1/2 cup garlic cloves, peeled (about 1 head)
1 cup extra-virgin olive oil
3 pounds Yukon gold potatoes, peeled and quartered
Kosher salt
1 teaspoon freshly ground black pepper
1/4 cup heavy cream, half-and-half, or creme fraiche

Add the reserved olive oil, 2 teaspoons of salt, the pepper, cream, and 3/4 cup of the cooking water to the potatoes and mix with a wooden spoon. Add more cooking water, if necessary, until the potatoes are creamy but still firm. Season, to taste, and serve hot.

THE BEST (AND EASIEST) VEGAN GARLIC MASHED POTATOES

The Best (and easiest) Vegan Garlic Mashed Potatoes image

Not only is this the best-mashed potato recipe ever, but it also happens to be oil-free, less than 10 ingredients and under 30 minutes to make! The perfect side for any meal and a crowd pleaser for your Thanksgiving or Christmas feast.

Provided by Sam Turnbull • It Doesn't Taste Like Chicken

Categories     Side Dish

Time 25m

Number Of Ingredients 5

4 pounds russet or yukon gold potatoes, (peeled and quartered)
1 cup full-fat coconut milk ((the kind in a can))
1 cup plant-based milk ((such as soy or almond))
6 cloves garlic, (minced or pressed)
1 1/2 - 2 1/2 teaspoons salt ((or to taste))

Steps:

  • Add the potatoes to a large pot and cover with water. Bring to a boil and continue to cook until the potatoes are fork-tender, 10 - 15 minutes. Remove from heat and drain the water off of the potatoes.
  • In the meantime, in a medium saucepan combine coconut milk, plant-based milk, and garlic. Bring to a simmer and cook for 10 minutes until fragrant and the garlic is cooked.
  • Pour about half of the garlic milk over the potatoes and use a potato masher to mash the potatoes. Add more of the garlic milk until you reach the consistency you like. (I usually use all of the garlic milk mixture). If you use all of the garlic and milk mixture and you would still like the potatoes softer, just add more coconut milk or plant-based milk until you reach the desired consistency. Season with salt to taste.

BEST RICED POTATOES RECIPE

Best Riced Potatoes Recipe image

Learn how to make creamy garlic mashed potatoes using a ricer to create the ultimate fluffy texture. The creamiest mashed potatoes ever!

Provided by Isabel Laessig

Categories     Side Dish

Time 50m

Number Of Ingredients 7

4 pounds Yukon Gold potatoes (peeled and cut into 1 inch pieces)
1 Tablespoon Kosher salt (plus more to taste)
1½ cups Whole milk
2 cloves garlic (smashed)
5 sprigs Fresh thyme
2 Dried bay leaves
3/4 cup Unsalted butter (1 1/2 sticks, plus more for serving)

Steps:

  • Place potatoes in a large pot and pour in cold water to cover by 1 inch. Add salt and bring to a boil. Reduce heat and simmer until potatoes are very tender, but not saturated or crumbly, 20-25 minutes.
  • Drain potatoes, reserving ½ cup cooking liquid if making potatoes ahead. Return potatoes to pot and set over low heat. Gently stir until dry, about 1-2 minutes or until moisture is gone.
  • In the meantime, heat milk, thyme sprigs, bay leaves, garlic, and butter in a small saucepan over medium heat until butter is melted. Remove from heat.
  • Pass hot potatoes through a ricer into a large bowl. Do this while they are hot; if allowed to cool, the potatoes will become gummy. If not using a ricer, transfer to an electric mixer with paddle attachment and blend until desired consistency is reached.
  • Remove herbs from warm milk mixture and discard. Gradually add milk mixture to potatoes, stirring vigorously with a wooden spoon or paddle attachment until combined and smooth.
  • Season with salt and pepper. Serve with pats of butter on top and chives if desired. Enjoy!

GARLIC MASHED POTATOES

Garlic Mashed Potatoes image

Homemade Garlic Mashed Potatoes are totally creamy and smooth! Filled with rich garlic flavor, there's no better side dish to serve with your chicken, turkey, or fish.

Provided by Jessica - The Novice Chef

Categories     Side Dishes

Time 1h10m

Number Of Ingredients 7

1 head of garlic
1 tablespoon extra virgin olive oil
2 pounds potatoes (russet or Yukon Gold), peeled and cut into 1 inch chunks
Salt
1/3 cup heavy cream (or evaporated milk)
4 tablespoons salted butter, melted
Salt and freshly cracked black pepper, to taste

Steps:

  • Preheat oven to 400°F. Remove any loose, papery, outer layers of the head of garlic, leaving the full head intact with all cloves still connected.
  • Cut the top 1/4 inch off the top of the head of garlic to expose the tops of the cloves of garlic. Thoroughly and generously coat full head of garlic in olive oil and wrap in foil.
  • Bake garlic in the oven for 35 to 40 minutes. Open foil and check if he cloves feel soft and are beginning to brown. If they aren't, cook an additional 10 minutes and check again.
  • Once garlic is soft, remove from oven and let cool. In the meantime, bring a large stock pot of salted water to a boil.
  • Add potatoes and cook for about 15 minutes, until fork tender. Drain potatoes and return to the stove over low heat to dry for 1 to 2 minutes. (This step removes excess water from the boiled potatoes and keeps your potatoes extra creamy in the end!)
  • Add in the heavy cream, melted salted butter and squeeze in the roasted garlic into the mashed potatoes and mash until desired consistency. (Toss the leftover outside of head of garlic once you have squeezed out the roasted cloves!)
  • Taste the mashed potatoes and add salt and pepper, to taste as needed!

GARLIC MASHED POTATO WITH OLIVE OIL

Garlic mashed potato with olive oil image

Make Delia's garlic mash potato recipe even better with a glug of garlic infused olive oil.

Provided by Delia Smith

Categories     Side dishes

Yield Serves 4

Number Of Ingredients 5

900g/2lb potatoes (Désirée or King Edward)
50g/2oz butter
3 fat garlic cloves, halved lengthways
8 tbsp best quality extra virgin olive oil
salt and freshly millled black pepper

Steps:

  • First place the garlic and olive oil in a small saucepan over the gentlest heat possible - a heat diffuser is good for this - and leave for 1 hour for the garlic to infuse and become really soft.
  • Use a potato peeler to pare off the skins as thinly as possible and then cut the potatoes into even-sized chunks, not too small. If they are large, quarter them and if they are small, halve them.
  • Put the potato chunks in a large saucepan, then pour boiling water over them, add 1 dessertspoon of salt, put on a lid and simmer gently until they are absolutely tender - they should take approximately 25 minutes. The way to tell whether they are ready is to pierce them with a skewer in the thickest part; the potato should not be hard in the centre. And you need to be careful here, because if they are slightly underdone you do get lumps.
  • When the potatoes are cooked, drain them. Cover them with a clean tea cloth to absorb some of the steam for about 5 minutes, then using an electric whisk on a low speed, begin to break them up using half the garlic and oil. As soon as all that is incorporated, add the rest of the garlic and oil and whisk until smooth, seasoning well with salt and freshly milled black pepper.
