SPICY CORN FRITTERS
Variety is the spice of life, so shake up those traditional corn fritters with corn and green chiles-and get the party going with a new twist on an old favorite!

Steps:
- In deep fat fryer or heavy saucepan, heat 2 to 3 inches of oil to 375°F.
- In medium bowl, stir Bisquick mix, cold water and egg until blended. Stir in corn and chiles.
- Drop about 5 to 6 small spoonfuls of batter into hot oil; fry 2 to 3 minutes, turning as necessary, until well browned. With slotted spoon, remove fritters from oil; drain on paper towels. Repeat with remaining fritters. Serve warm with salsa.

OYSTER FRITTERS
Whether it's for Game Day or a patio party, these fried oysters with a spicy aioli will hit the spot.

- In small bowl, stir together aioli ingredients. Cover; refrigerate until serving time.
- In large bowl, beat 3/4 cup of the flour, the cornmeal, 2 teaspoons lemon peel, 1/2 teaspoon of the salt and the red pepper. In small bowl, beat beer and egg with whisk. Stir beer mixture into flour mixture with whisk until blended. Cover; let stand at room temperature 1 hour.
- In deep fat fryer or heavy saucepan, heat 2 inches oil to 350°F. Line 15x10x1-inch pan with paper towels; place wire cooling rack on paper towels.
- In shallow dish, mix remaining 1 cup flour, remaining 1/2 teaspoon salt and the black pepper. Dip oysters in flour mixture, then dip in beer batter, allowing excess batter to drip off.
- Gently lower oysters into hot oil. Fry oysters in hot oil, in 6 batches, 2 minutes or until golden brown. Drain on rack in pan. Serve fritters hot with aioli.

YUMMY FRITTER BATTER
Found this recipe online and I'm posting so I don't lose it before I get a chance to try it out. There are variations for ham, banana, and apple fritters here. Serving size is an estimate as none was given with the original recipe.

- For basic fritter batter: Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well. Let stand 30 minutes.
- Ham Fritters: Add minced ham to basic batter. Drop by spoonfuls into hot oil and deep fry.
- Banana Fritters: Peel and quarter bananas. Dip bananas in batter and saute in margarine until golden brown on all sides.
- Apple Fritters: Stir apples into basic batter. Drop by spoonfuls into hot oil and deep fry.
- *Note* You can make peach or apricot fritters by using canned fruit. Use the fruit syrup for the liquid in the basic batter. Dice fruit and mix with batter. Deep fry as for the apple fritters.

FRITTER BATTER

- Combine yolks with oil and beer. Gradually stir this into flour (it should be thick enough to stick to the food) and beat until very smooth with a few swift strokes. Rest batter, covered, in refrigerator for 3 hours at least so it ferments a bit. Get oil to right temperature. Beat egg whites until stiff and fold into batter. Dip the onions or mushrooms in the batter and fry.

- Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
- In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.

CORN FRITTERS WITH PINEAPPLE-JALAPEñO SAUCE

- In 3-quart saucepan, heat 1 tablespoon oil over medium-low heat until hot. Add finely chopped onion and cook about 5 minutes, stirring occasionally, until softened. Add gingerroot, finely chopped garlic, chile, cumin and cinnamon. Heat about 1 minute or until fragrant.
- Increase heat to medium. Add rum and pineapple juice mixture. Cook 3 to 5 minutes, stirring constantly, until there is no excess liquid in pan. Add pineapple chunks, brown sugar, lime juice and 1/4 teaspoon salt. Heat mixture to a simmer and cook 15 minutes, stirring occasionally, until pineapple is soft.
- Remove mixture from heat and puree in food processor or blender. Stir in 3 tablespoons cilantro. Place in serving bowl and refrigerate. Bring to room temperature to serve.
- In food processor, pulse corn, bell pepper, 1/4 onion and the smashed garlic about 10 seconds; remove cover and scrape sides of bowl with rubber spatula. Make sure bell pepper and onion are getting chopped. Replace cover and pulse 10 seconds longer or until bell pepper and onion pieces are about 1/4 inch in size. Add milk, 3 tablespoons cilantro, the butter and eggs. Pulse until mixture is blended; set aside.
- In medium bowl, mix flour, cornmeal, granulated sugar, baking powder and 3/4 teaspoon salt with wire whisk. Make a well in center of dry ingredients and dump corn mixture on top. Use rubber spatula to mix wet and dry ingredients just until no dry flour mixture is visible. (Overmixing will toughen the fritters.) Set batter aside.
- In 4-quart Dutch oven or deep fryer, heat 2 inches oil to 350°F. Drop tablespoonfuls of batter into hot oil (use 2 spoons, one to scoop up batter and another to push batter into hot oil). Fry 4 or 5 fritters at a time-more than that and you will crowd the fryer. Fry 3 minutes or until golden brown. Flip fritters (if you are adept at using them, long chopsticks work well for this) and fry other side about 2 minutes or until golden. Drain on wire rack (paper towels are not good for draining fried food because they don't wick away enough oil). Serve immediately with sauce.
