Beef stroganoff image

Make a classic beef stroganoff with steak and mushrooms for a tasty midweek meal. Garnish with parsley and serve with pappardelle pasta or rice.

1 tbsp olive oil
1 onion, sliced
1 clove of garlic
1 tbsp butter
250g mushrooms, sliced
1 tbsp plain flour
500g fillet steak, sliced
150g crème fraîche
1 tsp English mustard
100ml beef stock
½ small pack of parsley, chopped

Steps:

  • Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
  • Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
  • Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
  • Season everything well, then tip onto a plate.
  • Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
  • Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
  • Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
  • Cook over a medium heat for around 5 mins.
  • Scatter with some chopped parsley, and serve with pappardelle or rice.

1 lb. beef sirloin steak, cut into thin strips
2 Tbsp. flour
1 can (14-1/2 oz.) fat-free reduced-sodium beef broth
2 Tbsp. GREY POUPON Hearty Spicy Brown Mustard
2 tsp. paprika
1 green pepper, cut into strips
1 pkg. (8 oz.) sliced fresh mushrooms
2 cups egg noodles, uncooked
1 cup water
1/4 cup BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream

Steps:

  • Heat oil in large deep skillet or Dutch oven on medium heat. Add onions and garlic; cook and stir 1 min. Add meat; cook 5 min. or until evenly browned, stirring frequently. Stir in flour.
  • Add beef broth, mustard and paprika; mix well. Stir in peppers and mushrooms. Bring to boil, stirring occasionally.
  • Stir in noodles and water; simmer on medium-low heat 10 min. or until noodles are tender, stirring occasionally. Add sour cream; cook and stir 1 min.

1 to 3 tablespoons grapeseed oil, as needed to sear steaks
1 (2 to 3-pound) beef bottom round roast, julienned
Salt and freshly ground black pepper
1 tablespoon paprika
1 large white onion, diced
2 cloves garlic, lightly crushed with the side of a knife blade, and minced
2 cups (about 6 ounces) white mushrooms, cleaned trimmed, and sliced
2 cups red wine
1 cup beef stock
1 pound egg noodles
1 cup sour cream
1/4 cup prepared horseradish
2 tablespoons minced fresh flat-leaf parsley

Steps:

  • Heat oil over medium-high heat in a large saute pan which should be large enough to accommodate the mushrooms, wine and beef.
  • Season beef with salt, pepper, and paprika, and set aside briefly.
  • To the heated pan, add white onion and garlic and saute until the onion becomes translucent. Add the mushrooms and saute until they give up their juices.
  • Add the beef strips to the pan, pour red wine, pouring over the meat, and allow the wine to reduce by half. Add beef stock and return to a boil. Cover, reduce heat, and allow meat to braise until it is fork tender, about 25 minutes.
  • Bring a pot of water to a boil for the noodles.
  • Using a slotted spoon, remove meat and mushrooms from pan, cover and keep in a warm place. Allow liquids to reduce and thicken with the pan uncovered.
  • While the beef stock is reducing, boil the egg noodles until al dente.
  • Remove sauce from heat and whisk in sour cream and horseradish (which will add stroganoff flavor and stabilize the sauce). Return meat and mushrooms to sauce.
  • Drain egg noodles well and spoon stroganoff over. Garnish with parsley.

This is a recipe that was passed on by my Grandmother and I absolutely love it. I have modified it somewhat to a healthier version. Hope you enjoy it as much as my family and friends do.

2 -3 lbs lean stewing beef or 2 -3 lbs beef, strips
1 large onion, chopped
8 mushrooms, cut up in large chunks
1 cup dry red wine
5 cups low sodium beef broth
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
2 tablespoons HP steak sauce
2 tablespoons beef bovril powder or 2 tablespoons liquid
3 bay leaves
fresh ground pepper
2 tablespoons no salt becel margarine
1 tablespoon flour
fat free sour cream (optional)
dill
1.5 (12 ounce) packages of yolk free egg noodles

Steps:

  • In large sauce pan heat 2 tablespoons olive oil and saute beef strips until brown. Sprinkle with ground pepper. Remove from pan and place in a deep pot.
  • Add onions and mushrooms to pan and saute until golden. Add to pot.
  • Deglaze pan with red wine and add to pot. Add beef broth, ketchup, HP sauce, beef bovril, worcestershire sauce and bay leaves to pot. Cover and simmer (low simmer) for 2 hours.
  • Mix the margarine and flour together with a fork in a bowl. Bring stroganoff to a boil and add a teaspoon of this mixture at a time to the stroganoff, until you get your desired thickness. Lower heat and add as much sour cream as you like. I'm not a big sour cream person, so I just add about 1/2 a cup.
  • Boil egg noodles until al dente, drain and add to individual serving bowls. Top with stroganoff and sprinkle a little of dill on top.

1 ¼ pounds beef sirloin steak
3 teaspoons kosher salt, divided, or to taste
½ teaspoon ground black pepper, or to taste
½ teaspoon garlic powder
4 teaspoons olive oil
3 tablespoons butter, divided
1 medium onion, thinly sliced
1 (8 ounce) package sliced mushrooms
2 tablespoons all-purpose flour
1 tablespoon tomato paste
2 cups unsalted beef broth, or more to taste
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1 (16 ounce) package wide egg noodles
1 cup sour cream
1 tablespoon chopped fresh parsley

Steps:

  • Slice beef into very thin strips and season with ½ teaspoon each salt, pepper, and garlic powder.
  • Heat 2 teaspoons oil in a large skillet over medium-high heat until very hot. Add ½ of the beef in a single layer and cook, undisturbed, for 2 minutes. Flip and cook until browned on the other side, about 1 minute. Remove to a plate and repeat with the remaining olive oil and beef.
  • Fill a large pot with water and set over high heat on another burner.
  • Melt 2 tablespoons butter in the same skillet over medium heat. Add onion and cook until it starts to release its juices, about 2 minutes. Add mushrooms and ½ teaspoon salt; cook, stirring often, until tender and lightly browned, 2 to 4 minutes. Sprinkle with flour and cook, stirring constantly, for 1 to 2 minutes. Stir in tomato paste and cook for 1 minute.
  • Whisk in 2 cups beef broth and mustard and bring to a simmer, scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add more broth if necessary as sauce thickens. Stir in Worcestershire sauce and add reserved beef and any drippings. Reduce heat to low and simmer, stirring occasionally, while you cook the pasta.
  • Add egg noodles and remaining 1 teaspoon salt to the boiling water. Boil until noodles are tender yet firm to the bite, 7 to 9 minutes. Drain noodles and toss with remaining 1 tablespoon butter.
  • Add sour cream to the sauce, a little at a time, stirring swiftly to incorporate. Taste and adjust salt and pepper, if needed.
  • Ladle sauce over egg noodles and garnish with parsley.
