OATMEAL COOKIES

Oatmeal Cookies image

Big, soft, classic oatmeal cookies that taste like they came fresh from a bakery!Be sure to check out the how-to VIDEO below the recipe (and don't judge me too harshly because it was my first ever time in front of the camera!).

Categories     Dessert

Time 1h

Number Of Ingredients 12

1 cup unsalted butter (softened (226g))
1 cup light brown sugar¹ (tightly packed (200g))
½ cup granulated sugar ((100g))
2 large eggs (room temperature preferred)
1 ½ teaspoon vanilla extract
1 ¾ cup all-purpose flour ((215g))
2 teaspoons cornstarch ((cornflour in UK))
1 teaspoon baking soda
¾ teaspoon salt
¾ teaspoon ground cinnamon
3 cups old-fashioned rolled oats ((285g))
1 ½ cups chocolate chips, chopped nuts, or raisins (optional!)

Steps:

  • Beat butter in the bowl of a stand mixer (or using an electric beater) for about 30 seconds. Add sugars and beat until light and fluffy (pause to scrape down sides and bottom of bowl, if needed).
  • Add eggs, one at a time, beating until combined.
  • Stir in vanilla extract.
  • In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
  • Gradually add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl so ingredients are well-mixed.
  • Gradually stir in oats until completely combined. If using raisins or chocolate chips, stir them in at this point.
  • Chill dough in refrigerator for 30 minutes.
  • Preheat oven to 375F (190C) and prepare cookie sheets by lining with parchment paper.
  • Drop cookie by rounded 2-3 Tablespoon-sized ball onto parchment paper, spacing at least 2" apart.
  • Bake on 375F (190C) for 10-12 (edges should be slightly browned, centers may still be slightly underbaked but shouldn't be raw, they'll bake completely as they cool).
  • Allow cookies to cool completely on cookie sheet before serving and enjoying.

BIG OLD FASHIONED OATMEAL COOKIES

Big Old Fashioned Oatmeal Cookies image

Came across this recipe on www.crisco.com. I reduced sugar to 1 cup, substituted sunflower seeds for chopped pecans, and added raisins. I make these bi-weekly and that's just enough time in between. Really good tasting, I store in freezer bags for the lunch-box, and so I don't eat all of them! Enjoy! :)

OLD-FASHIONED OATMEAL COOKIES (KING ARTHUR FLOUR)

Old-Fashioned Oatmeal Cookies (King Arthur Flour) image

This big, dark brown, lusty rounds bear little resemblance to the light tan, chunky-looking cookies anyone would immediately identify as oatmeal. Grinding the oats makes these cookies smoother in appearance; grinding the raisins also evens out their texture and adds wonderful moistness and flavor. And molasses lends that old-fashioned taste.

Time 18m

Yield 16 cookies, 16 serving(s)

Number Of Ingredients 11

1/2 cup unsalted butter
1/4 cup vegetable shortening
1 1/4 cups brown sugar
1/4 cup molasses
1 large egg
2 teaspoons vanilla extract
3 cups rolled oats
1 cup unbleached all-purpose flour
1 1/2 cups raisins
1 1/4 teaspoons salt
1/2 teaspoon baking powder

Steps:

  • Preheat the oven to 325. Line cookie sheets with parchment.
  • In a large bowl, cream together the butter, shortening, brown sugar, molasses, egg and vanilla. Beat until light-colored and smooth.
  • In a food processor or blender, process the oats, flour, raisins, salt and baking powder for about 30 seconds, or until both the oats and raisins are chopped, yet still in recognizable pieces.
  • Beat the oat mixture into the butter mixture until smooth.
  • Using a 1/4 cup measure or large cookie scoop, drop the dough on the cookie sheets, leaving 3 inches between cookies.
  • Moisten your fingers and gently flatten each cookie to a 2 1/2 inch round or 1/2 inch thick.
  • Bake the cookies for 18 minutes or until they're a medium golden brown.
  • Remove them from the oven and let rest on the cookie sheet for 1 minute, then transfer to a rack to cool completely.
  • The cookies will be soft and delicate when they come out of the oven, but will get firmer as they cool.

GRANDMA'S OLD FASHIONED OATMEAL COOKIES

Grandma's Old Fashioned Oatmeal Cookies image

I have the pleasure of reading and translating my gran's recipes - written in German some of them are difficult to translate - and then to take them from the era of lard and bacon grease to a healthier you - well here's one that came out great !! enjoy...

Provided by Ravenseyes

Categories     Dessert

Time 23m

Yield 24 serving(s)

Number Of Ingredients 9

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.
