This is the best banana bread I have ever eaten. Hands Down. Recipe originally from my grandmother who is over 70 years old.

1 cup sugar
2 eggs
2 large bananas
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chopped nuts

Steps:

  • Mix together butter, sugar, eggs, and bananas.
  • Add the rest of the ingredients and blend.
  • Spray a 9x5 inch pan with oil spray.
  • Add mix to pan and bake at 350 degrees for 50 minutes or until toothpick comes out clean.
  • After removing from oven, allow to cool for 5 minutes then let finish cooling on a cooling rack.

1/2 cup butter, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal™ All-Purpose Flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

Steps:

  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
  • Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
  • Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

1/2 Cup Vegetable Oil (- 115 milliliters - Use a neutral tasting vegetable oil such as corn or canola)
2 Eggs ((large))
3 Bananas ((ripe & large sized) - 345 grams - Roughly 1 1/2 cups of mashed bananas)
2 Cups Flour ((all purpose flour) - 240 grams)
1 Cup White Granulated Sugar (- 200 grams)
1 Teaspoon Vanilla Extract (- 5 milliliters)
1 Teaspoon Baking Soda (- 5 milliliters)
1 Teaspoon Baking Powder ((aluminum free) - 5 milliliters)
1/2 Teaspoon Salt (- 2.5 milliliters)

Steps:

  • Preheat oven to 325 degrees F.
  • Mash bananas with a fork.
  • Lightly beat eggs.
  • Stir eggs, bananas and vegetable oil together.
  • Mix in remaining ingredients. Stir until the batter is fully mixed.
  • Optional - If you want to enhance this "basic" no butter banana bread, you can stir in a cup of your family's favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
  • Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 65-70 minutes or until golden brown.
  • Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

  • In small microwavable bowl, microwave peanut butter and butter uncovered on High 30 to 45 seconds or until butter is melted. Stir until mixture is smooth.
  • In large bowl, beat sugar and eggs with electric mixer on medium speed 1 minute or until blended. On low speed, add peanut butter mixture; beat well. A long time family favorite, everybody will ask for the recipe! The banana bread has minimal ingredients but is light, moist and delicious! It freezes well! I have adjusted the recipe to 3/4 cup sugar based on the feedback reviews, a test bake and a permanent adjustment to my recipe! I toss overripe banana's in the freezer until I have enough. I always double the recipe and sometimes add walnuts or chocolate chips (approx 1/2 cup, unmeasured, I just dump). Baking time may take between 1 hr - 1hr 15 minutes. Less if you want to make muffins or mini-loafs. Test with a toothpick should be clean if cooked through.
