
2 fat garlic cloves, crushed
1 thumb-sized piece ginger, peeled and grated
1-2 red chillies, finely chopped
5 tbsp black bean sauce
1 tbsp rice wine vinegar
2 tsp sugar
sticky rice, to serve
coriander leaves, to serve (optional)

Steps:

  • Remove the thick layer of fat running down the side of the steaks and discard. Slice the steak into 1cm-thick, long strips and toss with the cornflour and some seasoning.
  • Heat the oil in a large frying pan or wok over a high heat then add the steak, frying for 3-5 mins or until golden brown on the outside. Remove with a slotted spoon and transfer to a plate.
  • Add the onion and peppers to the pan and fry for 6-7 mins or until beginning to soften. Stir through the garlic, ginger and chilli and cook for a further min. Return the beef to the pan and stir through the black bean sauce, rice wine vinegar, sugar and 2 tbsp water to loosen a little. Bring to a simmer and then remove from the heat.
  • Serve the stir-fry in deep bowls with mounds of sticky rice and top with coriander, if you like.

My research indicates that this recipe originated with Chef Ken Hom. It was pubished in his excellent (out of print) book Chinese Technique, which deserves republication. It is one of my favorite things, and I always make it when I can find bitter melons. They are not always easy to find. Try it, you will like it.

1/2 cup ground lean pork
4 peeled water chestnuts (or the generous equivalent in canned slices)
1 teaspoon finely minced fresh ginger or 1 teaspoon grated fresh ginger
2 tablespoons minced scallions (white and light green part only)
1 1/2 tablespoons shaoxing wine
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon light soy sauce
1 large egg, lightly beaten
1 teaspoon cornstarch (potato, water chestnut, sweet rice starch starches may be substituted)
2 medium bitter melon (green in color and 3/4 to 1 pound in weight. For much larger, nearly ripe melons, it will be necessa)
2 tablespoons peanut oil
2 teaspoons minced garlic
1 1/2 teaspoons chinese fermented black beans (salted)
1 tablespoon shaoxing cooking wine
3/4 cup chicken broth
salt
1 teaspoon cornstarch, mixed with
1 tablespoon cold chicken broth
1 tablespoon oriental sesame oil (roasted or dark)

Steps:

  • Finely mince the water chestnuts.
  • Trim the ends off the bitter melons ans slice into 1 inch slices.
  • Using a small paring knife, carefully cut out the pulp and seeds in the center of each slive, leaving onlu the melon wall.
  • Rub the inside of each slice with coating of cornstarch.
  • METHOD:.

  • Combine all of the stuffing ingredients in a large bowl.
  • Mix them thoroughly using freshly washed hands.
  • Rub more starch into the inner surfce of each slice of bitter melon, then stuff the cavity of each slive with a generous spoonful of stuffing, enough to completely fill the cavity.
  • As the slices are stuffed, arrange them on a plate and set the plate in a steamer with water coming within an inch of the plate Cover and steam for 20 minutes.
  • Arrange hte coked slices on a serving plats, reserving the juices on the plate for the sauce.

  • In a separate wok or pan, heat 2 T.
  • peanut oil, add the garlic and black beans, then stir fry for a minute or two, then add the Shaoxing wine, chicken stock and salt.
  • Add the reserved juices from the steaming of the melon slices.
  • Bring the mixture to a boil.
  • Thicken with the dissolved cornstarch and flavor eith sesame oil.
  • Pur sauce over bitter melon and serve with white rice.
