1 HOUR WHOLE WHEAT BREAD OR YOUR KIDS WILL EAT THE CRUST!
This is the Bosch master recipe for freshly ground whole wheat bread. My kids never used to eat the crust. Now they do! :) I have done some experimenting with this to get a more firm loaf. I think I finally have it. So the recipe is adjusted, based on my tinkering. Minimum rising time included in prep time. The original recipe is from Phyllis Stanley, a Bosch consultant. She also recommends using saved potato water for the water and pureeing any leftover veggies as part of the water. Adds more nutrition and some taste. NOTE: If you don't use freshly ground flour, you will probably have to adjust the flour amounts.

Steps:
- Put ingredients in the Bosch bowl in order listed.
- Turn Bosch on and knead on speed 1 for a total of 8 minutes.
- Quickly add (after turning on) additional flour (1/2 C at a time) if needed for dough to pull away from side of the bowl, turning off Bosch each time you add flour.
- It should only pull initially half way up the side of the bowl, and during the 5 minutes, it will completely pull away.
- Turn oven on to 375° and oil your hands and counter well, spraying 4-5 loaf pans with cooking spray or oil.
- Divide the dough between the loaf pans and let rise for approximately 30 to 45 minutes. They will rise more in the oven.
- Turn oven down to 350° and bake for 30-35 minutes, or until golden brown.
- Remove from pans and let cool on cooling racks, covering with a tea towel, before cutting (if you can wait!).

BEST 1 HOUR BREAD
Simply delicious bread. Easy to slice. It's moist, chewy and great for sandwiches. Wonderful slathered with honey and butter straight out of the oven.

Steps:
- Pour 1/2 cup warm water into a small bowl and sprinkle with 1 tsp of the sugar. Sprinkle the yeast over the top and stir gently to combine. Set aside and allow yeast to work about five minutes while prepping the pans and ingredients in the mixer.
- Grease two bread pans. (Glass or ceramic preferred.)
- Combine 2 cups of the flour with the rest of the dry ingredients in mixer using dough hooks for a few seconds on low. (The salt in the flour will not harm the yeast.)
- Pour yeast mixture and 1 cup warm water and olive oil over the ingredients in the mixer. Mix ingredients on slow speed.
- With mixer on low, add 1 cup of warm water and then 2 cups of flour.
- After ingredients are combined, turn mixer speed to medium. If dough is too wet and sticky add up to 1 cup flour 2 tablespoons at a time while mixer is running (or while kneading) till it comes away cleanly from the sides of the bowl. Dough should still be soft, stretchy and a bit sticky.
- Mix for 5 minutes on medium. Dough should mix together and come away cleanly from the sides of the bowl during this time. Dough will be smooth at the end of mixing. Optional hand kneading: Turn dough out onto a clean, floured surface and knead turning it a quarter turn each time for 5-8 minutes till dough is smooth.
- Oil or grease hands and remover dough from bowl onto clean and lightly-floured counter or silpat and knead it 4-6 times. This is a soft dough, but if it is too sticky too handle, knead in a bit more flour.
- Divide dough evenly into two balls and shape into loaves and place in prepared pans.
- Lightly cover loaves with plastic wrap or clean dish towel and sit in a warm place to rise till dough is about double in volume up to 30 minutes.
- While dough is rising, heat oven to 400°.
- Bake loaves for 15-20 minutes, till golden brown. Turn them out onto cooling rack. (And of course while it will slice better when it cools, it is irresistible when warm out of the oven, dripping with butter and honey. Enjoy.)

- In the bowl of a stand mixer fitted with a dough hook, mix together 3 1/2 cups white whole wheat flour, vital wheat gluten, and quick-rise yeast until well combined.
- Add the water and mix for one minute, scraping down bowl halfway through. Cover the bowl with a clean kitchen towel and allow to rest for 10 minutes.
- Uncover the bowl and add the salt, oil, honey, and lemon juice. Beat for 1 minute.
- Add the remaining 2 1/2 cups of flour, one cup at a time, mixing well between each cup. Knead the dough in the mixer (still using the dough hook) until the dough pulls away from the sides of the bowl and feels smooth rather than sticky. This usually takes 10 to 15 minutes, but if your dough pulls away and loses its stickiness sooner, it could take as little as 5 minutes.
- Grease two nonstick bread pans measuring 8 1/2" x 4 1/2" x 2 1/2" to 9" x 5" x 3" each (or grease two regular bread pans and then line them with parchment paper). Preheat the oven to lukewarm by setting it to 350°F and then turning it back off after exactly 1 minute.
- Turn the dough onto a greased surface. Evenly divide it into two loaves. Form and place the dough into the prepared bread pans, gently pressing it into the corners.
- Place the pans in the warm oven and allow them to rise for 20 to 40 minutes, until the dough is nicely domed above the tops of the pans. Without removing the pans from the oven, turn on the oven to 350°F and set the timer for 30 minutes. The bread is done when the tops are golden brown and the internal temperature reaches 190°F to 200°F on an instant-read thermometer. Once the loaves are baked, immediately remove the hot bread from the pans to cool on a rack.

- Heat oven to warm about 200 degrees.
- Place warm water in large mixing bowl. Add yeast and stir. Stir in honey and let proof (start to form a creamy foam) for 5 minutes.
- Add oil, flour, and salt. Begin by adding 7 cups of flour. Start to mix using the dough hook. Add remaining 1/2 cup of flour until dough pulls away from sides of mixing bowl. Using Bosch or Kitchenaid, knead for 10 minutes at medium-high speed. If you don't own a stand mixer, you can knead by hand.
- Place a little oil on hands and shape into two bread loaves. Spray loaf pans with non-stick cooking spray. Put pans in a warm oven to let rise until double -- about 20 minutes.
- Once bread has raised, turn oven to 350 degrees. Leave bread in oven and set timer for 25 minutes.
- Check bread to see if it is golden brown. Once bread is done, remove from oven and spread butter all over warm loaves. Let cool for several minutes before removing from pan.
- Spread butter and jam or honey on warm bread.
- May freeze bread or eat within 2 days.

WHOLE WHEAT SANDWICH BREAD RECIPE BY TASTY

- In a large bowl, whisk the water, honey, and yeast. Let sit for 5 minutes, until the yeast has bloomed.
- NOTE: It may be tempting to use all whole wheat flour in this recipe, but, in our testing, that method resulted in dense, tough, squat breads that barely rose when we tried to proof them. Using some all-purpose flour was necessary to give us the rise and soft, pillowy texture we wanted in a good sandwich bread.
- Pour in the wheat flour, all-purpose flour, oil, and salt, and mix until the dough comes together in a ball that does not stick to your fingers.
- NOTE: You can also do the first 2 steps in a standing mixer fitted with a dough hook attachment, mixing on low speed until the dough no longer sticks to the sides.
- On a lightly floured surface, knead the dough a few times until it really starts to form a tight ball.
- Form the dough into a ball shape and transfer to a greased bowl, turning the dough to coat it in grease. Cover the bowl with plastic wrap or a wet towel and store in a warm place for 1 hour.
- Allow the dough to proof until it has doubled in size. Save the plastic wrap or towel as you'll be using it again.
- Transfer the proofed dough to a lightly floured surface and press the dough - don't stretch - into a 7x7-inch (18x18 cm) square.
- Fold the top 3rd of the square down, and the bottom 3rd up to form an even rectangle. Pinch the top fold to seal the dough.
- Roll the dough over so that the seal faces upward and fold both ends up toward the center, so that the dough has formed an even log shape about the size of your loaf pan.
- Transfer the dough to a greased loaf pan and cover with with the same plastic wrap or towel used before.
- Let the dough rise for 1 hour, until it has poofed over the edge of the loaf pan about 1½ inches (4 cm).
- Preheat the oven to 375°F (190°C).
- Remove the plastic wrap or towel and transfer to the oven and bake for 50-55 minutes, until the dough has browned slightly and formed a light brown crust.
- Immediately remove the loaf from the pan and set aside to cool for at least 1 hour before slicing.
- Store in an airtight container or bag. The bread can be stored in freezer up to 6 months.

THE BEST, FASTEST WHOLE WHEAT BREAD- THAT THE KIDS WILL LOVE TOO
There are many perks working at the local extension office and one of them for sure is the food. One of my favorite recipes is for this delicious whole wheat bread. It is soft and light (just like white bread) and is fast to make compared to some yeast breads due to the instant yeast. Great recipe to get those kids to love whole wheat bread. I had posted a previous version of this recipe (#326380) but we have since added some additional ingredients to make it even better- an egg, some powdered milk and lecithin. Lecithin is easily found in any health food store- really helps with that soft texture I am talking about.

- Add ingredients in the order listed to bowl of Kitchen Aid or other heavy duty mixer.
- Using a dough hook, mix well and add more flour if needed so that the dough cleans the sides of the bowl (dough should be slightly tacky).

- In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
- Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch.
