GRILLED PIZZA WITH GRILLED RED ONIONS AND FETA
I use a perforated grill pan to cook sliced onions and other vegetables on the grill. They'll have a nice charred flavor and be just soft enough if you cook them before you put them on the pizza.

- Prepare a hot grill. Place the onions in a bowl and toss with 1 tablespoon of the olive oil and salt and pepper to taste. Place a perforated grill pan on the grill and let it get hot, then add the onions and cook, tossing in the pan or stirring with tongs, for about 3 to 5 minutes, just until they soften slightly and begin to char. Remove from the grill and return the onions to the bowl.
- Oil the hot grill rack with olive oil, either by brushing with a grill brush or by dipping a folded wad of paper towels in olive oil and using tongs to rub the rack with it. Place a round of dough on a lightly dusted baker's peel or rimless baking sheet. Slide the pizza dough from the peel or baking sheet onto the grill rack. If the dough has just come from the freezer and is easy to handle, you can just place it on the rack without bothering with the peel. Close the lid of the grill - the vents should be closed --- and set the timer for 2 minutes.
- Lift up the grill lid. The surface of the dough should display some big air bubbles. Using tongs, lift the dough to see if it is evenly browning on the bottom. Rotate the dough to assure even browning. Keep it on the grill, moving it around as necessary, until it is nicely browned, with grill marks. Watch closely so that it doesn't burn. When it is nicely browned on the bottom (it may be blackened in spots), use tongs or a spatula to slide the dough onto the baking sheet or peel, and remove from the grill. Cover the grill again.
- Make sure that there is still some flour on the peel or baking sheet and flip the dough over so that the uncooked side is now on the bottom. Brush the top lightly with oil, then top with a thin layer of tomato sauce (no more than 1/4¼ cup) and a layer of grilled sliced onions. Sprinkle with thyme and feta, and drizzle on a little more olive oil. Slide the pizza back onto the grill. If using a gas grill, reduce the heat to medium-high. Close the lid and cook for 2 to 3 more minutes, until the bottom is brown. Open the grill and check the pizza. The top should be hot and the bottom nicely browned. If the bottom is getting too dark but the pizza still needs a little more time, move it to a cooler part of the grill and close the top. Use a spatula or tongs to remove the pizza to a cutting board. Cut into wedges and serve. Repeat with the other two crusts.

- Mix oil and garlic; brush onto both sides of vegetables. Sprinkle with pepper. Grill, covered, over medium heat until tender, 4-5 minutes per side for pepper and onion, 3-4 minutes per side for zucchini, 2-3 minutes per side for tomatoes., Coarsely chop pepper, onion and zucchini. GRILLED SHRIMP PIZZA

- Preheat a grill to medium high. Toss the shrimp and onion in a bowl with the olive oil and oregano. Season with salt and pepper.
- Stretch the pizza dough into a roughly 8-by-10-inch rectangle. Lightly brush the grill with olive oil. Lay the dough on the grill and cook until the top begins to bubble and the bottom is marked, about 3 minutes. Remove with tongs and put cooked-side up on a cutting board. Brush with olive oil.
- Grill the shrimp and onion, turning, until the onion softens and the shrimp are lightly charred, about 5 minutes. Top the crust with the shrimp and onion, then slide the pizza back onto the grill. Top with the tomatoes and feta, cover and grill until the dough is cooked through and the cheese is soft, about 5 more minutes.
- Carefully transfer the pizza to the cutting board. Sprinkle with the parsley and cut into pieces.

GRILLED VEGETABLE AND GOAT CHEESE PIZZA
This is a rather loose recipe. The quantities depend on how big or how many pizzas you are making. I like to grill a lot of veggies, as any leftovers are great for sandwiches or salads, so they never go to waste.

- Pre-heat your BBQ (or grill pan) to medium-high. Place cut vegetables in perforated grilling basket and grill until soft and starting to brown. Remove from BBQ and set aside while you assemble your pizza. At the same time, hand-crush tomatoes from a can of good plum tomatoes. Season with salt, pepper and some oregano and simmer on the stove-top over medium-low heat until thickened. Set aside to cool a bit. (*Note: if you're in a hurry, you can skip the simmering and just place some hand-crushed tomatoes right on to your pizza dough).
- Pre-heat oven to 500° F. with pizza stone on middle rack (if using). Press out your pizza dough and spoon on tomatoes or pizza sauce. Top with grilled vegetables and top with crumbled goat cheese. Bake in pre-heated oven for 10-15 minutes, until crust is golden and toppings are hot.
- Top with a drizzle of balsamic glaze and sprinkle with chopped parsley, if desired.

- Heat oil in a large skilet over medium heat.
- Add onions and stir- cook until transparent.
- Stir in brown sugar, balsamic vinegar, garlic, oregano & basil.

- Preheat outdoor grill to 450 - it needs to be hot.
- When the grill is hot enough, lightly brush grates with olive oil.
- Prepare the dough; it should be stretched or rolled out into a thin circle.
- Brush dough with olive oil.
- Slide the pizza dough. olive-oil-side-down, onto the grill grates over direct heat.
- Close lid and bake for 3 to 5 minutes, or until the dough is browned underneath. If it's not browned, give it another minute.
- In the meantime, prepare the chicken.
- Combine chicken pieces and 1/4 cup bbq sauce in a mixing bowl; mix until well combined. Set aside.
- Remove pizza crust from grill and let stand 2 minutes.
- Turn the pizza crust over, browned-side up.

- Top with previously prepared chicken, sliced red onions, and shredded cheese.

- Pull the pizza off the grill onto a cutting board and let it rest for a minute.

- Place pizza stone on grill grates and heat grill, with the lid closed, to a temperature around 400-425F.
- Sprinkle the corn meal on a pizza peel, cutting board or parchment paper.
- Shape dough into a round 10" pizza crust and place on the pizza peel, cutting board or parchment paper. The corn meal will allow the pizza to transfer onto the pizza stone smoothly.
- Spread the pesto evenly on the pizza dough and sprinkle the mozzarella cheese on top of the pesto.
- Top the pizza with shrimp, tomatoes, onions, and crumbled feta cheese.
- Slide the pizza onto the pizza stone carefully. Close the lid and let the pizza bake on the grill for 15-20 minutes. The crust should be browned along the edges and the mozzarella cheese should be melted and bubbly.
- Lift the pizza off the stone and let it rest on a cutting board for 5 minutes.
- Cut it into 8 pizza slices and serve.
