1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup shortening
1 cup packed brown sugar
½ cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups rolled oats
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Brush baking sheets lightly with vegetable oil.
  • Combine flour, salt and baking soda on waxed paper.
  • Beat together shortening, sugars and vanilla in large bowl with electric mixer until creamy. Add eggs and beat until light and fluffy.
  • Gradually beat in flour mixture. Stir in rolled oats and then chocolate chips.
  • Drop batter by rounded teaspoonsfuls onto baking sheets. Bake for 8-10 minutes or till golden. Cool cookies on sheets for 2 minutes. Remove to wire racks to cool completely.

I don't know where Bill got his cookie recipe from, but they look vaguely familiar. These are straightforward good cookies. They have a slight twist in that the oats and the nuts are toasted before they are made into cookies. The flavor is very good.

Number Of Ingredients 9

2 1/2 cups quick-cooking oats (or old-fashioned works)
1 cup walnuts, chopped
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups brown sugar, packed
1 cup unsalted butter, at room temperature
1 teaspoon vanilla extract
1 egg

Steps:

  • Heat oven to 350°F.
  • Spread oats and walnuts in ungreased 15-1/2 x 10-1/2 x 1-inch baking pan. Bake 15-20 minutes, stirring occasionally, until toasted and light brown; cool.
  • In small bowl, stir together flour, baking soda and salt. Beat together brown sugar, butter or margarine, vanilla and egg in large bowl. Stir in oat mixture and then flour mixture.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased baking sheets.
  • Bake at 350°F for 8 to 10 minutes or until golden brown. Cool on pans for 3 minutes; remove from cookie sheet. Cool on wire rack.

1 cup butter or 1 cup margarine, room temperature
1 cup brown sugar, firmly packed
1/2 cup white sugar
2 large eggs, beaten
1 teaspoon vanilla
1 cup flour
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt, to taste (optional)
1 cup old fashioned oats
1/4 cup wheat germ
1 (12 ounce) package semi-sweet chocolate chips (optional)
1/2 cup raisins (optional)
1/2 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350°F.
  • Cream butter or margarine with sugars in large mixing bowl.
  • Stir in eggs and vanilla.
  • Stir in dry ingredients (flours-salt) until blended.
  • Add oats and wheat germ, stirring until combined.
  • Stir in chocolate chips, raisins and pecans (if using).
  • Form dough into 3-inch balls and place on cookie sheets.
  • Bake 8-10 minutes or until golden brown.

1 cup canola oil or 1 cup a good vegetable oil
1 cup granulated sugar
1 cup brown sugar, lightly packed
2 large eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 cup Grape-nuts cereal
1/2 cup Rice Krispies
1 cup quick-cooking rolled oats
1/2 cup shredded coconut, unsweetened
1/2 cup long thread coconut, sweetened
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixing bowl, cream margarine, oil, granulated sugar and brown sugar.
  • Add eggs, vanilla extract and beat well.
  • In a separate mixing bowl, combine flour, salt, cream of tartar and baking soda.
  • Stir flour mixture into creamed mixture.
  • Stir in grape-nuts cereal, rice krispie cereal, rolled oats, both coconut and chopped pecan nuts; mix well to incorporate.
  • Drop by tablespoons on an ungreased baking sheet; flatten slightly with a fork.
  • Bake in preheated 350 F oven on lower rack for 5 minutes.
  • Move to middle rack and finish baking, about 5 to 8 minutes longer or until lightly browned.
  • Remove from baking sheet and cool on wire racks.
