4 bone-in pork chops (thin cut, pounded to tenderize)
1 zucchini squash (cut into 1 inch pieces)
1 summer squash (cut into 1 inch pieces)
1 red bell pepper (cut into 1 inch pieces)
4 tbsp virgin olive oil
2 tbsp italian seasoning
1 tsp salt
fresh cracked black pepper
1/4 cup freshly grated parmesan ((plus more for garnish))

Steps:

  • Preheat oven to 400 degrees F. Place the chopped veggies on a large sheet pan.
  • In a small dish, mix oil, Italian seasoning, and salt. Pour half of it over the veggies along with the Parmesan cheese and toss.
  • Place the pork chops on top of the veggies and then coat both sides of the pork chops with the remaining oil seasoning. Sprinkle everything with fresh cracked pepper.
  • Bake for 8 minutes, flip the chops, bake another 8 minutes and then increase the oven heat to broil. Broil for 4-6 minutes or until nice and browned.

1 teaspoon dried thyme leaves
1/2 teaspoon garlic-pepper blend
2 tablespoons olive or vegetable oil
3 medium unpeeled Yukon Gold potatoes, cut into 1/2-inch cubes
1 red bell pepper, cut into bite-size strips
2/3 cup shredded Italian cheese blend

Steps:

  • Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. Place pork chops in one half of pan.
  • In large bowl, mix 3/4 teaspoon of the thyme, the garlic-pepper blend and oil; lightly brush tops and sides of pork with some of the oil mixture. Add potatoes and bell pepper to remaining oil mixture in bowl; toss to coat. Spread vegetables in other half of pan.
  • Bake uncovered 30 to 35 minutes or until pork is no longer pink in center. Sprinkle cheese and remaining 1/4 teaspoon thyme over pork; bake 2 to 3 minutes longer or until cheese is melted.

2 tbsp. olive oil, divided
1-2 large diced bell peppers, cored and cut into 1/2-in. pieces
10 oz. cremini mushrooms, sliced
Coarse salt
Fresh ground black pepper
1 tbsp. all-purpose flour
1/2 c. dry white wine, such as Pinot Grigio, or non-alcoholic varietal grape juice

Steps:

  • Heat 1 tbsp. oil in large ovenproof skillet over medium-high heat. Add red pepper and cook, stirring often, until it begins to soften, about 1 min. Add mushrooms and cook, stirring often, until juices evaporate, about 5 min. Stir in scallions and cook until wilted, about 1 min. Transfer to plate. Season pork with 1/2 tsp. salt and 1/4 tsp. pepper. Add remaining 1tbsp. oil to skillet and heat. Add pork and cook, turning occasionally, until browned and meat is slightly pink when pierced to the center with tip of sharp knife, about 5 min. Sprinkle with flour and stir with wooden spoon to coat pork. Add wine and 1/2 c. water and bring to a boil, scraping up browned bits in pan with wooden spoon. 2 cups grated Parmesan cheese
1 tablespoon Italian-style seasoning
¼ teaspoon garlic powder
1 cup butter, melted

6 pork rib chops, 1 1/4 to 1 1/2 inches thick (4 pounds)
2 tablespoons vegetable oil

Steps:

  • Heat oven to 350°F.
  • Melt butter in 12-inch skillet over medium heat. Cook celery, onion, carrot and bell pepper about 5 minutes, stirring occasionally, until vegetables are tender; remove from heat. Stir in cheese, thyme, 1/4 teaspoon salt and 1/8 teaspoon pepper.
