GIANT COOKIE CAKE
Studded with white and milk chocolate chips, Lisa Lipman's moreish cake is delicious served either warm with a dollop of ice cream or cold, with its chewy cookie texture

Steps:
- Heat oven to 200C/180C fan/gas 6 and grease a 22cm springform cake tin. Beat the butter and sugar in a large bowl until pale and fluffy, then mix in the egg, extra yolk and vanilla extract.
- Combine the flour, cornflour and baking powder, then fold into the butter mixture until fully incorporated - it will be quite thick. Add the chocolate chips and mix until evenly distributed.
- Spoon the mixture into the prepared tin and bake for 20-25 mins or until light golden brown. Leave to cool for 5 mins. Serve warm with vanilla ice cream.

Steps:
- Heat oven to 350°F. Line 12-inch pizza pan with foil with about 2 inches hanging over edge of pan. Grease foil with shortening for easiest pan removal or spray with cooking spray.
- In medium bowl, stir cookie mix, butter and egg until soft dough forms. Spread dough evenly in pan.
- Bake 15 to 20 minutes or until edges are golden brown. Cool completely in pan on cooling rack, about 30 minutes.
- Remove foil from cookie; place on serving platter. Add food color to frosting as desired. To pipe, use decorating bag or resealable food-storage plastic bag with small corner cut off bag; decorate cookie as desired. Cut into wedges or squares to serve.

- In large bowl, beat butter, granulated sugar, brown sugar, and vanilla until light and fluffy. Add eggs, one at a time, beating well.
- Gradually add flour, salt, and baking soda, beating until well blended. Stir in chocolate chips and nuts.
- Spread in greased 14 inch round pizza pan. Bake at 375 degrees F (190 degrees C) for 20-25 minutes. Cool cookie in pan on a cooling rack. Decorate as desired.

- Heat oven to 180C/160C fan/gas 4. Tip the butter and sugar into a large mixing bowl, beat until combined, then stir in the yolks and vanilla. Tip in the flour, baking powder, chocolate chips, a pinch of sea salt and any other fillings you want to add. Mix until a crumbly dough forms.
- Lightly butter a 25cm ovenproof frying pan. Spoon in and flatten the cookie mixture. For a gooey dessert, bake for 20 mins, leave to rest for 5 mins, then scoop straight from the pan and serve with ice cream, if you like. For a firmer cookie you can cut, bake for 30 mins, then leave to cool completely before cutting into wedges.

- Cream butter and sugars.
- Add egg and vanilla.
- Mix on low speed, add dry ingredients.
- Mix well. Stir in Chocolate Chips or M&Ms.
- Spray a 12 inch round pizza pan with Pam and spread cookie dough evenly to the edges.
- Bake at 325 degrees F for 15 to 20 minutes, or until light golden brown.
- When cool, decorate as desired.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 16-inch round pizza pan with cooking spray.
- Mix hot water and baking soda together in a small bowl; set aside.
- Cream margarine, brown sugar, and white sugar together. Add pudding mix, eggs, and baking soda mixture; mix until well combined. Slowly mix in flour until smooth. Blend in chocolate chips. Spread in the prepared pizza pan.

- Preheat oven to 350 degrees.
- Spray a 15 inch flat pizza pan or 10 inch springform pan with pan spray to prevent sticking.
- Mix flour, soda and salt, set aside.
- Beat butter and shortening in a large bowl with a mixer on medium speed to just combine.
- mix in sugars; beat with electric mixer until mixture is smooth. Mix in egg and vanilla on low speed until blended thoroughly.
- Add flour mixture, mixing just until incorporated.
- Mix in chocolate chips, stir by hand.
- Using fingers, spread dougn into a 10 inch circle on the pizza or springform pan. Smooth edges.
- If using the pizza pan, bake cookie about 14 minutes, until edges are light brown and center is golden.
- If using the springform pan, bake for about 18 minutes, until evenly light brown. Loosen the edge of the cookie from the pan, cool thoroughly. Remove sides of springform pan.
- Optional: Put spoonfuls of peanut butter on top of the cookie as it's cooling; allow it to 'melt' slightly and then spread around. Sprinkle with chocolate chips, allow those to melt and spread around.

- For the Chocolate Chip Cookie Cake: In a medium mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and nutmeg.
- In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl with a hand mixer, beat together the butter, brown sugar, granulated sugar, and the salt on medium speed until smooth, about 3 minutes. Add the whole egg, beating for 1 minute and stopping to scrape down the bowl before adding the egg yolk. Beat for another minute and scrape down the bowl again. Beat in the milk and vanilla.
- Reduce the mixer speed to low, then slowly add the dry ingredients, mixing just until the dough comes together and the flour has disappeared. Add the chocolate chips on low speed, finishing with a few stirs by hand as needed. Lay two large sheets of plastic wrap down on counter so that the long sides overlap slightly and you have one large, wide sheet. Scrape the dough into the center, then spread it into a thick disk. Fold the edges of the plastic up and around the dough to wrap it completely. Refrigerate for at least 1 hour or up to 3 days.
- When ready to bake, preheat the oven to 350 degrees F (if using a clear glass dish, reduce temperature to 325 degrees F). Generously coat a 9-inch springform pan, 9-inch pie dish, or 9-inch cake pan with baking spray. Press the dough into the pan in an even layer. Bake for 20 to 25 minutes, until the top is lightly golden brown and a toothpick inserted in the center comes out clean. Check at the 15-minute mark—if the cookie cake is browning too quickly at the edges, loosely tent it with foil. Remove from the oven and place the pan on a wire rack to cool completely.
