- Drain cherries, reserving 1/4 cup juice. In a bowl, whip juice with cream cheese. Stir in cherries, pineapple, whipped topping and marshmallows. Chill until serving.

Steps:
- In a sauce pan, combine reserved cherry juice and pineapple juice to equal 1 cup. Bring to boil, add gelatin and whisk together. Remove from heat and add cream cheese and blend together until smooth.
- Add cola and beat until mixture becomes fluffy. Fold in cherries, pineapple, and nuts. Pour into molded container, chill 6 to 8 hours or until firm.

BING CHERRY SALAD
This is a salad my great grandma use to make and is one of my favorites to eat during the holiday season. Most people make this creamy by melting the cream cheese or dissolving it in the juice. We actually add small chunks of the cheese after the mix has cooled. So you have a clear gelatin with little white chunks in it. So good!

Steps:
- Drain the pineapple juice and cherry water into a 2-cup measuring cup. Pour enough color to make 2 cups; discard the remaining soda. Pour the cola mixture into a saucepan.
- Bring the cola mixture to a boil over medium-high heat. Remove from heat, then stir in the pineapple, cherries, cream cheese, and cherry gelatin until gelatin dissolves, about 5 minutes. Pour mixture into a mold or glass baking dish. Refrigerate until set, about 3 hours.

- Drain grapefruit and cherries, reserving juices.
- Bring reserved juices and sherry to a boil in a medium saucepan.
- Remove from heat; add gelatin, and stir 2 minutes or until gelatin dissolves.
- Chill 30 minutes or until consistency of unbeaten egg white; stir in grapefruit, cherries, and pecans.
- Pour into a 6 1/2-cup mold. Cover and chill 8 hours or until firm. Unmold onto a serving dish.

BING CHERRY SALAD
My mother made this when I was growing up, but she revised it over the years.

Steps:
- 1. Heat juices that were drained from pineapple and cherries.
- 2. Pour over gelatin. Stir well and then let it cool a few minutes.
- 3. Add Coca-Cola and chill in refrigerator until partially jelled.
- 4. Add cherries, pineapple, nuts [if desired], and cream cheese [crumbled into small chunks] or whipped cream.
- 5. Chill in refrigerator until firm. You may put it in a mold if you wish.

- Bring cherry juice to boiling point and add to gelatin powder in mixing bowl.
- Stir until dissolved and add Coke and lemon juice.
- Chill until partially set.
- Cut cheese into small dice or roll into small balls, and fold along with toasted nuts and cherries into chilled gelatin.
- Pour into mold or serving dish and chill until firm.
- NOTE: Cooking time refers to chilling time.

- The night before you need this: In large bowl, cut up cream cheese, add whipping cream and the miniature marshmallows. Cover and let this soak overnight in the refrigerator.
- In the morning, whip the cream cheese, whipping cream and marshmallows until smooth and creamy.
- Drain all the juice from the pineapple, oranges and cherries. Cut the cherries in half and pat dry with a paper towel to absorb most of their juices. Stir the pineapple, oranges and cherries to the whipped cream mixture carefully.
