HOMEMADE NANDO'S SPICY RICE
Want to make Nando's Spicy Rice at home? Then this Homemade Nando's Spicy Rice recipe is for you! And the best news? It only takes 20 minutes and one pan! (Serves 4-6, depending on appetite)

Steps:
- Place the diced onion and red pepper in a reasonably large saucepan. Cover with a lid and cook over a gentle heat for 3 minutes until softened but not browned.
- Remove the lid and add the chilli flakes, turmeric and smoked paprika. Cook for 2 more minutes. Add a splash of water if it starts to get a little dry.
- Add the rice, chicken stock, salt and pepper. Turn the heat up and bring to the boil. Then cover with a lid and turn the heat down. Cook for 7 minutes, or until the rice is nearly cooked. (See note 1.)
- After 7 minutes add the peas and stir. Re-cover with the lid and cook for 3 more minutes or until the rice is done to your liking and the peas are hot.
- Serve with all your homemade Nandos favourites!

Steps:
- Fry pepper and onion in heated oil for 2 minutes; stirring constantly
- Add dried spices to the pan and cook for further 1 minute (Add more oil if the mixture is dry)
- Add rice, water and chicken stock to the hot pan
- Bring mixture to boil, then immediately turn the heat to lowest possible and add the frozen peas (move to a smaller hob if needed)
- Cover with lid and cook for around 30 minutes (until cooked). Mix the rice regularly and re-cover with the lid to ensure the rice doesn't stick.
- Once completely cooked, stir and serve

NANDO'S MEDITERRANEAN RICE COPYCAT
We're quite fond of Nando's here in Malaysia. The oddest thing is that our 2yo LOVES the Nando's rice, instead of the Nando's chicken. So I decided to look up a copycat and found what looks like a really easy way of cooking it using a rice cooker. Haven't tried it yet to see if it tastes exactly like Nando's.

Steps:
- Prepare 5 cups of coarse rice and water in the rice cooker as its measure.
- Add mixed vegetables, butter and salt (less or more as preferred) into rice cooker.
- Activate rice cooker as per rice cooker's manual.
- Mix well the rice & ingredients when it's cooked, add more salt if needed.
- Scoop out the cooked rice on plate and garnish however you like it.
