If you've ever spent lots of time and effort only to turn out lumpy, tough spuds, this mashed potatoes recipe is for you. These potatoes turn out thick, creamy and ever-so smooth. The secret isn't to use expensive ingredients or tricky methods, although you do want fresh potatoes for best results. Betty's best mashed potatoes are the result of simple ingredients and easy directions. We'll give you the whys behind each step, plus signs that'll tell you you're doing things right in the "Expert Tips" section. If you can boil water, you can make these mashed potatoes.

2 lb medium russet potatoes, peeled
1/3 to 1/2 cup milk
1/4 cup butter or margarine, softened
1/2 teaspoon salt
Dash of pepper

Steps:

  • Place potatoes in 2-quart saucepan; and enough water just to cover potatoes. Heat to boiling; reduce heat. Cover and simmer 20 to 30 minutes or until potatoes are tender; drain. Shake pan with potatoes over low heat to dry (this will help mashed potatoes be fluffier).
  • Mash potatoes in pan until no lumps remain. Add milk in small amounts, mashing after each addition (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used).
  • Add butter, salt and pepper. Mash vigorously until potatoes are light and fluffy. If desired, sprinkle with small pieces of butter or sprinkle with paprika, chopped fresh parsley or chives.

This easy casserole recipe of cheesy hash brown potatoes, loaded with sausage, is a crowd-pleasing side dish.

1 lb bulk pork sausage
1 container (8 oz) refrigerated prechopped onions
1 container (8 oz) refrigerated prechopped tricolor bell peppers
1 bag (30 oz) frozen country-style shredded hash brown potatoes
2 cups shredded sharp Cheddar cheese (8 oz)
1 cup sour cream
1 can (10 3/4 oz) condensed Cheddar cheese soup

Steps:

  • Heat oven to 375°F. Spray 3-quart casserole with cooking spray.
  • In 10-inch skillet, cook sausage over medium-high heat 3 minutes, stirring to crumble. Add onions and peppers. Cook 5 minutes longer or until sausage is no longer pink and vegetables are tender. Place mixture in large bowl. Add hash browns, 11/2 cups of the cheese, the sour cream and soup; stir to coat. Spoon mixture into casserole. Top with remaining 1/2 cup cheese.
  • Bake uncovered 50 minutes or until potatoes are tender and top is golden brown.

6 medium potatoes, peeled, cubed, boiled
1 small onion, minced
4 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup shredded cheddar cheese
2 teaspoons salt
1/4 teaspoon garlic salt
3 tablespoons butter or 1/4 teaspoon margarine, cut in small pieces
1/4 teaspoon parsley flakes
1/4 teaspoon paprika

Steps:

  • Beat together all ingredients, except butter, parsley and paprika and spoon into a greased 9x9x2" casserole dish, dot top with butter; sprinkle parsley and paprika over top.
  • Refrigerate for at least 1 hour or overnight. Bake in a 400' oven for 35 minutes or until warm throughout.

This is the first time I have ever attempted to make potato soup, but it came out so well I went back for seconds! This definitely defines comfort food for me! It is a little labor intensive, and something that I reserve specifically for the weekend, but I guarantee it is worth the time!

Number Of Ingredients 12

1 tablespoon extra virgin olive oil
1 tablespoon butter (salted or unsalted work)
1/2 cup onion, diced
1 lb bacon, cut into small chunks
3 lbs red potatoes, cut into bite sized pieces (I prefer it with the skins on)
4 cups chicken broth
4 cups water
2 cups half-and-half (or milk to lighten it up a bit)
3 tablespoons flour
salt and pepper
cheese (optional)
sour cream (optional)

Steps:

  • In the soup pot you are going to use, add the extra virgin olive oil, butter and diced onion and sauté on medium low heat for 15 minutes (until onion is translucent and start to caramelize). After onion is caramelized, take out of pot and set aside.
  • In the same soup pot, add cut up bacon and cook until crisp on medium-high heat. Take out of pot and set aside.
  • In the same soup pot (yes, again), add chicken broth, water and potatoes. Boil potatoes until almost soft - about 15 minutes.
  • Take some of the broth/water in a bowl and add flour to make a roux.
  • Add half and half, onion and half of bacon, heat soup to boiling, stirring occasionally.
  • Slowly add roux to desired thickness and cook until potatoes are tender.
  • Top with left over bacon, cheese and sour cream, if desired.
  • Enjoy!

This is a recipe given to Betty Feezor by her mother-in-law. Betty had a homemaking TV show a few decades ago. These sweet potatoes take a little preparation but they are worth the time. Resist the temptation to add cinnamon until you taste these with just nutmeg.

1/4 cup butter
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon nutmeg

2 boxes (4.6 oz each) Betty Crocker™ julienne potatoes or 2 boxes (4.7 oz each) Betty Crocker™ au gratin potatoes
3 cups boiling water
1 1/2 cups sour cream
1 cup milk
1/4 cup margarine or butter, cut up
1/2 cup chopped red bell pepper
1/2 cup sliced green onions
1/2 cup shredded Cheddar cheese

Steps:

  • Heat oven to 350°F if using julienne potatoes or 400° if using au gratin potatoes. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, mix Potatoes, Sauce Mix (from both potato mixes) and boiling water. Stir in sour cream, milk, margarine, bell pepper and 1/4 cup of the onions. Pour into baking dish.
  • Bake uncovered 35 minutes. Sprinkle with remaining onions and the cheese. Bake 5 to 10 minutes longer or until bubbly around edges and potatoes are tender. Let stand 5 minutes before serving.

1 (2lb) pkg southern style (diced, not shredded) hash brown potatoes
2c sour cream
2c shredded cheddar cheese
2/3c chopped onions (I use 3/4c)
2 1/2 tbs butter
1 can cream of ___ soup
1/4c chicken stock
1/2tsp pepper (optional)
Topping:
2c crushed corn flakes
2 1/2 tbs butter, melted

Steps:

  • In a small frying pan, sautee onion in butter until tender. Scrape into large bowl, add potatoes, sour cream, soup, chicken stock, cheddar and pepper. Mix and scrape into a 9x12 pyrex baking dish. Bake 30 min. Mix cornflakes and butter and spread on top of potatoes. Bake another 30 min or until potatoes are very tender.

1 (30 ounce) bag frozen hash browns (cubed or shredded)
16 ounces sour cream
1 (8 ounce) can cream of chicken soup
1/2 cup milk
3/4 cup butter or 3/4 cup margarine
2 -3 cups shredded cheese (jack and mild cheddar mix is best)
2 cups corn flakes
1/2 cup chopped brown onion
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350°F
  • Melt butter or margarine and set aside.
  • In a large mixing bowl combine frozen hash browns, onion, soup, milk, sour cream, cheese, salt and pepper. Pour in 1/2 cup of the melted butter to potato mix, set reserve aside.
  • Mix well and transfer to a casserole dish.
  • In a separate mixing bowl pour in cornflakes, drizzle remaining butter over cornflakes and continue to mix well until most pieces are lightly coated (cereal will be shiny but not soggy).
  • Cover all potatoes with cereal. Cover and bake for about 45 minutes.
  • Uncover and continue baking for about 30 minutes. Serve & enjoy!
  • (If you are making this ahead of time, cover cooked potatoes and keep warm, uncover and put back in the oven at 400 degrees for about 10 minutes before serving, this will make the topping crispy).

8 slices apple-smoked bacon
