1 3/4 cups all-purpose flour, plus more
all-purpose flour, for the pans
2 cups sugar
3/4 cup good-quality cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee
chocolate frosting
6 ounces good-quality semisweet chocolate (such as Callebaut)
1/2 lb unsalted butter or 1/2 lb unsalted margarine, at room temperature
1 extra-large egg yolk, at room temperature
1 teaspoon pure vanilla extract
1 1/4 cups sifted confectioners' sugar
1 tablespoon instant coffee powder

Steps:

  • CHOCOLATE CAKE:.
  • Preheat oven to 350ºF.
  • Grease with butter or margarine, two 8" round cake pans. Line with parchment paper, then grease with butter or margarine the parchment paper and flour the pans.
  • Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined.
  • In another bowl, combine the buttermilk, oil, eggs and vanilla.
  • With the mixer on low speed, slowly add the wet ingredients to the dry.
  • With the mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.
  • Pour the batter into the prepared pan and bake for 35-40 minutes, until a cake tester comes out clean.
  • Cool in pans for 30 minutes, then turn them out onto a cooling rack and cool completely.
  • Place one layer, flat side up, on a flat plate or cake pedestal.
  • With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake.
  • CHOCOLATE FROSTING:.
  • Chop the chocolate and place in a heat-proof bowl set over a pan of simmering water.
  • Stir until just melted and set aside until cooled at room temperature.
  • In the bowl of an electric mixer fitted with a paddle attachment, beat the butter or margarine on medium-high speed until light yellow and fluffy, about 3 minutes.
  • Add the egg yolk and vanilla and continue beating for 3 minutes.
  • Turn the mixer to low, gradually add the confectioners" sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy.
  • Dissolve the coffee powder in 2 teaspoons of the hottest tap water.
  • On low speed, add the chocolate and coffee to the butter mixture and mix until blended.
  • DO NOT WHIP !
  • Spread immediately on the cooled cake.

1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup shortening
1 1/2 cups buttermilk

2 eggs
2 oz unsweetened baking chocolate, melted, cooled
3 cups powdered sugar
1/3 cup butter or margarine, softened
1 1/2 teaspoons vanilla
1 to 2 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease and flour two 8- or 9-inch round cake pans, or 13x9-inch pan. In large bowl, beat all cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour into pans.
  • Bake rounds 30 to 35 minutes, rectangle 35 to 40 minutes, or until toothpick inserted in center comes out clean. Cool rounds 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
  • In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and enough milk until smooth and spreadable. Fill and frost round layers or frost top of rectangle with frosting.

2 large egg yolks, plus 1 large egg white, room temperature
1/4 cup ( 1/2 stick) unsalted butter, softened
1/2 cup packed light-brown sugar
1/2 teaspoon pure almond extract
1/2 teaspoon pure vanilla extract
Old-Fashioned Chocolate Frosting

Steps:

  • Preheat oven to 350. Coat an 8-inch round cake pan with cooking spray. Cut an 8-inch round of parchment paper, and place in bottom of pan. Coat parchment with cooking spray. Dust with flour, tapping out excess; set aside.
  • Sift flour, baking soda, and salt into a medium bowl; set aside.
  • Put chocolate, 1/4 cup milk, the granulated sugar, and 1 egg yolk into a heatproof bowl set over a pan of simmering water. Stir until thickened; set aside.
  • Put butter and brown sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Mix in remaining yolk. Reduce speed to medium-low. Mix in flour mixture in 3 batches, alternating with 1/4 cup water, remaining 1/4 cup milk, and extracts. Mix in chocolate mixture.
  • Beat egg white to soft peaks; fold into batter with a rubber spatula. Pour batter into prepared pan. Bake until a cake tester inserted into center comes out clean, 25 to 30 minutes. Let cool on a wire rack 20 minutes. Run a knife around edges of cake to loosen; turn out onto rack. Remove parchment; let cool completely.
  • Using a long, serrated knife, halve cake horizontally. Place bottom half, cut side up, on a cake stand; spread with 1 cup frosting. Top with remaining half; spread frosting over entire cake.
