You asked for it and so we brought it back. Try this amazing bison chili recipe straight out of the Great Range Bison recipe vault for dinner tonight.

Steps:
- Brown the bison in a large skillet over medium-high heat, season with salt and pepper as desired.Optional Step: add onions to bison and cook until tender.
- In a large pot (or Crock Pot) add the ground bison, onions, tomatoes, chili beans, kidney beans, ketchup, garlic, cilantro, chili powder, cayenne pepper, black pepper, thyme and powdered mustard. Stir to combine.
- Simmer at medium heat on stove top (or in Crock Pot on low heat) for at least 1 hour, stirring occasionally.
HEALTHY BISON CHILI
Steps:
- Heat 1 teaspoon of the oil in a large soup pot or Dutch oven over medium-high heat. When the oil shimmers, add the bison and cook until browned, taking care not to break the meat into very small pieces, about 10 minutes. Transfer the bison to a plate using a slotted spoon and set aside. Drain the liquid in the bottom of the pot and discard. Keep the pot over medium-high heat and add the remaining 1 teaspoon oil, the poblano peppers and onions. Cook until softened and beginning to brown, about 5 minutes. Add the chili powder, coriander, cumin, salt, cayenne pepper and garlic. Cook and stir until the spices are fragrant and toasted, 1 to 2 minutes. Add the tomatoes with the juices, and bring to a simmer while scraping any browned bits off the bottom of the pan, about 2 minutes. Return the bison to the pot and add the black beans, kidney beans, hominy and 4 cups water. Bring to a boil, and then reduce the heat, cover and simmer until thickened, about 45 minutes. Season with salt. Serve with the sour cream, cheese, cilantro, onions, lime and avocados, if desired. BEST NO-BEAN CHILI
Perfect for people who love using their slow cookers. I've tried many chili recipes but this one is the best ever! You can substitute beans for the cornmeal, but I think it takes away from the taste and the smooth texture. I recommend opening a second bottle of porter beer and drink it while cooking this tasty dish! Yum!

Steps:
- Pour coffee into a slow cooker and set slow cooker to High; add diced tomatoes, beer, tomato paste, beef broth, brown sugar, chili sauce, jalapeno peppers, cumin, cocoa powder, chile powder, oregano, cayenne pepper, coriander, and salt.
- Heat oil in a large skillet over medium heat. Cook and stir ground beef, onions, and garlic in the skillet until the beef is browned completely, 7 to 10 minutes; add to mixture in the slow cooker.
- Slowly pour cornmeal into the slow cooker while stirring to assure no lumps.
- Reduce heat to Low and cook for 2 hours.

NO BEANS ABOUT IT - CHILI
My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

- Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.
- Season with chili powder, oregano, cumin and hot sauce. Stir in the tomatoes and vinegar. Bring to a boil, then reduce heat to low, and simmer for about 1 hour - or longer if you have time. Stir occasionally to prevent burning on the bottom.

- Heat a large, deep pot over medium-high heat. Add coconut oil. When oil is shimmering, add onions. Cook and stir with a wooden spoon until slightly browned, about 5 minutes. Add garlic; cook until fragrant, about 30 seconds.
- Crumble ground beef into the pot. Stir to combine and cook until beef is no longer pink, 5 to 7 minutes. Add chili powder, cumin, cocoa powder, oregano, allspice, ancho chili powder, and salt; stir until well combined. Mix in tomato paste and simmer for 1 to 2 minutes.

BISON CHILI (NO BEANS)

- 1. Heat a heavy bottomed soup pot over medium-high heat. When the pan is hot, add olive oil. 2. Add onions, celery and garlic and sauté until onions are translucent, about 3 or 4 minutes. 3. Next, add ground bison, cumin, thyme, cayenne pepper, paprika, and chili powder. 4. Stir while this cooks, about 5 to 6 minutes. 5. Pour in salsa, tomatoes, jalapeno pepper and salt. 6. Simmer for at least 1 hour.
VEGAN NO BEAN CHILI
This recipe is for a vegan "true" chili. This is not going to be a chili bean recipe or a soup, although I'm sure i would be good, with some modifications, as either. This is adapted from "Jeff's Hot Dog Chili" which can be found here: https://www.allrecipes.com/recipe/223538/jeffs-hot-dog-chili/ . It is a perfect topper for hot dogs, chili cheese fries and sloppy joes. I know there are a lot of ingredients but it will be worth it. If you are not vegan, it is great with shredded cheese on top. I eat mine with diced onions, shredded cheese and yellow mustard. Enjoy!

- Start by placing 2 tbsp of the avocado oil in a cast iron pan on medium heat.
- Dice up 1/2 a small yellow onion and the jalapeño and add to the oil, stirring for 1-2 minutes until onions are translucent; remove mixture and set aside.
- Place the 2 Beyond Burger patties in the pan. Using a wooden spoon, break them up the same way you would ground beef. Cook until burger bits are crispy. Be sure to get all the pieces stuck to the bottom of the pan. Lower the heat so as not to burn it.
- While the burger crumbles are cooking, boil 1 cup of water. In a separate bowl or large mug, place the 2 vegan beef bouillon cubes. Using the handle of the wooden spoon, crush the cubes into a powder. Once the water has boiled, turn the heat off and add the crusted cubes to create a broth.
- Next, add in the TVP, stirring once, then letting it sit to rehydrate. All water should be absorbed by the TVP.
- Once rehydrated, add 1/2 of the TVP mixture and onion mixture into your Beyond Burger crumbles. .
- Add the remaining 2 tbsp of avocado oil and stir so everything is coated and the TVP browns. This should take about 3 minutes with the stove on medium heat.
- In a separate bowl, combine the remaining ingredients: ketchup, tomato paste, vegan worcestershire sauce, chili powder, onion powder, garlic salt, pepper, and sugar. Once all of the ingredients are mixed, pour the mixture into your "meat". Stir for a couple minutes so everything is coated. At this point it should look almost like a paste and should be very thick. .
- Let this mixture cook for about 5 minutes total before adding the remaining 1/2 cup of water. Reduce the flame to low heat and let simmer for 15-20 minutes, adding more water if needed. Be sure to stir occasionally making sure nothing is sticking to the bottom or burning. .
- Taste and adjust seasonings if necessary. For more heat, I would suggest adding more jalapeño 1 tsp at a time or additional chili power in the same fashion.
- *Substitutions*.
- EVOO can be used in place of avocado oil, plain white sugar can be used in place of the unrefined sugar and tomato sauce can be used in place of tomato paste. Just be sure to adjust the water accordingly so you don't end up with a chili that is too watery.
- **Also, since you are only using 1/2 of the TVP mixture, I usually freeze the other half to have later for tacos.

EASY CHILI CON CARNE (NO BEANS)
Some people like beans in their chili, some do not. This chili has no beans, but if you like beans, you can easily serve them on the side.

- Brown beef in a large deep pan.
- Drain fat.
- Add the garlic, 6 tbsp of the chili powder, and cumin, stirring to coat beef.
- Add the tomato sauce and the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour (add some water if your heat is too high and chili gets too thick).
- Add masa gradually, stirring after each addition, until chili reaches desired thickness.
- Simmer 15-20 minutes more, then season to taste with salt and add cayenne, paprika, and last tbsp of chili powder.
NO BEANS, NO TOMATOES, NO FOOLIN' CHILI
I am one who wouldn't know what to do if my chili didn't have beans in it. Keeping an open mind, I tried this and thought it was excellent. Sometimes, you can teach an old dog a few new tricks.

- In a big skillet, heat 2 tablespoons oil over medium-high heat.
- Add in the beef (in batches, if necessary); cook, turning often and adding more oil if needed, until meat is browned on all sides.
- Transfer to a 4 quart slow cooker.
- Add the remaining oil to the skillet; lower heat to medium.
- Add in the onions, bell peppers, and jalapenos; stir/saute for about 7 minutes or until onions are softened.
- Add in the chili powder, garlic, oregano, cumin, and salt; stir for 30 seconds.
- Remove skillet from heat; add in beer; stir, scrapping up the browned bits on the bottom of the skillet.
- Pour the vegetable mixture into the slow cooker.
- Cover and cook on LOW for 6-7 hours or until meat is tender.
- Skim fat from the surface of the chili.
- Thicken the chili by stirring in the cornmeal and cooking uncovered, for 15 more minutes.
NO BEANS, NO TOMATO CHILI
This family recipe has been passed down for generations. My dad used this recipe for an annual chili cookoff in our home town and it drew huge crowds. No tomatoes or beans in this true Texas chili. Important Note! This recipe called for Morton's Chili Blend. It is nearly impossible to find so I use William's Chili Mix in addition to the following ingredients. The real secret to this chili is the cooking method.
