My staple go-to recipe for overripe bananas! The key to super moist muffins is to mix the batter until only just combined, and not to over bake.

1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 dash ground nutmeg
3 very ripe bananas
½ cup white sugar
⅓ cup butter, melted
¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

These Best Ever Banana Nut Muffins are the BEST banana muffins you'll ever make, with a delicious and sweet walnut topping!

3 large ripe bananas
3/4 cup white sugar
1 large egg
1/3 cup vegetable oil
1 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
3/4 cups chopped walnuts
3/4 cups chopped walnuts
2 tablespoons brown sugar
1 tablespoon melted butter

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners (or grease very well with butter or cooking spray if you prefer not to use paper liners).
  • Mash the bananas in a large bowl and mix in the sugar and egg with a wooden spoon until well blended.
  • Add the vegetable oil and mix well.
  • Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Adding the walnuts with the dry ingredients helps prevent over-mixing.
  • Mix everything together just until the flour disappears and the walnuts are distributed evenly throughout the batter.
  • In a small bowl, combine the remaining 3/4 cup walnuts, brown sugar and melted butter and mix until the walnuts are coated.
  • Spoon the muffin batter evenly into the 12 muffin cups and spoon a bit of the coated walnuts onto the top of each one, making sure the topping is well distributed onto the top of each muffin (not in one big clump or it might sink into the muffin as it bakes!).
  • Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
  • Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.

3 VERY overripe bananas, mashed (about 1 1/3 cup mashed banana, make sure they are almost all the way brown)
⅓ cup honey
1 large egg, at room temperature
½ tablespoon vanilla extract
¼ cup olive oil
1/4 cup unsweetened vanilla almond milk (or milk of choice)
Dry ingredients
1 ¾ cup whole wheat pastry flour*
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Mix-ins
½ cup chopped walnuts, plus ¼ cup chopped walnuts for sprinkling on top of muffins

Steps:

  • Preheat the oven to 350 degrees F. Line a muffin pan with liners and spray the inside of the liners to prevent sticking.
  • In a large bowl, mix together mashed bananas, honey, egg, vanilla, olive oil and milk until well combined. Add in whole wheat pastry flour, baking soda, cinnamon and salt and use a wooden spoon to mix together until the batter is just combined. DO NOT overmix. Fold in ½ cup chopped walnuts.
  • Divide batter evenly into muffin liners, sprinkle each muffin with chopped walnuts. Bake for 20-25 minutes or until the toothpick comes out with just a few crumbs attached.
  • Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.

This recipe was given to me by a good friend, it's quick to prepare and easy to put together. Just mix the dried ingredients in a bowl, then blend the wet ingredients in another bowl and mix them together. Please note one Australian tablespoon is four US/UK teaspoons

cooking spray
2 1/2 cups self raising flour
3/4 cup brown sugar
2 bananas, must be ripe
1 cup milk
2 tablespoons butter (melted and slightly cooled) or 2 tablespoons margarine (melted and slightly cooled)
1 tablespoon vanilla essence
1 eggs or 1 egg substitute

Steps:

  • Preheat oven at 180oC or 350oF or Mark4.
  • Grease muffin tin with cooking oil spray and set aside to use later.
  • For the dried ingredients - In a large bowl add self raising flour and brown sugar, mix and set aside.
  • For the wet ingredients - In another large bowl or large jug add ripe bananas, milk, melted butter or margarine, vanilla essence and egg. Using a hand mixer, puree/combine the mixture, once everything looks like liquid it's ready. My daughter said it looks like a big smoothie.
  • Pour the wet ingredients in the dried ingredients bowl. Combine everything together until you form a thick batter.
  • Pour mixture into greased muffin tins and bake for 20-25 minutes.
  • Enjoy.

  • In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. , Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.

This recipe is the best I've found for Banana muffins just watch not to overbake them. They come out nice and moist. they also freeze well for later use. I have put different additions in them over the years instead of walnuts, like peanut butter chips or chocolate chips, pecans and peanuts.

1/2 cup butter
1 cup sugar
2 large eggs
2 large bananas, mashed
2 cups flour, all purpose
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla
1/2 cup walnuts (optional)

Steps:

  • In large bowl mix flour baking soda and powder and salt.
  • set aside.
  • Beat together in large bowl- butter & sugar until fluffy.
  • Add eggs one at time beat well after each.
  • next add mashed banana beat well.
  • Next alternately add buttermilk and flour mixture mix only until dry ingredients are moist.
  • Do not over mix.
  • Batter will be slightly lumpy.
  • stir in vanilla and nuts.
  • Line (or grease) muffin pans.
  • Fill apx.
  • 1/2 to 2/3 full.
  • Bake in 400 degree pre-heated oven for 15-18 minutes.
