EASY 3 INGREDIENT SELF-RISING FLOUR BISCUITS
Self-Rising Flour Biscuits are the easiest biscuits you will ever make! The dough for these drop biscuits comes together in less than 10 minutes and uses only 3 ingredients: self-rising flour, salted butter, and milk or buttermilk!

- Preheat your oven to 450F (232 C)
- Measure out your flour by fluffing it up with a spoon, lightly spooning it into your measuring cup being careful not to pack it down, and level it off. Or use a scale to measure by weight. Place in a large mixing bowl.
- Cut your cold butter into small chunks and add it into your flour. Using a pastry cutter or a fork, cut the butter into the flour until it is the texture of coarse meal.
- Add about 3/4 cup of the cold milk into your flour and butter mixture and stir using a spoon or rubber spatula, not a whisk, just until the flour is incorporated, about 10-15 seconds. Add more milk as needed to bring the consistency to a very thick batter. You want it thin enough that it could not be rolled out like a dough, but still very thick. See the video above for the right consistency. I usually need 1 cup, but you may need a little more or a little less. Do not over-mix your batter or you will have tough biscuits.
- Using a 2 oz scoop or a 1/4 cup measuring cup, scoop out your biscuits into a cast iron skillet or onto a sheet pan lined with parchment paper.
- Place the biscuits in your preheated oven, and bake at 450 F (232 C) for 16-18 minutes, until golden brown.
- If desired, spoon melted butter over the top of the baked biscuits.
- Completely cooled biscuits can be wrapped in plastic wrap and stored in the freezer for up to 3 months. To refresh, warm in a 325 F (163 C) oven for about 10 minutes until warmed through.
BUTTERMILK BISCUITS

- Preheat the oven to 450 degrees F. Place a 10 1/2-inch cast-iron skillet in the oven to heat.
- Add the flour to a large bowl. Use your hands or a pastry cutter to work the shortening into the flour until the crumbs are the size of large peas.
- Slowly pour in the buttermilk, then mix with your hands until the mixture starts to form a dough. Add buttermilk if it feels too dry. As soon as the dough comes together, transfer to a floured work surface. Press the dough into a square and fold it over itself to create layers, using additional flour to keep the dough from sticking. Shape into a 1/2-inch-thick rectangle. Use a 2- to 3-inch biscuit cutter to cut out biscuits, rerolling the scraps to use all the dough.
- Take the skillet out of the oven and add 2 tablespoons melted butter. Place the biscuits in the skillet, then lightly brush the tops with the remaining butter.
- Bake until lightly golden brown, 15 to 17 minutes. Let cool for a few minutes, then serve.

my ex mother in law bertha bennett made these REALLY easy biscuits that taste great . she said she worked in a cafe and thats how they made them she used 3 ingredients with well in center method ,she never measured just dumped into the bowl lol

- make a well in the bowl with your flour
- pour in milk and oil , i use lemon juice cause it just helps the rise for me.
- incorporate flour from inside going out may need a little more milk or flour
- pinch off six balls of dough , she used canned milk , which i do to i use 1 cup of the canned milk for gravy and 1 cup for biscuits with the wash out canned water 1/4 cup of it
- ,i like big biscuits , or 12 depending on size you want , just make them the same size . put on lightly greased cookie sheet

- bake in preheated 425 degree oven 15- 20 minutes until browned.

- 1. Preheat oven to 450 degrees. Melt a little butter in bottom of cast iron skillet (I used 10-inch skillet).
- 2. In a mixing bowl add baking mix, flour and baking powder; whisk to combine. (yes I used baking powder with self-rising flour for a lighter biscuit)
- 3. Grate frozen butter through the large holes of a cheese grater into the flour mixture; toss to combine. NOTE: I used a paper towel to grip butter as I got to the end and it became slippery.
- 4. Stir beer into flour/butter mixture; stir until moistened. Dough will be thick. Add a few more drops if dough is too dry. NOTE: Got the message from my friend Kathy Griffin and what a nice tip: "I made these again this morning, but I didn't want to pop a top at 8 in the morning lol, so I used tonic water, I know the beer gives them a slight different taste and smell, but, the tonic water gave them the same texture. So for anyone that doesn't want to use beer in them try it with tonic water"
- 5. Pat out dough on a floured surface to about 1/2-inch thick. Cut with biscuit cutter (I used 2 1/2-inch cutter). I had enough dough for 12 biscuits.
- 6. Place biscuits in heated skillet, brush melted butter on top if desired (I did). Bake 12 to 14 minutes until lightly browned on top.

Steps:
- Put flour, lard, sugar, salt, baking soda in a food processor and mix until it resembles coarse meal (usually, just a few quick pulses with the food processor will do).
- If you don't have a food processor use a fork and cut lard into ingredients until it's blended thoroughly.
- Then put flour in a mixing bowl and add buttermilk.
- Mix just until ingredients are blended.
- Don't overmix or handle dough very much or your biscuits will be tough.
- Pour dough on a floured surface and GENTLY pat down until it's about 3/4" thick.
- You'll have to flour your hands to pat it down so it won't stick to you.
- Then use a biscuit cutter to cut biscuits out and place in a buttered cast iron skillet or baking pan.
- Use your index finger to place a slight indention in the center of each biscuit.
- This prevents the center from rising faster than the edges.
- Coat tops of biscuits with melted butter or margarine and bake at 425 degrees for approximately 15 minutes or until golden brown.

- In a large bowl, cut butter into flour until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Turn onto a lightly floured surface; knead 3-4 times.
