Yes, there is a turkey burger that my red meat eating boys will eat! After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

- Form into patties of desired size and thickness. If you keep them fairly thick, they will be moister.
- Place into lightly greased, non stick skillet (I like using my cast iron skillet)on medium high. Cook without moving until bottom side is dark brown and crusted - appx 4-5 minutes.
- Turn over, then reduce heat to medium and cook 8-10 minutes longer or until center is no longer pink and juices run clear.
- I serve on ciabatta rolls with mayo, more Dijon, a slice of pepper jack cheese, lettuce and tomato. Yum!

- Heat 1 tbsp oil in a pan and gently fry the onion for 5 mins until soft. Add the garlic and cook for 1 min. Add the oats and fry for 2 mins more. Tip into a bowl and set aside to cool.
- Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
- Heat oven to 200C/fan 180C/gas 6. Heat the remaining olive oil in a large, non-stick frying pan and sear the burgers on each side until well coloured (3-4 mins). - Arrange a few paper towels out on a cutting board, set a box mixer on top. Run the onion along the sides of the box mixer to grate it into fine, shredded pieces. Once grated, use the paper towel to soak up excess moisture from the onion. Too much moisture will make the turkey burger mixture very difficult to handle, so do not skip the extra 30 seconds it takes to blot the moisture from the grated onion. If your onion seems very wet, you can also wrap it in paper towels & wring out the moisture over the sink.

- In a food processor, combine the apple, mango chutney, scallion, garlic, cilantro, soy sauce, curry powder, chipotle , and salt and process until smooth. - First, prepare your quick pickled onions. Place apple cider vinegar, white vinegar, salt, and sugar into a mason jar. Screw the cover on and shake the jar until the salt and sugar have dissolved.
- Then, place the sliced onion into the jar. Be sure that all of the onion is covered in vinegar.
- Place the lid back on the jar and give it one more shake.
- Finally, place the jar in the refrigerator for at least 2 hours or overnight for the optimal quick pickled onion!
- Next, preheat the grill to 375ºF.
- Prepare the burgers and place all of the ingredients for the burgers (minus the buns :P ) into a large bowl and mix together with a wooden spoon. Don't be afraid to get messy and use your hands.
- Once all the ingredients are combined, form the burger patties by splitting the turkey burger mixture into 6 balls.
- Then, wet your hands with water (the water helps to keep the turkey patty from sticking to your hands) and form each ball of meat into small patties and place them onto a plate.

- In a medium bowl, mix together all burger ingredients and combine evenly.

- Line a baking sheet with parchment paper; set aside.
- With clean hands, mix the ground turkey with all of the patty ingredients in a large mixing bowl with. Gently work the mixture until it's cohesive.
- Divide the meat mixture into four equal portions and carefully form them into patties. Place the patties onto the parchment-lined baking sheet. With your thumb, press a divot into the middle of each patty; this will prevent the patty from shrinking on the grill.
- Place the patties in the fridge and let them chill for about 30 minutes. This helps them firm up so they don't fall apart on the grill.
- When it's go time, preheat your grill to medium-high heat-around 450º F. Clean the grill well. (I don't normally do this, but if you find that meat sticks easily to your grill, you might want to do this step to play it safe; you know your grill best.)
- Once the grill is ready, transfer the patties to the grill, cover, and let them cook for about 4-5 minutes. Gently flip them (they should have nicely formed grill marks on the cooked side), cover, and let them cook for another 4-5 minutes. Check the internal temperature with a Meat Thermometer, looking for an internal temperature of 165º F. If you're not quite there yet, flip the burgers once more and cover for another minute or two.
