Delicious potato soup using red potato's and lots of onion. It gets even better when the soup is refigerated overnight.

Number Of Ingredients 10

3 lbs red potatoes, skin on and cubed
4 -5 garlic cloves
3 medium onions
5 carrots
9 cups vegetable broth
1 1/2 cups half-and-half or 1 1/2 cups cream
2 tablespoons fresh basil
2 tablespoons fresh dill
1 tablespoon fresh parsley
salt and pepper

Steps:

  • Do not peel potatoes, cut them in 1 inch squares, set aside.
  • Dice 5 carrots, no need to peel, set aside.
  • dice onion and mince garlic.
  • in large soup pan, sautee garlic and onion in oil or butter for aprox 5 minutes.
  • pour vegetable broth into pan, add carrots and potatoes.
  • wait until liquid comes to a boil, turn on medium-low and cook for 25 minutes or until both carrots and potatoes are done.
  • blend half the soup mixture in blender or magic bullet, return to pan.
  • Add cream or half-and-half, add basil, parsley and dill, salt and pepper. cook on low for 10-15 minutes.

6 large yukon gold potatoes, peeled and cut into chunks
1/2 cup butter, divided
2 large onions, sliced thin
1/4 cup all-purpose flour
1 large leek, cut, washed, then chopped (white part only)
1 large celery rib, chopped small
4 large garlic cloves, chopped
3 cups chicken broth
1 cup whole milk, homogenized
1 cup whipping cream
1/2 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon dried thyme
1/2 teaspoon celery seed
1/2 cup freshly grated padano cheese
4 tablespoons chopped fresh parsley

Steps:

  • In a large saucepan or a medium cooking pot, add potatoes, cover with water; bring to boil, reduce heat, cover and cook for about 10 minutes. The potatoes will not be fully cooked and that is fine.
  • Drain and transfer to a large cooking pot.
  • In a large frying pan, on medium-high heat, melt 1/4 cup of butter.
  • Add sliced onions, stir and cook until onions are translucent, about 3 minutes.
  • Add flour and stir well to coat onions.
  • Add leeks, celery and garlic and fry for about 2 minutes, stirring occasionally.
  • Transfer the onion-leek mixture to the large cooking pot.
  • Add chicken broth, bring to boil, reduce heat and cook for about 3 minutes.
  • Add the milk, whipping cream, salt, pepper, thyme, and celery seeds.
  • Bring the soup to boil, reduce heat and cook for 2 minutes.
  • Remove from heat and let cool for 5 minutes.
  • In a food processor or blender, puree soup in batches until smooth and return to the cooking pot. You may also use an immersion blender.
  • Add grated cheese and bring to just boil or until cheese melts.
  • Adjust seasonings to taste.
  • Serve soup hot.
  • Refrigerate any unused portion ot the soup.

¼ cup finely chopped onion
½ teaspoon finely chopped fresh garlic
2 tablespoons all-purpose flour
4 cups skim milk
2 cups shredded cooked chicken

2 tablespoons reduced-fat sour cream
1 ½ teaspoons salt-free seasoning blend (such as Mrs. Dash®)
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon celery seed
2 cups cubed cooked chicken
1 teaspoon cornstarch, or as needed

Steps:

  • Heat oil in a 3- to 4-quart saucepan over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Gradually stir in flour to form a paste. Slowly add milk, mixing continually. Simmer for 10 minutes.
  • Add shredded chicken, chicken broth, sour cream, salt-free seasoning blend, pepper, garlic powder, and celery seed; bring to a rolling boil. Reduce heat and simmer for 20 to 25 minutes.
  • Stir in cubed chicken and heat for 10 minutes. Add cornstarch and thicken to desired consistency. Adjust seasonings.

I needed a recipe to use up a large amount of red potatoes after a school fund raising dinner. I was able to actually sell it to the student body it was so good. I also am not a huge potato fan and gravitate towards red potatoes when I do eat them.

2 ½ pounds unpeeled, small red potatoes, cut into cubes
1 large onion, diced
3 celery ribs, diced
3 bacon strips, diced
8 cups milk
4 cups water
3 tablespoons chicken bouillon granules
1 teaspoon salt
½ teaspoon pepper
¾ cup butter cubed
¾ cups flour
1 cup heavy whipping cream
½ cup minced fresh parsley
shredded cheddar cheese and chopped green onions

Steps:

  • 1. Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat, cover and cook for 10-12 minutes or until tender. Drain, set aside.
  • 2. In a kettle, sauté onion, celery and bacon until vegetables are tender; drain well.
  • 3. Add milk, water, bouillon, salt and pepper; heat through. (DO NOT BOIL!)
  • 4. In a separate large saucepan, melt butter; stir in flour until smooth. Cook and stir over medium heat for 1 minute. Gradually add cream. Bring to a boil; cook and stir over for 1-2 minutes or until thickened.
  • 5. Stir into soup stock. Add parsley and potatoes; heat through.
  • 6. Sprinkle with cheese and green onions.

4 slices bacon
3 potatoes, peeled and chopped
1 onion, chopped
1 carrot, chopped
1 cup chopped celery
water to cover
4 cups milk
2 teaspoons salt
1 teaspoon ground black pepper
1 cup sour cream
2 tablespoons all-purpose flour
2 teaspoons paprika

Steps:

  • In a large saucepan cook bacon until crisp. Set bacon aside, along with 3 tablespoons of bacon drippings.
  • Add potatoes, onion, carrot and celery to drippings. Add enough water to cover vegetables and cook over low heat until tender, stirring occasionally.
  • Stir in milk, salt and pepper. Bring to a boil.
  • In separate bowl, stir together sour cream, flour and paprika. Gradually stir 1 cup of hot soup mixture into sour cream mixture.
  • Pour sour cream mixture into soup mixture. Cook until small bubbles break soups service. Top with chopped bacon pieces.

2-1/2 pound unpeeled small red potatoes, cut into 1-inch cubes
1 large onion, chopped
3 celery ribs, chopped

Used the recipe as a framework and tweaked it as follows: increased water to 4c, used 1c heavy cream, increased the onion, seasoned it with Herbes De Provence, used red potatoes, deleted salt, used 4 cheese blend, and added 1/2 a chopped jalapeno with seeds.
