Time 2h30m

Yield 20

Number Of Ingredients 6

2 (.25 ounce) packages active dry yeast
3 tablespoons white sugar
2 ½ cups warm water (110 degrees F/45 degrees C)
3 tablespoons lard, softened
1 tablespoon salt
6 ½ cups bread flour

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

CLASSIC WHITE LOAF

Classic white loaf image

Once you've mastered this basic loaf, the bread-making world's your oyster

Provided by Barney Desmazery

Time 2h

Yield 16 slices

Number Of Ingredients 5

500g strong white flour, plus extra for dusting
7g sachet fast-action dried yeast
1 tsp salt
up to 350ml lukewarm water
a little sunflower oil, for greasing

Steps:

  • Make the dough by tipping the flour, yeast and salt into a large bowl and making a well in the middle. Pour in most of the water and use your fingers or a wooden spoon to mix the flour and water together until combined to a slightly wet, pillowy, workable dough - add a splash more water if necessary. Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook. Place the dough in a clean oiled bowl, cover with cling film and leave to rise until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7. Knock back the dough by tipping it back onto a floured surface and pushing the air out. Mould the dough into a rugby ball shape that will fit a 900g loaf tin and place in the tin. Cover with a clean tea towel and leave to prove for 30 mins. Dust the top of the loaf with a little more flour and slash the top with a sharp knife if you want. Bake the bread for 15 mins, then reduce the heat to 190C/fan 170C/gas 5 and continue to bake for 30 mins until the loaf sounds hollow when removed from the tin and tapped on the base. Leave the bread on a wire rack to cool completely. The loaf will stay fresh in an airtight container for 3 days or can be frozen for 1 month.

EXCELLENT WHITE BREAD

Excellent White Bread image

This straightforward loaf is the white bread of your dreams, and its fluffy slices make for evenly browned toast. The 1/3-cup of sugar makes this mildly sweet and perfect for peanut butter and jelly sandwiches, but you can cut it down to 2 tablespoons if you'd rather have something more neutral in flavor. You do need some sugar, however, to feed the yeast and ensure a lofty rise. This recipe makes two loaves, one for now, and one for the freezer or to share with a lucky friend.

Categories     dinner, lunch, breads

Time 4h15m

Yield 2 loaves

Number Of Ingredients 7

2 1/4 teaspoons/7 grams active dry yeast (1 package)
1 1/2 cups/355 milliliters lukewarm milk
1/3 cup/67 grams granulated sugar
1 tablespoon/15 grams kosher salt
3 tablespoons/43 grams butter, melted, more for greasing bowl and pans and for brushing the tops of the loaves
2 eggs
5 to 6 cups/625 grams to 750 grams all-purpose flour

Steps:

  • In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
  • Grease a large bowl with butter and turn dough out into the bowl. Flip over dough so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 1 1/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
  • When dough has doubled in size, turn it out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
  • Press down dough with your hand to expel the air. Divide dough in half and place each half into a loaf pan. Brush tops of loaves with remaining melted butter.
  • Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
  • Heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. Remove loaves from pans and let cool on wire racks.

HOMEMADE BREAD (HOMEMADE WHITE BREAD)

Homemade Bread (Homemade White Bread) image

How to make the best Homemade White Bread that's soft and delicious, with a touch of sweetness. An easy to follow recipe for perfect homemade bread, with step by step instructions. This recipe can be doubled, and made in 2 loaf pans. EASY - A great basic bread dough recipe for beginners. US based cup, teaspoon, tablespoon measurements. Common Measurement Conversions

Provided by Dini @ The Flavor Bender

Categories     Bread     Breakfast     Brunch     Lunch

Time 1h30m

Number Of Ingredients 10

2 ¼ tsp active dry yeast (7 g)
1 cup lukewarm water
1 tbsp honey ((or sugar or maple syrup))
Proofed yeast mixture ((ingredients listed above))
19.5 ounces AP flour (4 ⅓ cups, spoon and leveled (please see notes))
⅓ cup lukewarm water
1 ¼ tsp sea salt
2 tbsp honey ((or sugar or maple syrup))
¼ tsp citric acid (or ½ tbsp white vinegar (optional))
2 tbsp unsalted butter (melted (or vegetable oil))

Steps:

  • Place the water in the mixer bowl of your stand mixer.
  • Stir in the honey to dissolve, and sprinkle the yeast over the water. Gently stir to mix.
  • Allow the yeast to sit in a warm place for about 15 minutes, until it's activated and becomes frothy. This could take longer if your yeast was in the freezer. If the yeast doesn't activate (no frothy bubbles), then your yeast is likely too old and you will need it replaced with fresh yeast.
  • Once the yeast is activated, you're ready to make the bread dough.
  • To the proofed yeast mixture, add the flour, warm water, salt, honey, citric acid and melted butter.
  • Using a dough whisk or a spatula, mix the ingredients to form a rough dough.
  • Place the bowl in the mixer with a kneading hook attached, and knead the dough on low speed for about 2-5 minutes, until the dough comes together to form a ball.
  • Increase the speed by 1 level (speed 3 in a kitchen aid mixer) and knead the dough for a further 12-15 minutes until it's smooth and elastic.
  • While the dough is kneading, check on it every few minutes to make sure it's kneading well, and is not too dry or too wet.
  • If the dough is sticking to the sides of the bowl, then it's too wet, so add a little extra flour (a dusting at a time), to get the right texture. To check if it's at the right consistency - lift the kneading hook from the bowl, and check if the dough only sticks to the bottom of the bowl. If yes, then the moisture is perfect. If the dough isn't sticking to the bottom of the bowl however, you may need to add a little extra water (just ½ tsp at a time), to get the right consistency. The dough should be smooth, a little soft and a little tacky to the touch.
  • Once the dough is kneaded, remove the dough hook and fold the dough over a few times by hand, to get a smooth ball. Then place it in a lightly oiled bowl, and cover with plastic wrap. Let the dough proof for about 1 hour until it has doubled in size.
  • While the dough is proofing, prepare the bread loaf pan. Butter 1 - 9 x 5 inch loaf pan and set aside, until the dough is ready.
  • Turn the proofed dough out onto a lightly floured work surface. Gently press the dough into an evenly thick rectangle. The short side of this rectangle should be roughly about 8 - 8.5 inches (i.e. slightly shorter than the length of your bread loaf pan).
  • Next, tightly roll up the short side, along the length of the dough rectangle. Make sure to pinch/press the edge of the dough as you go, while rolling it up (read the post and see pictures for more details).
  • Once the dough is rolled up, pinch the seams to seal it, and tuck in the two sides and pinch these seams as well. Make sure all the seams are on one side (this will be the bottom) and the other side is smooth and seam-free (this will be the top).
  • Transfer this into the prepared loaf pan, seam side down, and press the dough into the pan. Make sure it's evenly pressed into the bottom of the pan. Loosely cover the loaf pan with plastic wrap and let it proof again in a warm place, for about 45 minutes - 1 hour.
  • The top of the dough should rise about 1 inch above the rim of your bread loaf pan (when looking from the side), and when you leave an indentation in the dough with your finger, the indentation should remain, and not bounce back (read the post and see pictures for more details).
  • Preheat oven to 375°F, during the last 30 minutes of the second proofing time. It's best for the oven to be preheated to the right temperature for at least 20 minutes, before baking the bread.
  • When the bread loaf is ready and the oven has preheated, place the loaf pan in the middle of the oven, and bake for 45 minutes. It's done when it sounds hollow when the bread is tapped on top, OR when the internal temperature has reached 195°F.
  • Remove the pan from the oven, and keep it in a warm place (away from drafts) to cool. After about 10 minutes, remove the bread from the pan and keep it on a wire rack to cool down completely. The bread is now ready to be served.
  • Optional - brush melted butter on the top while it's hot to add more buttery flavor.
  • Keep the loaf in a bread box at room temperature for upto 4 - 5 days, or slice and keep in the freezer for up to 1 month.

Categories     Yeast Breads

Time 2h10m

Yield 1 loaf, 6-8 serving(s)

Number Of Ingredients 9

1 1/3 cups warm water (90-100 degrees)
2 1/2 teaspoons active dry yeast (1/4 ounce packet)
4 teaspoons sugar (1 tbsp plus 1 tsp)
1/4 cup oil (I use canola)
4 1/4 cups bread flour (Divided)
1 teaspoon wheat malt (Diastatic Malt Powder)
1/4 cup powdered milk
2 1/4 teaspoons salt
1/2 tablespoon butter, chilled

Steps:

  • Fit stand mixer with dough hook.
  • Pour warm water into the bowl of your stand mixer.
  • Sprinkle yeast and sugar over warm water.
  • Let sit 5-10 until mixture foams.
  • Add canola oil, 4 cups of flour (reserve 1/4 cup of flour to use if needed), diastatic malt powder, powdered milk, and salt.
  • Mix on low to thoroughly blend all ingredients. After flour is mostly incorporated, bring speed up to a low-med (2 on a KA P600, or 4 on a KA Artisan).
  • I like a little stickier dough, so often the 4 cups of bread flour is enough for me. If you need to add more flour, add the remaining 1/4 cup a tbsp at a time.
  • Knead with the dough hook on low-med (2 on a KA P600, or 4 on a KA Artisan) for 8 minutes.
  • Remove dough to a large bowl that has been oiled to prevent sticking. Flip over to oil other side as well.
  • Cover with plastic wrap and set in your oven with only the pilot light or oven light bulb on for a draft free rising with a little warmth.
  • Let rise for 1-1 1/2 hours. Dough should double or a little more.
  • I also place my empty bread pan in the oven during rising to warm a bit.
  • Remove dough from the bowl and pat gently into a narrow rectangle on a clean countertop. You want the width to be about the same as the length of your bread pan.
  • Starting at one of the short ends, roll the dough into a log. Tuck under the ends, and place into a lightly greased bread pan (I use a spritz of cooking spray).
  • Spray or lightly oil a piece of plastic wrap and drape loosely over loaf.
  • Place back in oven to rise another 20-30 minutes.
  • Remove pan from oven and set aside in a draft free place while you preheat your oven to 375 degrees.
  • Carefully remove plastic wrap and bake loaf for 25-30 minutes until a light golden brown.
  • Set pan on a cooling rack for about 2 minutes and then take the chilled butter and gently glide it all over the top of the loaf. You may not use the whole chip of butter. Just use enough to lightly coat the top and sides that rose above the pan.
  • Let cool in pan about another 3-5 minutes and then gently tip the loaf out onto the cooling rack to finish cooling. Cool at least 45 minutes before cutting for best results.

WHITE BREAD

White Bread image

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Yield Makes two 1 3/4 pound loaves

Number Of Ingredients 7

2 1/2 cups warm water (110 degrees)
1 tablespoon active-dry yeast
1 tablespoon sugar
1 tablespoon coarse salt
7 cups bread flour, plus more as necessary
4 tablespoons (2 ounces) unsalted butter, room temperature, plus more for bowls, pans, and brushing
Nonstick cooking spray

Steps:

  • Place 1/2 cup warm water in a small bowl or liquid measuring cups yeast and sugar over water and whisk to combine. Let stand until creamy, about 5 minutes.
  • Place salt, remaining two cups warm water, and about 3 1/2 cups flour in the bowl of an electric mixer. Attach dough hook to mixer; turn mixer on and off a few times just to incorporate flour. Add 1 cup flour. With mixer on low, slowly add yeast mixture and remaining 2 1/2 cups flour. Increase speed to medium and mix until dough comes together, scraping down sides of bowl as necessary. If dough does not come together, add more flour, 1 tablespoon at a time.
  • Continue kneading on medium speed for about 5 minutes Add butter and continue mixing dough, 4 to 5 minutes. Dough may come apart before coming back together.
  • Turn dough out onto a lightly floured work surface and shape into a ball. Butter a large bowl and transfer dough to prepared bowl, turning dough to coat. Cover tightly with plastic wrap sprayed with nonstick cooking spray and let stand at room temperature until doubled in size, 45 minutes to 1 hour.
  • Butter two 4 1/2-by-8 1/2-inch loaf pans; set aside.
  • Place dough, top-side down, on work surface to deflate; divide dough in half. Working with 1 piece of dough at a time, use the palms of your hands and fingertips or a rolling pin to pat dough into a 7-inch square.
  • Place dough on work surface so one of the short sides is facing you. Starting with the bottom edge, roll dough and pinch to seal seam. Place roll in pan, seam side down. Repeat process with remaining piece of dough.
  • Spray two pieces of plastic wrap with nonstick cooking spray. Cover loaf pans with plastic wrap, sprayed side down. Let stand in a warm place until doubled in size, growing over tops of pans, and when pressed gently with your finger an impression remains, 1 hour to 1 hour and 15 minutes.
  • Preheat oven to 425 degrees on a conventional oven or 400 degrees on a convection oven with a rack set in the center of oven.
  • Transfer pans to oven and bake for 15 minutes. Reduce oven temperature to 375 degrees (conventional) or 350 (convection) and continue baking until honey brown and an instant-read thermometer inserted into the center of each loaf reaches 205 degrees, about 45 minutes more.
  • Transfer to wire racks. Let cool slightly; turn out loaves. Brush tops with butter and let cool. Do not cut until almost cool.

Poppy or sesame seeds, for the top of the loaf, optional

Steps:

  • In a measuring cup, mix the sugar with a 1/2 cup of the warm water and yeast and let stand in a warm place for 5 minutes, or until frothy. If using fast-acting yeast, there is no need to let the mixture stand.
  • In a large bowl, sift together the flour and salt. Rub in the butter, and make a well in the center. If using olive oil instead of butter, pour the olive oil into the remaining 1 1/2 cups water. Pour in the yeast mixture and most of the remaining water (and the olive oil, if using). Mix to a loose dough, adding the remaining water if needed, plus extra if necessary.
  • Knead the mixture until the dough is smooth and springy to the touch, about 10 minutes. If kneading in an electric food mixer with a dough hook, 5 minutes is usually long enough.
  • Put the dough in a large oiled bowl. Cover the top tightly with plastic wrap, and place somewhere warm to rise, until it is doubled in size. This may take up to 2 or even (on a cold day) 3 hours.
  • Preheat the oven to 425 degrees F.
  • When the dough has more than doubled in size, punch down, and knead again for 2 to 3 minutes. Leave to relax for 10 minutes before you begin to shape the bread.
  • Shape the bread into loaves or rolls, and then transfer to a baking tray, and cover with a clean tea or dish towel. Allow to rise again in a warm place for 20 to 30 minutes, until the shaped dough has again doubled in size. When the dough has fully risen, it should leave a dent when you gently press the dough with your finger.
  • The bread is full of air at this point, and therefore very fragile, gently brush the loaf with egg wash and sprinkle with poppy or sesame seeds, if using, or dust lightly with flour for a rustic-looking loaf.
  • Bake in the oven for 30 to 45 minutes for a loaf, depending on its size, or 10 to 15 minutes for rolls, Turn the heat down to 400 degrees F, after 15 minutes for the remaining baking time. When baked, the bread should sound hollow when tapped on the base. Transfer the loaf to a wire rack to cool.

  • In the bowl of a mixer, stir to dissolve the yeast in ¾ cup of the warm water, and let sit for 5 minutes. Add the remaining 2⅔ cups water, sugar, salt, room temperature butter, and 5 cups of the flour and stir to combine.
  • Using a dough hook, mix on low speed and gradually add the remaining flour until the dough is soft and tacky, but not sticky (you may not need to use all of the flour). Continue to knead until a soft ball of dough forms and clears the sides of the bowl, about 7 to 10 minutes.
  • Place the dough in a lightly greased bowl and turn it over so it is completely coated. Cover with plastic wrap and set in a draft-free place to rise until doubled in size, about 45 minutes to 1 hour.
  • Turn the dough out onto a clean, lightly floured surface. Gently press it all over to remove any air pockets. Divide the dough in two and, working with one piece at a time, gently pat it into a 9x12-inch rectangle. Roll up the rectangle, starting on the short end, into a very tight cylinder. Pinch to seal the seams and the ends, tuck the ends of the roll until the bread, and place into greased 9-inch loaf pans. Cover the loaves loosely and place in a draft-free area until doubled in size, 30 to 45 minutes.

  • In a large bowl, mix the all-purpose flour and bread flour. In a small sauce- pan, heat 3/4 cup of the milk until lukewarm. Pour the warm milk into a medium bowl and stir in the yeast. Let stand until the yeast dissolves and the milk becomes creamy and starts to bubble, about 5 minutes. Stir in 1 1/2 cups of the mixed flours. Cover with plastic wrap and let the sponge stand until slightly risen, about 20 minutes.
  • Scrape the sponge into the large bowl of a standing electric mixer fitted with a dough hook. Add the sugar, salt, eggs and the remaining 2 cups of milk and beat at medium speed until blended. Turn the machine off and carefully add the remaining 6 1/2 cups of flour. Beat at low speed until the flour is just incorporated, then knead at medium speed until the dough is evenly combined, about 5 minutes, scraping down the sides of the bowl occasionally. Add the butter and continue to knead until the dough is very soft and silky, about 10 minutes longer.
  • Lightly butter a large bowl. Transfer the dough to the bowl and cover with a sheet of oiled plastic wrap. Let the dough stand in a warm, draft-free spot until doubled in bulk, about 1 hour. Punch down the dough, then cover and let the dough rise until doubled in bulk again, about 1 hour longer.
  • Punch down the dough and turn it out onto a heavily floured work surface. Divide the dough into 3 equal pieces and let rest on a lightly floured work surface for 20 minutes.

7 WHITE FOODS — AND WHAT TO EAT INSTEAD - HEALTHLINE

From healthline.com
Estimated Reading Time 8 mins
  • White bread. One of the primary foods eliminated on the No White Foods Diet is white bread, as well as closely related foods made from white flour, including crackers, pastries, and breakfast cereals.
  • White pasta. White pasta is similar to white bread in that it’s made from refined flour that contains fewer total nutrients than the unrefined version.
  • White rice. Like white bread and pasta, white rice falls within the category of refined grains. White rice starts out as a whole grain, but the bran and germ are removed during the milling process, which transforms it into the starchy, fluffy white rice you’re probably quite familiar with.
  • White sugar. It’s unsurprising that the No White Foods Diet eliminates white sugar. Still, most versions of the diet also prohibit more colorful forms of sugar, including brown sugar, honey, turbinado sugar, maple syrup, and agave nectar.
  • Salt. Most people are familiar with table salt as a white food, but it also comes in other colors, such as pink, blue, and black. While some salt is essential for health, many people following Western diets eat entirely too much of it, with the majority coming from ultra-processed foods (8).
  • White potatoes. White potatoes are not inherently unhealthy. In fact, they’re a great source of several important nutrients, such as potassium, vitamin C, and fiber (10).
  • Animal-based fats. Most versions of the No White Foods Diet consider animal-based fats to be white foods and recommend that they’re limited. White animal-based fats primarily refer to fats that come from meat and dairy products, most of which are saturated fats.

  • With the mixer running (or stirring by hand), gradually add another 3 to 4 cups of flour, until the dough comes together in a cohesive ball that clears the bottom and sides of the bowl and doesn't leave a lot of doughy residue on your fingers when touched while still being just slightly tacky (not overfloured and dense).

WE TASTED 9 WHITE BREADS AND THIS IS THE BEST

From msn.com
  • Pepperidge Farm Farmhouse Hearty White. The smoothest of the bunch, this is the closest to the Platonic ideal of what white bread could and should be.
  • Nature's Own Perfectly Crafted White. There's a benefit to watching and waiting, and sometimes, that means perfection. Nature's Own's two-year delayed response Sara Lee's Artesano line absolutely nails the game.
  • Pepperidge Farm White Sandwich. With its white plastic overwrap designed to look like deli paper, small loaf size, and thin, tiny child-sized slices, this Pepperidge Farm option didn't give me high hopes.
  • Arnold Country White. This is where the white breads really start differentiating themselves. Before this, they may be good, but from here on out are the greats.
  • Wonder Bread. Wonder Bread may have been number one once, but this comeback kid now falls firmly in the middle of the pack—not an unimpressive feat for a bread that hasn't changed in 100 years that's competing head-to-head with more craft-style white breads.
  • Sunbeam Enriched Old-Fashioned. In comes a sleeper in a bright-yellow bag that just smacks of old-timeyness, particularly with its iconic illustration by Ellen Segner that hasn't changed since the 1940s.
  • Sara Lee Artesano Bakery Bread. This bread is squat, heavy, thick-sliced, and with fistfuls of floury snowflakes thrown over it before being packaged in a lovely matte bag.
  • Dave's Killer White Bread Done Right. I really wanted to love this. Dave's Killer Bread is an organic brand with an incredible story, and this recipe makes the bold claim of being a "soft and smooth artisan-style loaf" while using five super grains and unbleached flour.
  • Sara Lee White Bread. Ah, Sara Lee. Formerly a doyenne of the sweet goods trade since 1949, now a subsidiary of Bimbo Bakeries, this brand got into bread only recently, in 2001.

5 HEALTHIER ALTERNATIVES TO WHITE BREAD - BETTERHEALTHKARE

From betterhealthkare.com
  • Whole Wheat. Whole wheat bread is a type of bread made using flour that is partly or entirely milled from whole or almost-whole wheat grains. To assure you get more nutrition in each bite, look for wheat breads that are made mostly with whole-wheat flour.
  • Rye. Made with varying portions of rye grain and flour, rye bread, particularly dark rye bread, has a low glycemic index. Eating foods with a low glycemic index sustains a more even distribution of blood glucose and allows the pancreas to function more efficiently.
  • Pumpernickel. Traditional pumpernickel is made with coarsely ground rye flour (and perhaps some wheat flour) and is fermented with sourdough starter. Pumpernickel bread is extremely low in fat and generally cholesterol free and provides niacin, thiamin and riboflavin, essential vitamins for metabolism.
  • Sourdough Bread. Sourdough bread has a low glycemic index which means it doesn’t spike blood sugar as much as other breads. Even though it’s made from white flour, sourdough bread has a mild effect on blood sugar compared to other white breads.
  • Multigrain. Multigrain bread contains bran and the germ of the grain which makes it low in glycemic index. Foods low in glycemic index are associated with lower risks of diabetes, cancer and stroke.

WHICH BREAD IS BEST – IS WHITE SO BAD?
Nutrition is still key. Wholegrain is still more likely to be superior in terms of its protein, essential fatty acids, and vitamin and mineral content – white bread is more refined and generally less nutritious. But, taking the results of this new research into consideration, the best advice I can give you is to listen to your body.
