Yes, there is a turkey burger that my red meat eating boys will eat! After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.
  • Form into patties of desired size and thickness. If you keep them fairly thick, they will be moister.
  • Place into lightly greased, non stick skillet (I like using my cast iron skillet)on medium high. Cook without moving until bottom side is dark brown and crusted - appx 4-5 minutes.
  • Turn over, then reduce heat to medium and cook 8-10 minutes longer or until center is no longer pink and juices run clear.
  • I serve on ciabatta rolls with mayo, more Dijon, a slice of pepper jack cheese, lettuce and tomato. Yum!

1/4 cup Dijon mustard
1 heaping tablespoon clover honey
1 tablespoon fresh orange juice
1/2 teaspoon lemon zest
1 teaspoon fresh Meyer lemon juice, from Meyer lemons, if possible
Salt and freshly ground black pepper
1 1/2 pounds 90-percent lean, freshly ground turkey (not all white meat), chilled
Salt and freshly ground black pepper
8 slices goat cheese, sliced 1/2-inch thick
4 sesame seed hamburger buns, split and lightly grilled
Watercress, for serving

Steps:

  • For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
  • For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

2 tbsp olive oil
1 large onion, finely chopped
2 garlic cloves, crushed
85g porridge oats
450g/1lb minced turkey
100g dried apricot, finely chopped
1 large carrot, grated
1 egg, beaten
cucumber slices, to serve

Steps:

  • Heat 1 tbsp oil in a pan and gently fry the onion for 5 mins until soft. Add the garlic and cook for 1 min. Add the oats and fry for 2 mins more. Tip into a bowl and set aside to cool.
  • Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
  • Heat oven to 200C/fan 180C/gas 6. Heat the remaining olive oil in a large, non-stick frying pan and sear the burgers on each side until well coloured (3-4 mins). Transfer to a baking sheet and cook in the oven for 10-15 mins. Serve in rolls with Tangy tomato chutney (see 'goes well with') and cucumber slices.
  • For the chutney heat 1 tbsp of olive oil in a pan and add 1 finely chopped onion. Cook for 5 mins until softened. Stir in 1 crushed garlic clove and cook for a further min. Add 1 tbsp sundried tomato paste, a 400g can good-quality chopped tomatoes and a pinch of sugar. Gently cook for 20-25 mins until rich and thick. Season to taste, then leave to cool before serving.

1/2 medium yellow onion, finely grated & squeezed of excess moisture
2 cloves garlic, finely chopped or grated
2 tablespoons mayonnaise (see Recipe Notes)
2 teaspoons Worcestershire sauce
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
oil, for the grill grates
for serving, as desired: burger buns, cheese of choice, toppings of choice (e.g. lettuce, tomatoes, thinly sliced onion, pickles, etc.), condiments of choice (e.g. mustard, ketchup, et.c)

  • or large plate with parchment paper, wax paper, or aluminum foil. Set aside.
  • Arrange a few paper towels out on a cutting board, set a box mixer on top. Run the onion along the sides of the box mixer to grate it into fine, shredded pieces. Once grated, use the paper towel to soak up excess moisture from the onion. Too much moisture will make the turkey burger mixture very difficult to handle, so do not skip the extra 30 seconds it takes to blot the moisture from the grated onion. If your onion seems very wet, you can also wrap it in paper towels & wring out the moisture over the sink.
  • Add the ground turkey, grated onion, garlic, mayonnaise, Worcestershire sauce, kosher salt & ground black pepper to a large bowl. Using your hands, mix until just combined. Overworking the turkey burger mixture will lead to tough burgers; take care not to overmix.
  • Divide the turkey burger mixture into 4 even portions, about 1/3 pound (5.3 ounces) each. Lightly coat your hands in oil (or mist with nonstick cooking spray) & form each portion into a 1-inch thick patty. The mixture will be very wet at this point, so there's no need to fuss over making your burgers look perfect - just aim for forming them into the general shape & size you're after. Set them on the prepared baking sheet.
  • the turkey burgers: Transfer the baking sheet with the turkey burger patties to the freezer. Chill for at least 20 minutes.
  • Meanwhile, as the turkey burgers chill, preheat the grill for medium-high direct heat grilling, about 450 degrees F. Just before placing the burgers on the grill, generously oil a wad of paper towel. Use grilling tongs to run the oiled paper towel over the grill grates, generously oiling the grates.
  • Remove the turkey burgers from the freezer. At this point they should be quite a bit easier to handle; finish forming them into 1-inch thick patties, using your thumb to create an indent in the center of each patty. Firmly press each turkey burger patty down onto the prepared grill grates. Grill the turkey burgers for 6 minutes per side, or until a thermometer inserted in the center of the turkey burgers registers 160 degrees F. If you'd like to add cheese to your turkey burgers, do so when there are 2 minutes left of grilling time.

Steps:

  • Place the turkey in a large bowl, cover with a dish towel, and let come to room temperature while you prep the rest of the ingredients.
  • In a food processor, combine the apple, mango chutney, scallion, garlic, cilantro, soy sauce, curry powder, chipotle , and salt and process until smooth. Add the mixture to the turkey and mix thoroughly to combine. Divide the mixture into four equal portions and form each into a loose ball. 1/2 cup white vinegar
1 teaspoon salt
1/4 teaspoon sugar (white, brown, coconut)
1 large red onion (thinly sliced)
1 lb. 85% fat ground turkey
½ medium white onion (grated)
2 cloves garlic (grated)
2 tablespoons green chiles
1 medium green pepper (finely diced)
1/2 cup fresh chopped cilantro
1/2 teaspoon red chili flakes
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground pepper
3 tablespoons cold butter (diced)
6 burger buns
1 large avocado (peeled and pitted)
3 tablespoons canned green chiles
1/4 cup fresh chopped cilantro
1/4 teaspoon salt

Steps:

  • First, prepare your quick pickled onions. Place apple cider vinegar, white vinegar, salt, and sugar into a mason jar. Screw the cover on and shake the jar until the salt and sugar have dissolved.
  • Then, place the sliced onion into the jar. Be sure that all of the onion is covered in vinegar.
  • Place the lid back on the jar and give it one more shake.
  • Finally, place the jar in the refrigerator for at least 2 hours or overnight for the optimal quick pickled onion!
  • Next, preheat the grill to 375ºF.
  • Prepare the burgers and place all of the ingredients for the burgers (minus the buns :P ) into a large bowl and mix together with a wooden spoon. Don't be afraid to get messy and use your hands.
  • Once all the ingredients are combined, form the burger patties by splitting the turkey burger mixture into 6 balls.
  • Then, wet your hands with water (the water helps to keep the turkey patty from sticking to your hands) and form each ball of meat into small patties and place them onto a plate.
  • Finally, spray a large piece of tin foil with non-stick cooking spray and place the tin foil on the grill.*
  • Transfer the burger patties onto the tin foil. The temperature of the grill should be roughly 375ºF. Cook each side for about 6-7 minutes covered. This will depend on the thickness of your burger.
  • While the burgers are cooking on the grill, prepare the avocado mash by placing the avocado in a small bowl and mash it with a fork. Add the green chiles, salt, and cilantro to the avocado and mix well.

Simple Air Fryer Turkey Burgers image

These Air Fryer Turkey Burgers are easy to make and can be customized with your favorite toppings. Dinner will be ready in just 30 minutes!

1 pound ground turkey
1-2 tablespoons extra virgin olive oil
1 shallot or 1/2 yellow onion (grated)
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 tablespoon Dijon mustard
Cooking spray
4 slices cheddar cheese (optional)

Steps:

  • Preheat the air fryer to 360 degrees F. In a bowl combine turkey, olive oil and grated shallot or onion. Use a box grater to finely grate the shallot or onion over the bowl so all of the juice goes into the burger mix!
  • Add the rest of the ingredients, aside from the cooking spray and cheese, to the bowl and use your hands to mix everything together. Form into 4 equal-sized patties with your hands. Press down on the patties until they are about 1-inch thick and use your thumb to create an indent in the center of each one.
  • Lightly spray the air fryer basket with cooking spray and place the burger patties into the basket.
  • Cook the burgers for 15-17 minutes. If using cheese, top each burger with cheese 1-2 minutes before the end of cooking. Burgers should have an internal temperature of 165 degrees F.
  • Allow the burgers to rest for a few minutes. Serve on a bun with your favorite toppings and sides. Enjoy!

3 lb(s) ground turkey
¼ chopped minced green onion
2 tsp minced ginger
2 Tbsp chopped Thai basil
½ a pineapple cored and cut into ¼ inch cubes
1 red bell pepper cut into ¼ inch dice
2 scallions thinly sliced
2 Tbsp small dice red onion
½ jalapeno pepper minced (optional)
2 Tbsp fresh chopped cilantro leaves
1 Tbsp fresh limejuice
Salt and pepper
Oil for brushing
6 soft buns
Garnish suggestion: Lettuce, red onion, and mayonnaise

Steps:

  • In a medium bowl, mix together all burger ingredients and combine evenly.
  • Using your hands, gently form the burgers into 6 patties about ¾ of an inch. Take care not to handle the meat too much to keep temperature as cold as possible at all times.
  • Drizzle oil on both sides of the patties and season the outside with salt and pepper.
  • Place patties into the refrigerator for 30 minutes to set up.
  • Preheat barbeque to medium heat. (350- 375°F) (175C-190°C). Oil grill to prevent sticking.
  • Place burgers on the grill and cook for 5-6 minutes per side. Or until turkey is cooked through and nice char marks are achieved.
  • Remove the turkey burgers from the grill. Cool slightly and serve on buns with pineapple salsa. Garnish with burgers with lettuce, red onion and mayo if desired.
  • To prepare the salsa, combine all the ingredients in a medium bowl. Mix well until all ingredients are evenly combined. Reserve salsa.

1 lb ground turkey, preferably dark meat or between 80-90% lean.
1/2 cup finely chopped red onion
1/4 cup panko breadcrumbs
2 garlic cloves, smashed and grated to a paste (or finely minced)
1 egg
1 tsp sea salt
1 tsp onion powder
1 tsp liquid smoke
1/2 tsp dried Italian seasoning
1/4 tsp cracked black pepper
Fresh brioche buns
Sliced cheese
Your choice of condiments and toppings

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • With clean hands, mix the ground turkey with all of the patty ingredients in a large mixing bowl with. Gently work the mixture until it's cohesive.
  • Divide the meat mixture into four equal portions and carefully form them into patties. Place the patties onto the parchment-lined baking sheet. With your thumb, press a divot into the middle of each patty; this will prevent the patty from shrinking on the grill.
  • Place the patties in the fridge and let them chill for about 30 minutes. This helps them firm up so they don't fall apart on the grill.
  • When it's go time, preheat your grill to medium-high heat-around 450º F. Clean the grill well. If you need to grease your grill, dip a wad of paper towels in some vegetable oil and glide the soaked towel along the grate with tongs. (I don't normally do this, but if you find that meat sticks easily to your grill, you might want to do this step to play it safe; you know your grill best.)
  • Once the grill is ready, transfer the patties to the grill, cover, and let them cook for about 4-5 minutes. Gently flip them (they should have nicely formed grill marks on the cooked side), cover, and let them cook for another 4-5 minutes. Check the internal temperature with a Meat Thermometer, looking for an internal temperature of 165º F. If you're not quite there yet, flip the burgers once more and cover for another minute or two. (If you're using cheese, place the cheese slices onto the patties about a minute before you think they'll be done.)
  • When the burgers are ready, transfer them to a clean plate or platter and serve them with fresh brioche buns and your choice of toppings.

1 large portobello mushroom cap
1 tablespoon coarsely chopped shallot
3 tablespoons lightly packed fresh parsley
1 1/4 pounds 85% to 93% lean ground turkey
2 tablespoons extra-virgin olive oil, plus more for brushing
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground pepper
8 thin slices manchego or white cheddar cheese
4 English muffins, split
Dijon mustard, mayonnaise and sliced avocado, for topping

Steps:

  • Use a spoon to scrape out the gills from the underside of the mushroom cap. Cut the cap into 1-inch pieces and transfer to a food processor. Add the shallot and parsley and pulse until chopped.
  • Transfer the mushroom mixture to a large bowl. Add the turkey, olive oil, Worcestershire sauce, 1 teaspoon salt, and pepper to taste; gently mix with your hands until just combined. Divide into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Put on a large plate, cover and refrigerate until firm, about 30 minutes.
  • Preheat a grill to medium. Brush the grates with olive oil. Grill the patties, undisturbed, until marked on the bottom, 4 to 5 minutes. Give the patties a quarter turn and cook until marked again, 4 to 5 more minutes. Flip the patties and grill until cooked through, 6 to 7 more minutes; top each with 2 slices cheese during the last 3 minutes of cooking and cover with a disposable aluminum pan to melt.
  • Toast the English muffins on the grill, then spread with mustard and mayonnaise. Serve the patties on the English muffins; top with avocado.

Mix together thoroughly; the mixture will be wet. Allow mixture to sit for about 5 minutes, which allows it to firm up a little bit.
  • Form four patties, which might be challenging, as the mixture will still be very moist. Just do the best you can and then wash your hands well!
  • Heat the butter and remaining 1 tablespoon of Low FODMAP Garlic-Infused Oil in a large nonstick skillet over medium heat until butter is melted. Add the patties and cook for about 4 minutes or until the bottom develops a nice sear and you can see that the meat is about halfway cooked through. Flip the burgers over and continue to cook until the burgers are thoroughly cooked. Serve on a roll (or not) with low FODMAP condiments of your choice.
