A twist on a classic, these vegan sloppy joes are chock-full of hearty and delicious ingredients, like lentils, plant-based crumbles, veggies and spices. Best part? These homemade sloppy joes are made in one pot and can be on the table in under 30 minutes!

1 tablespoon olive oil
1 yellow onion (peeled and roughly minced)
1 bell pepper (small dice (I used half of a red pepper and 1/2 of a green pepper for colour))
1 cup shredded carrot
4 cloves garlic
1 (12-ounce) package plant-based "meat" crumbles (about a 3/4 pound package)
1 (19-ounce) can lentils (rinsed and drained )
1 tablespoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon salt (or to taste)
1/2 teaspoon freshly ground black pepper
3 tablespoons tomato paste
1 (14-ounce) can tomato sauce
1 to 1.5 cups low sodium vegetable broth (depending on the consistency you want)
1 tablespoon yellow mustard
1 tablespoon maple syrup (optional (adds a touch of sweetness if the tomato sauce is a little acidic))
1/2 tablespoon balsamic vinegar (or apple cider vinegar)
Vegan Burger buns (for serving (cut buns in half horizontally if not already precut))

Steps:

  • Heat olive oil in a 12-inch sauté pan over medium heat. Add onion, bell pepper, carrot and garlic and cook, stirring occasionally, for 3 to 5 minutes until the veggies start to soften.
  • To veggies, add plant-based meat crumbles, lentils, chili powder, oregano, cayenne pepper, salt and black pepper. Add the tomato paste, then stir, breaking up the crumbles, and cook for 1 minute just to get the flavours going.
  • Pour in tomato sauce, vegetable broth, yellow mustard and maple syrup (if using). Give everything a stir so the ingredients are nice and incorporated. Bring to a simmer, reduce heat to a medium-low so it's just lightly bubbling, cover with the lid ajar and cook for 10 minutes or until it's reached the consistency you like best.Note: Start with 1 cup of vegetable broth and add more if you feel like you want a looser or thinner consistency.
  • Stir in balsamic vinegar and add more salt if you feel it needs it for your tastes.
  • Serve the sloppy joe filling on warmed or toasted buns. Garnish to taste, if desired, with any of your favourite sloppy joe toppings or serve as is. Enjoy! Yields about 6 to 8 sloppy joes, depending on how much you top each bun.Note: Properly store leftovers in an airtight container in the refrigerator and use within 3 to 4 days, reheating before serving. The sloppy joe mixture may thicken as it cools, but you can always add a little more vegetable broth or water to thin if needed.

1-2 tbsp extra virgin olive oil
1/8 tsp cayenne powder (optional)
2 cloves of garlic, chopped
1/4 onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
15 oz canned or cooked lentils (400 g)
1 1/2 cup tomato sauce (250 g)
2 tbsp soy sauce or tamari
2 tbsp tomato paste
1 tbsp brown sugar
2 tsp garlic powder
2 tsp onion powder
1 tsp sweet paprika
1/8 tsp ground black pepper
6 whole-wheat hamburger buns (optional), gluten-free if needed

Steps:

  • Heat the oil in a pan and add the veggies and the cayenne powder. Cook over medium-high heat until golden brown, stirring occasionally. Add more oil or a little bit of water if needed.
  • Add all the remaining ingredients, stir, and cook for about 10 minutes or until the sauce thickens.
  • Serve the filling over the buns and add your favorite veggies (I added some red cabbage, carrot, fresh chili peppers, and avocado slices).
  • Keep the leftover filling in an airtight container in the fridge for 3-5 days or in the freezer for up to 3 months.

1 pound cremini mushrooms, halved
1 tablespoon extra-virgin olive oil
1 large sweet onion, diced
1 3/4 cups light beer (drink what's left in the bottle)
Kosher salt
1/3 cup finely chopped walnuts
1 small green bell pepper, seeded and diced
Freshly ground black pepper
1/2 teaspoon chipotle chile powder
1/4 cup ketchup
3 tablespoons tomato paste
6 whole grain hamburger buns
Shredded red cabbage or lettuce, pickled jalapeno and scallions, for serving, optional

Steps:

  • Pulse the mushrooms in batches in a food processor until finely chopped. Set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, 1 tablespoon beer and 1/4 teaspoon salt and cook, stirring frequently, until the onions are lightly browned, about 5 minutes. Add the walnuts and peppers and cook, stirring occasionally, until the peppers are crisp-tender, about 3 minutes. Add the mushrooms, 3/4 teaspoon black pepper and chipotle powder and cook, stirring frequently, until the mushrooms are just cooked through, about 5 minutes.
  • Add the remaining beer, the ketchup, tomato paste and 1/8 teaspoon salt and cook while stirring until the sauce is the consistency that you like, about 2 minutes.
  • Spoon the mixture onto each bun. Serve with toppings if desired.

1 onion, finely chopped
2 cloves garlic, crushed
1/2 large red pepper, finely chopped
180g (6 oz) chilled veggie mince
1 tsp smoked paprika
1 tsp ground cumin
1 tsp onion powder
1 x 400g (14 oz) tin chopped tomatoes
3 tbsp tomato puree
1 tbsp white wine vinegar
1 tbsp maple syrup
50ml (1/4 cup) vegetable stock (1 vegetable stock cube)
a good grinding of salt and pepper

Steps:

  • In a large pan or frying pan, saute the onion and garlic in the olive oil until soft.
  • Add the chopped red pepper and cook gently for a few more minutes.
  • Add the veggie mince and spices and stir to combine.
  • Add the rest of the ingredients, mix well and cook on a medium heat for 15 to 20 minutes until the savoury mince is thick and delicious!
  • Serve on a toasted bun naked or with your favourite toppings.

These really are the best ever sloppy joes! Sassy, tangy, sweet and spicy with a great balance of flavors. Plus, this is a quick 'n easy one dish meal (don't mind the long list of ingredients, it really goes together quickly, I promise). The veggies get "sneaked in" & they contribute mellow depth of flavor, while providing valuable health benefits to your family (and nobody will be the wiser!). :) Serve hot on a warmed hamburger bun (we like soft potato buns) with or without shredded cheese, and a pickle spear on the side is good. YUM! I like to make a double batch, one for now and one for later because leftovers are super fabulous the next day (and it freezes beautifully, as well). Hope you enjoy as much as we do!! :)
