BISTECCA WITH BALSAMIC ROASTED ONIONS

Number Of Ingredients 8

3 large red onions or 15 cipollinis or boiling onions
1/4-cup plus 1 tablespoon extra-virgin olive oil
Gray salt and freshly ground pepper
1 tablespoon minced garlic
1 tablespoon finely chopped fresh thyme
1/4-cup balsamic vinegar
1 large porterhouse steak, about 1-1/2 lbs. and 2 inches thick
1 tablespoon unsalted butter, cut into bits

Steps:

  • Preheat oven to 450 degrees F. For large onions, peel and cut into wedges, leaving as much root on as possible. If using boiling onions, peel and leave whole. Heat olive oil in a large ovenproof saute pan until hot. Add onions, and reduce heat to medium. Cook until brown on all sides, about 5 minutes. Season with salt and pepper. Add garlic and cook briefly until light brown. Add thyme and stir. Regulate heat by moving pan around. Add 2 Tbs. of the vinegar and toss well with onions.
  • Place onions in oven and roast until tender and very browned, about 30 minutes. Stir gently at least once during roasting. Remove to a plate. Add remaining 2 Tbs. balsamic vinegar to pan and stir and scrape up bits. Pour over onions.
  • Heat the remaining 1 Tbs. of olive oil in a heavy saute pan over medium-high heat until very hot. Season the steak with salt and pepper. Turn on the exhaust fan and place steak in pan. Cook until brown on first side, about 2 minutes. Turn and place in oven to roast until done, about 4 minutes for rare meat. Just before removing, dot the top with butter.
  • Remove steak to a carving board and let rest for 5 minutes. Return onions to the saute pan and reheat by tossing over medium heat. To serve, cut the meat off the bone, then carve into thin slices. Arrange the meat on plates and top with onions. Pour any juices from the carving board over the meat.

3 large white onions, peeled and quartered
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/4 cup balsamic vinegar
1/2 teaspoon sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the onion quarters with the olive oil, balsamic vinegar, sugar, and season with salt and pepper. Place in an ovenproof, large, nonstick skillet, spreading them out in an even layer. Cover the skillet with aluminum foil. Roast for 20 to 25 minutes, and then remove the foil. Toss the onions well to coat with the reduced balsamic glaze and put back in the oven to roast another 20 to 25 minutes. Serve warm.

Prosciutto-Wrapped Crostini with Melon Salsa Crudo image

1 long loaf country-style bread, such as Pugliese
Extra-virgin olive oil
Salt and freshly ground black pepper
1 cup Parmesan
1 small red onion, minced
2 tablespoons Champagne vinegar
1 ripe cantaloupe
Salt
2 tablespoons minced flat-leaf parsley
12 slices prosciutto, sliced in 1/2 crosswise

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the loaf of bread in half crosswise, then cut each half lengthwise into 1-inch thick slices. Lay the slices in a single layer on baking sheets. Generously drizzle the top side of each slice with olive oil and season with salt and pepper to taste. Sprinkle the Parmesan over the slices. Cook in the oven until golden brown, about 10 to 12 minutes. Set aside.
  • Marinate the onions in the vinegar for 5 minutes. While the onion is marinating, peel, seed and dice the melon and place in a bowl. Add the diced melon to the onions, season with salt and stir to blend together. Add the minced parsley and stir to combine.
  • Wrap the end of each crostini with a piece of prosciutto. Arrange on a platter and spoon a tablespoon of melon salsa on each and serve. Serve remaining salsa on the side.

2 tablespoons extra-virgin olive oil
Gray salt and freshly ground pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush the bread on both sides with the olive oil and season lightly with salt and pepper. Arrange on a baking sheet and bake until crusty and brown, about 10 to 12 minutes. Turn once about halfway through cooking, and dust with Parmesan, if using. Serve hot, warm, or room temperature.

Bistecca all Fiorentina image

The classic Bistecca all Fiornentina is a large porterhouse steak that usually weighs about 1 kilo (2.2 pounds). In Tuscan restaurants the steak is offered by the "etto" or in 100 gram (4-ounce) increments. This great steak includes the strip loin and the fillet. When shopping for this dish, use the best meat, gray sea salt, course grind black pepper and the best balsamic vinegar that you can afford. The marriage of flavors from all of these ingredients will reveal a noble meal of authentic Italian cookery. As is true for all steak, to ensure a juicy, flavorful steak that cooks quickly, have the meat at room temperature before starting. Use a grill or thick cast iron pan and make sure that they are very hot. Always let the meat rest, at least 5 minutes, before carving and a sharp knife will glide right through.

2 (2-pound) Porterhouse steaks, about 2 inches thick
Grey sea salt
Coarse grind black pepper
Pure olive oil
Great balsamic vinegar

Steps:

  • Let the steak rest outside the refrigerator for 30 minutes before cooking. Use a hot, clean, oiled grill. If pan roasting, preheat the oven to 450 degrees F.
  • Liberally season the steak with the salt and pepper, coat with olive oil and press the seasoning into the meat. Grill the steaks for about 5 to 6 minutes on each side for medium rare. The fillet will cook a little faster than the strip loin. Move the steaks every 2 minutes or so for even cooking and a crispy exterior.
  • For pan roasting, heat a cast iron skillet with a little olive oil until smoking hot. Turn on the fan, open the window and stand back to avoid getting splattered! Using tongs, place the steaks in the center of the pan. Cook until the first side is seared brown, about 4 minutes. Turn the steaks and place the pan in the oven until the steaks are done, about 6 minutes for medium rare. Remove the steaks to a carving board and let rest for at least 5 minutes before carving.
  • Cut the steaks away from the bone and carve into 1/2-inch slices. Arrange the meat on warmed plates and drizzle a little bit of balsamic vinegar over the slices. Serve with some extra gray sea salt on the side.

BALSAMIC ROASTED ONIONS

3 sweet onions
1 cup light balsamic salad dressing (recommended: Newman's Own)
2 tablespoons fresh tarragon leaves, lightly chopped
1 teaspoon crushed garlic (recommended: Christopher Ranch)
Olive oil cooking spray
Salt and freshly ground black pepper

Steps:

  • Cut ends off onions, leaving stem and core intact. Quarter onions through core and peel away skin.
  • Place onions in a large resealable bag with balsamic dressing, tarragon, and garlic. Squeeze out air and seal bag. Marinate in refrigerator for 1 to 4 hours, turning occasionally.
  • Remove onions from refrigerator 30 minutes before roasting and bring to room temperature.
  • Preheat oven to 400 degrees F. Lightly spray a baking pan with olive oil cooking spray.
  • Place onions cut side up in prepared baking pan and pour marinade over top. Season with freshly ground black pepper.
  • Roast in preheated oven for 25 minutes or until fork tender. (If onions begin to brown too quickly, cover loosely with foil.)

BALSAMIC ROASTED ONIONS

4 pounds medium-size red onions
1/4 cup olive oil
6 tablespoons (3/4 stick) butter
3 tablespoons sugar
6 tablespoons balsamic vinegar
1 tablespoon chopped fresh parsley

Steps:

  • Position 1 rack in center and 1 rack in bottom third of oven; preheat to 500°F. Line 2 large baking sheets with foil. Cut onions through root end into 3/4-inch-thick wedges. Place in medium bowl; toss with oil. Arrange onions, cut side down, on baking sheets. Sprinkle with salt and pepper. Roast until onions are brown and tender, rotating pans in oven and turning onions once, about 45 minutes.
  • Meanwhile, melt butter in heavy small saucepan over medium-high heat. Add sugar and stir until sugar dissolves. Remove from heat. Add vinegar. Return to heat. Simmer until mixture thickens slightly, about 2 minutes. (Onions and balsamic glaze can be made 1 day ahead. Cool. Cover separately and chill. Rewarm onions in 375°F oven about 15 minutes. Stir glaze over low heat to rewarm.)
  • Arrange onions on platter. Drizzle glaze over. Sprinkle with parsley.
