TURKEY SAUSAGE GRAVY AND BISCUITS
Biscuits and gravy are perfect for slow Sunday mornings at home. - Prepare biscuits first if you are making them too. Begin the sausage gravy once they are in the oven.
- Spray a frying pan with cooking spray, and brown the turkey sausage.
- Sprinkle in 1/2 cup flour and cook for about 30 seconds until flour is absorbed into the turkey mixture.
- Slowly pour in cashew milk. Scrape the bottom of the pan to loosen any flour stuck to the bottom. Stir until all flour is incorporated and mixture begins to thicken.
- Bring to a boil and reduce to a simmer. Stir occasionally until ready to serve.
- Add salt and pepper to taste. Here I add a few dashes of hot sauce and maple syrup. If you are going to change it up a bit, remember to taste before adding.
- Ladle over biscuits and enjoy.

- In a medium to large sauce pan, add the butter and sausage. Cook the sausage until starting to brown over medium heat. Add the onions, garlic, pepper to taste and stir.
- Periodically add the flour while stirring consistently. Add parsley to mixture and combine.Add milk and heavy cream and continue to stir. Add crushed red peppers and green onion.
- Stir and let simmer for 5 minutes. Serve over biscuits and enjoy!

- Melt butter in a skillet over medium-low heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.

- In a mixing bowl, combine the turkey, salt, rubbed sage, black pepper, onion powder, garlic powder and red pepper flakes. Use a fork to mix until combined.
- Meanwhile, heat olive oil in a large deep sided skillet over medium-high heat. Add in the turkey breakfast sausage. Using a wooden spatula, break the meat up into small crumbles.
- Cook until the meat is no longer pink and is browned. Sprinkle in flour, stir and cook until absorbed.
- Pour in the milk stir and bring to a low boil. Reduce the heat to low and continue stirring until thickened. Season with kosher salt and black pepper to taste.
- Spoon turkey sausage gravy over biscuits with extra black pepper.

- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!
BUTTERMILK BISCUITS WITH SAUSAGE GRAVY
This version is a bit lighter than the traditional buttermilk biscuits, but no less tasty.

- Preheat the oven to 500 degrees F.
- In a bowl, combine 1 1/2 cups of the all-purpose flour, the whole wheat pastry flour, baking powder, salt and baking soda. Using a pastry cutter or two knives, cut the butter into the flour mixture until it resembles coarse meal. Combine the buttermilk and 1 tablespoon of the oil. Pour the buttermilk mixture into the flour mixture and gently mix until just combined.
- Turn the dough out onto a lightly floured surface. Knead lightly using the heel of your hand to compress and push the dough away from you, and then fold it back over itself. Give the dough a small turn and repeat eight or so times. (It's not yeast bread; you want to just barely activate the gluten, not overwork it.) Using a lightly floured rolling pin, roll the dough out 1/2 inch thick. Cut out rounds of dough with a 1 1/2-inch round cutter dipped in flour; press the cutter straight down without twisting so the biscuits will rise evenly when baked.
- Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and sprinkle with salt and pepper. Using a wooden spoon, break up the meat into small pieces. Cook until lightly browned, 3 to 5 minutes. Pour off any excess rendered fat. Add the onions and cook until clear and translucent, 3 to 5 minutes. Add the remaining 1/4 cup all-purpose flour and stir to combine and coat. Add the milk and season with salt and pepper. Bring to a boil and then reduce the heat to simmer. Let cook, stirring occasionally, until thick, about 5 minutes. Taste and adjust for seasoning with salt and pepper.
- Meanwhile, place the biscuits on an ungreased baking sheet about 1 inch apart. Bake until golden brown, 8 to 10 minutes. Transfer to a rack to cool just slightly. Split and serve hot with the sausage gravy.

You know me, I am always trying to find an easier, somewhat healthier way to make those all-time favorite foods. Obviously, when it comes to the salt and pepper, you can use more or less to taste. I have been told I have bland taste buds, so my amounts may leave you wanting more. The cinnamon stick comes from a game I play with my kids. Whoever gets the cinnamon stick on their plate wins!

- Cook biscuits according to package instructions.
- In a large frying pan, brown sausage. Do not drain yet!
- Add maple extract and stir well to ensure it is distributed evenly.
- Drain to remove any fat (not that there is much using turkey). Return sausage to pan.
- Add skim milk and bring to a soft boil over medium heat.
- Stir in cornstarch and simmer to thicken.
