- Preheat oven to 375℉ (190℃). In large bowl, combine all ingredients except oats and raisins, blend until smooth. Stir in oats and raisins. Drop by heaping teaspoonsful 2 inches apart on greased cookie sheets. Bake 9 to 13 minutes until light golden brown. Immediately remove from cookie sheets.

OLD-FASHIONED OATMEAL RAISIN COOKIES
These cookies are great! Soaking the raisins first are the key to this recipe. I found this in an old issue of a Mary Engelbreit magazine.

Steps:
- Combine eggs, raisins, and vanilla extract in bowl and let stand--covered for 1 hour.
- Preheat oven to 350°.
- Cream together butter and the brown and granulated sugars.
- Add flour, salt, cinnamon, and baking soda; mix well.
- Add raisin mixture, oatmeal, and optional chopped nuts. The dough may seem a little dry; but it will be fine.
- Drop by tablespoonfuls onto an ungreased cookie sheet about 2 inches apart.
- Bake for 10-12 minutes until lightly browned.
- Cool on wire rack.
- Notes: Recipe works well doubled.
- Time to make does not include the 1 hour needed for soaking the raisins.
- You can use golden or dark raisins.
BEST OATMEAL RAISIN COOKIES
This is a family favorite that I have been making for years. It's the most requested oatmeal cookie recipe I've ever made. I found it somewhere years ago, but have lost the source. The secret is soaking the raisins which makes all the difference.

- This is a very important first step that makes the cookie: combine eggs, raisins and vanilla and let stand for one hour.
- Cream together butter and sugars.
- Add flour, salt, cinnamon and soda and mix well.
- Blend in egg-raisin mixture, oatmeal, and chopped nuts.
- Dough will be stiff.
- Drop by heaping teaspoons onto ungreased cookie sheet, or roll into balls and flatten slightly.
- Bake at 350 degrees for 10 to 12 minutes or until lightly browned.

- Heat oven to 375°F. Spray cookie sheets with cooking spray. In large bowl, combine granulated sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and egg; blend well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats, raisins and nuts.
