EASY CLASSIC FUNNEL CAKE

- Sift the flour, baking powder, baking soda and salt into a large bowl. In a smaller bowl, whisk the egg with the granulated sugar until pale. Whisk the milk into the egg mixture, then gently fold into the flour mixture. It should be a bit thicker than pancake batter but thin enough to pour. Add up to 3 tablespoons milk to loosen the batter, if needed.
- Heat about 2 inches of canola oil in a large high-sided skillet or pot over medium-high heat until a deep-fry thermometer registers 375. Meanwhile, mix the confectioners' sugar and cinnamon in a small bowl. Hold a funnel in one hand with your finger plugging the hole at the bottom. Pour 1 cup batter into the funnel. Hold the funnel over the hot oil and remove your finger from the hole, letting the batter drop in a spiral pattern all over the surface of the oil. It will look like lots of individual pieces at first, but as you continue to add batter, the pieces will fuse together. Cook until the batter floats and the underside is golden brown, about 30 seconds. Flip with tongs and cook until golden brown on the other side, about 30 more seconds. Transfer to a paper-towel-lined plate and repeat to make 5 more funnel cakes. Dust with the cinnamon-sugar and serve with whipped cream and/or fruit sauce, if desired.

- Pour enough oil into a skillet to completely coat the bottom and heat over medium-high heat.
- Blend flour, sugar, water, milk, egg, baking powder, vanilla extract, and salt together in a blender until smooth. Add more flour if batter is too watery. Put your finger over the hole of a funnel and fill funnel with batter.
- Hover filled funnel over the skillet, release finger, and swirl batter into the hot oil; cook until golden brown, about 5 minutes per side.

- In a large bowl, beat eggs. Add milk, water and vanilla until well blended. In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth. In a deep cast-iron or electric skillet, heat oil to 375°., Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed., Fry until golden brown, 2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar; serve warm.

- In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
- In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
- While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

FUNNEL CAKES

- In a large mixing bowl, combine baking mix, eggs, milk and coffee creamer. Whisk until smooth. Set aside.
- In a deep-fryer, heat oil to 375 degrees F.
- Cover the bottom of a funnel with your finger. Ladle 1/2 cup of batter into funnel. Holding funnel over oil, slowly release finger and move in a spiral motion, then cross over to create criss-cross pattern. Fry golden on both sides, about 2 to 3 minutes per side. Drain on paper towels and dust with confectioners' sugar.
- Alternate method: Instead of using a funnel, try squeezing batter out of a plastic ketchup bottle. This can help you make the design more accurate and is also less messy.
VELVET CRUMB CAKE (ORIGINAL RECIPE FROM BISQUICK)
I got this recipe off the side of a Bisquick box over 20 years ago. It's the best cake I've ever had. They took the recipe off the box so I e-mailed them and asked them to send it to me. I don't eat a lot of sweets, but this is one I could eat everyday. I changed the coconut to Wheaties as I can't see a crumb cake with coconut. I've always made it with Wheaties. I also double the topping because it's so sweet and good, but I wrote the recipe as it's called for. Hope you enjoy this. By the way they've since put this recipe back on the box.

- Heat oven to 350°F Grease and flour 8 inch square or 9 inch round pan.
- Beat all ingredients in large bowl on low speed 30 seconds, scraping bowl constantly.
- Beat on medium speed 4 minutes,scraping bowl occasionally.
- Pour into pan.
- Bake 30-35 minutes or until toothpick inserted in center comes out clean.
- Cool slightly.
- Make crumb topping: Mix all together and spread over cake.
- Set oven to broil.
- Broil about 3 inches from heat about 3 minutes or until golden brown.
BISQUICK STEAMED CAKE
My mother used to make this when I was young. She would spread butter on top of the cake as soon as it came out of the steamer. Heavenly.

- In a large bowl mix ingredients well until smooth.
- Pour into greased 8 or 9 inch cake pan (round or square, your choice).
- Place in steamer and steam for 25 to 30 minutes or until wooden pick inserted in center comes out clean.
- I you desire you may spread cake with butter while hot and sprinkle with sugar or sugar and cinnamon.
- Optional: if you have a large steamer you can make muffins.
- Fill muffin tins 2/3 full and steam for 20 minutes or until a wooden pick comes out clean.
