CAJUN SHRIMP STUFFED POBLANO PEPPERS - RECIPE

Cajun Shrimp Stuffed Poblano Peppers - Recipe image

A recipe for gorgeous poblano peppers stuffed with Cajun seasoned shrimp, Manchego and goat cheese, and basil, then baked or grilled.

Provided by Mike Hultquist

Categories     Main Course

Time 55m

Number Of Ingredients 12

2 large poblano peppers
2 teaspoons olive oil
1 cup chopped onion
1 jalapeno pepper (chopped (or use a serrano pepper for more heat))
2 cloves garlic (chopped)
8 ounces shrimp (peeled and deveined)
1 tablespoon Cajun seasonings (or more to taste)
4 ounces goat cheese
4 ounces shredded Manchego cheese
10 or so large basil leaves (shredded)
1 tablespoon or more of your favorite hot sauce (if desired)
Fresh cilantro (chopped, for topping)

Steps:

  • Roast the poblano peppers in an oven on BROIL, not too close to the heat source for 15 minutes, or until the skins puff up and char. FLip them halfway through to get both sides. Remove from heat, cool slightly, then peel off the skins.
  • Slice the poblano peppers in half lengthwise and scoop out the insides. Set onto a large baking dish.
  • Add the shrimp to a mixing bowl and coat with 1 teaspoon olive oil. Toss with Cajun seasonings.
  • Heat a pan to medium heat and add 1 teaspoon olive oil. Cook the onion and peppers about 5 minutes, softening them up.
  • Add the garlic and cook another minute. Scoop the mixture into a large mixing bowl.
  • Cook the shrimp in the same pan a couple minutes per side, until cooked through. Cool and chop. Into a mixing bowl they go.
  • Add cheeses, basil and hot sauce (if using). Mix well.
  • Scoop the mixture into the peppers and bake 20-30 minutes at 375 degrees F, to your preference.
  • Top with fresh cilantro, spicy chili flakes, and serve with extra hot sauce! Serves 2.

CAJUN-STYLE STUFFED PEPPERS WITH ANDOUILLE image

I love the sound (and the look) of this easy stuffed pepper dish. I can almost taste it! Recipe & Photo: tasteofhome.com

Provided by Ellen Bales

Categories     Other Main Dishes

Time 1h20m

Number Of Ingredients 6

1 pkg (8 oz.) zatarain's jambalaya mix
4 medium green peppers
3/4 lb fully cooked andouille sausage, chopped
1 jalapeno pepper, seeded and minced
1 can(s) (16 oz.) tomato juice
hot sauce or tabasco, optional

Steps:

  • 1. Prepare the jambalaya mix according to package directions. Meanwhile, cut peppers lengthwise in half; remove seeds.
  • 2. In a large skillet, cook and stir sausage over medium-high heat until browned. Add minced jalapeno (wear disposable gloves when cutting hot peppers because the oils can cause skin irritation--avoid touching your face); cook 1 minute longer. Using a slotted spoon, remove to paper towels to drain.
  • 3. Stir the sausage into prepared jambalaya. Spoon into peppers. Place peppers in a greased 9x13-inch baking dish; pour tomato juice over and around peppers.
  • 4. Bake, uncovered, in a preheated 350-degree oven for 40-45 minutes or until peppers are tender. Serve with your favorite hot sauce if desired.

CAJUN SHRIMP STUFFED JALAPENO PEPPERS (ALLIGATOR EGGS)

Cajun Shrimp Stuffed Jalapeno Peppers (Alligator Eggs) image

There are lots of recipes for stuffed peppers, poppers, armadillo eggs, etc, but this is the best I've ever come across. I got it off the internet years ago. It's great, and worth the effort.

Provided by Pokey in San Antonio

Categories     Vegetable

Time 1h10m

Yield 10-16 serving(s)

Number Of Ingredients 23

36 large jalapenos (roasted and peeled)
1/2 lb shrimp (cooked, deveined, and minced)
2 teaspoons mayonnaise
2 teaspoons chili sauce (prepared)
2 teaspoons capers (minced)
2 teaspoons green onions (minced)
2 teaspoons fresh parsley (minced)
1/2 teaspoon Dijon mustard
1/2 teaspoon horseradish
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon black pepper
1 3/4 cups all-purpose flour
3/4 cup beer (room temp)
2 eggs (room temp)
3 tablespoons green onions (minced)
2 tablespoons vegetable oil
1 1/2 tablespoons catsup
2 teaspoons Worcestershire sauce
1 1/2 teaspoons lemon juice (fresh)
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
2 teaspoons cayenne pepper

Steps:

  • Brush fresh peppers with olive oil and roast in oven or grill over medium coals till skin starts to blacken in places and blisters all over. Submerge in cold water and peel.
  • Cut slit the length of chili, scrape out seeds (optional if you want to keep the heat).
  • For the stuffing: Mix all and chill for 1 hour.
  • Spoon or pipe in about 1 tablespoon (don't over fill--chili should close). Refrigerate until ready (this could be done the day before).
  • Heat peanut oil in fry pan or deep fryer to 350 degrees F.
  • Blend remaining ingredients in bowl and dredge stuffed chilies a few at a time and drop them into the hot oil. Cook until golden brown, turning once (about 5 minutes).
  • Drain on paper towels and season with salt or Tony's.

  • In the same saucepan, add the onion, bell pepper, celery and sauté. Add the eggplant to the mixture and cook until the eggplant softens.
  • Add the ground beef to the mixture and continue cooking until the eggplant is completely cooked. Season to taste with salt and pepper. • Preheat oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper or foil.
  • Cut tops off peppers and carefully remove the core and seeds, taking care not to split the skin. Dice the pepper tops and set aside. Place the peppers on the prepared baking sheet; bake for 20 minutes. Remove from oven and let cool. Discard any accumulated liquid in the bottom of the peppers.
  • Meanwhile, season chicken on all sides with 1 Tbsp. Cajun seasoning. Heat 1 Tbsp. oil in a large skillet over medium heat. Add half of the chicken and cook, turning to brown all sides, 4 to 6 minutes. Transfer the chicken to a medium bowl with a slotted spoon. Repeat with the remaining 1 Tbsp. olive oil and the remaining chicken.
  • Add sausage to the now-empty skillet and cook, stirring occasionally, until lightly browned, 1 to 2 minutes. Add celery, onion, and the reserved diced pepper; cook, stirring often, until the onions are translucent, 3 to 5 minutes. Add garlic, the remaining 1 Tbsp. Cajun seasoning, and salt; cook, stirring, for 30 seconds. Add tomatoes and tomato paste; stir to combine, scraping any brown bits off the bottom of the pan. Add broth, rice, and the chicken with any accumulated juices; stir to combine. Bring to a boil. Reduce heat to maintain a simmer and cook, stirring occasionally, until the chicken has cooked through and the rice has softened, 5 to 10 minutes. Remove from heat and stir. Let stand, covered, until all liquid is absorbed, about 10 minutes.

  • Prepare the bell peppers: Cut off the tops of the bell peppers and discard (or save for another purpose). Use your hands to remove any seeds and white membranes so the peppers are clean and ready for stuffing.
  • Make the filling and stuff the peppers: In a mixing bowl, combine the beef, corn, rice, red onion, and seasonings. Use your hands to mix everything together well, and then spoon the filling into the peppers, packing it in firmly. As you stuff the peppers, place them next to each other in the cake pan, sitting upright like cups.
  • Pressure cook the peppers: Pour a cup of water into the inner pot of a 6-quart electric pressure cooker. Use the wire metal trivet to lower the cake pan into the pot. It should be resting on top of the trivet, a little bit above the water. Secure the lid on the pressure cooker and make sure the lid is set to its “Sealing” position. Select the “Manual” or “Pressure Cook” setting, and set the time to 15 minutes at high pressure. The pot will take about 10 minutes to come up to pressure, and then the cooking time will begin.
  • Release the pressure: When the cooking program ends, perform a quick pressure release by moving the pressure vent to its “Venting” position. When the pressure has fully released, open the pot and sprinkle the peppers with the cheese and chopped fresh herbs.
