Known as "SC Grenadine" at Smuggler's Cove in San Francisco, this fresh, two-ingredient grenadine syrup is perfect for tiki drinks or mocktails like a Shirley Temple.

Ingredients

2 cups 100% pomegranate juice (such as Pom Wonderful)
2 cups granulated sugar

Steps:

Add the pomegranate juice to a nonreactive saucepan. Bring the juice to a boil over high heat. Add the sugar and stir with a wooden spoon until dissolved, about 1 minute. Remove from heat and let cool. Pour into a lidded bottle or other sealable container and store in the refrigerator. The syrup will keep, refrigerated, for several weeks.

Ingredients

100ml pomegranate juice (not from concentrate)
100g granulated sugar
drop of orange blossom water

Steps:

Put the pomegranate juice and sugar in a pan set over a low heat. Stir until the sugar has dissolved.
Remove from the heat. Leave to cool. Add the orange blossom water, then pour into a sterilised bottle. Will keep for two weeks.

If using whole pomegranates, remove the seeds. Place the pomegranate seeds in a cocktail shaker (or tall glass) and mash with a muddler or wooden spoon until all the juices have been released. Then pour it through a fine mesh strainer into a measuring cup.
Add the pomegranate juice and sugar to a small saucepan heat over medium heat, stirring until the sugar is dissolved, about 1 to 2 minutes. Remove from the heat.
Cool and stir in the lemon juice. Pour into a sealed container and refrigerate up to three weeks. For a longer storage time, add 1 tablespoon vodka or brandy to fortify the syrup.
