1 cup butter, cut into small pieces, plus more for preparing pans
2 cups all-purpose flour, plus more for preparing pans
2/3 cup sugar
1/2 teaspoon salt
2 (14 ounce) cans sweetened condensed milk
2 tablespoons butter
3/4 lb good-quality milk chocolate

Steps:

  • Shortbread:.
  • Preheat the oven to 350 degrees F.
  • Prepare 2 (8-inch) square non-stick pans with butter and coat with flour, tapping off excess. Place the flour, sugar and salt in a food processor and pulse once. Add butter and pulse until mixture resembles peas. Press the shortbread mixture into prepared pans and bake until golden brown around the edges, about 20 minutes. Remove from the oven to cool completely.
  • Caramel Layer:.
  • In a heavy-bottomed sauce pan over medium-low heat, combine the condensed milk and 2 tablespoons of butter. Slowly bring the mixture to a boil, stirring continuously. Continue stirring over the heat until mixture becomes thick and amber in color, about 15 minutes. Pour the caramel over the cooked shortbread and spread evenly using an offset spatula. Cool to room temperature.
  • Chocolate Topping:.
  • In a glass bowl set over a saucepan of simmering water, melt the chocolate. Once chocolate has melted, pour it over the cooled caramel layer. Cool at room temperature for about 10 minutes, and then place in the refrigerator to cool completely allowing chocolate to slightly harden but not set hard.
  • Cut into 2 inch squares and enjoy, or store in an airtight container at room temperature or keep in the fridge for a yummy sweet and cool treat!

1 cup all-purpose flour, spooned into measuring cup and leveled-off
¼ cup dark brown sugar
2 teaspoons cornstarch
¼ teaspoon salt
1 stick (½ cup) cold unsalted butter, cut into ½-inch cubes
1 tablespoon ice water
1 large egg yolk
1 (14-oz) can sweetened condensed milk
½ cup dark brown sugar
6 tablespoons unsalted butter
2 tablespoons golden syrup (such as Lyle's Golden Syrup) or dark corn syrup
1 teaspoon vanilla extract
Generous pinch salt
6 ounces semi-sweet chocolate, broken into small pieces, best quality
3 tablespoons heavy cream

Steps:

  • Preheat the oven to 350 degrees. Line a 9-inch square pan with aluminum foil, pushing the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray or grease with butter.
  • In the bowl of a food processor fitted with a metal blade, combine the flour, brown sugar, cornstarch and salt; process until well combined and no lumps of brown sugar remain. Add the butter and pulse until a coarse meal forms. Add the ice water and egg yolk and blend until moist clumps form. Dump the dough into the prepared pan and press with your fingers into an even layer (dust your fingers with flour if the dough is too sticky). Pierce the dough all over with a fork and bake until golden, about 20 minutes. Set aside to cool.
  • Whisk the sweetened condensed milk, brown sugar, butter, golden syrup, vanilla and salt together in a medium saucepan over medium heat until the sugar dissolves, the butter melts and the mixture comes to a boil. Attach a candy thermometer to the side of the pan and boil gently, whisking constantly, until the caramel is thick and the temperature registers 225 degrees F, about 6 minutes. Pour the caramel over the warm crust; cool for about 15 minutes, or until caramel is set.
  • Place the chocolate and cream in a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until the chocolate is about 75% melted. Stir, allowing the residual heat in the bowl to melt the remaining chocolate, until smooth (if necessary, place the chocolate back in the microwave for a few more; just be sure not to overheat or the mixture will curdle). Spread the chocolate over the caramel layer. Refrigerate the bars until the chocolate is set, at least 1 hour. Using the foil overhang, lift the bars out of the pan and transfer to a cutting board. Cut into small squares and store in the refrigerator until ready to serve.
  • Note: The shortbread layer will crumble a bit when you cut it; that's just the nature of it.
  • Freezer-Friendly Instructions: These can be frozen for up to 3 months. After they are completely cooled, double-wrap them securely with aluminum foil or plastic freezer wrap. Thaw overnight on the countertop before serving.

250g plain flour
75g caster sugar
175g butter, softened
100g butter or margarine
100g light muscovado sugar
397g can condensed milk
200g plain or milk chocolate, broken into pieces

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Lightly grease and line a 20-22cm square or rectangular baking tin with a lip of at least 3cm.
  • To make the shortbread, mix 250g plain flour and 75g caster sugar in a bowl. Rub in 175g softened butter until the mixture resembles fine breadcrumbs.
  • Knead the mixture together until it forms a dough, then press into the base of the prepared tin.
  • Prick the shortbread lightly with a fork and bake for 20 minutes or until firm to the touch and very lightly browned. Leave to cool in the tin.
  • To make the caramel, place 100g butter or margarine, 100g light muscovado sugar and the can of condensed milk in a pan and heat gently until the sugar has dissolved. Continually stir with a spatula to make sure no sugar sticks to the bottom of the pan. (This can leave brown specks in the caramel but won't affect the flavour.)
  • Turn up the heat to medium high, stirring all the time, and bring to the boil, then lower the heat back to low and stirring continuously, for about 5-10 minutes or until the mixture has thickened slightly. Pour over the shortbread and leave to cool.
  • For the topping, melt 200g plain or milk chocolate slowly in a bowl over a pan of hot water. Pour over the cold caramel and leave to set. Cut into squares or bars with a hot knife.

3 tablespoons brown sugar

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch square pan.

A quick and easy way to make the gooey sticky treat! Since I'm aware that shortbread is a typically Scottish biscuit, and may not translate across the pond, I've included how to make it from scratch. However, this works just as well with the shop bought kind.

200 g plain flour
130 g salted butter
65 g golden caster sugar
50 g butter
200 g dark brown sugar
200 g salted butter
397 g sweetened condensed milk
400 g milk chocolate

Steps:

  • If you're making the shortbread from scratch then start here:.
  • Beat the butter with a wooden spoon to soften it.
  • Beat in the sugar, followed by the flour (sifted to avoid awkward lumps).
  • Work the ingredients, first with the spoon, then with your hands, until you have a soft dough that completely stays together without leaving bits in the bowl.
  • Divide the dough into two equal sized pieces.
  • Transfer the dough to a flat surface and roll out lightly until it 5mm to a centimetre thick.
  • Place each half of the dough into a separate 9 inch square tin.
  • Prick the shortbread all over with a fork.
  • Cook the shortbread in a very low oven (300F, 150C, GM2) for 50 minutes.
  • The shortbread will almost certainly not go hard while still in the oven. It needs to cool before it firms up.
  • If you have bought 400g of shortbread:.
  • Place the shortbread in a sandwich bag and bash with a rolling pin until you have a bag of biscuit crumbs.
  • Melt 50g of butter, add the shortbread crumbs and mix inches.
  • Press into the bottom of the two 9 inch square tins and refrigerate for 30 minutes.
  • To make the caramel:.
  • Place the butter and sugar into a pan over a medium heat and stir until butter is melted and sugar dissolved.
  • Add the can of sweetened condensed milk.
  • Increase the heat and stir vigorously until the mixture just begins to boil.
  • Important: It will look like there is a massive excess of melted butter floating on the top. If you remove this the mixture WILL NOT SET so LEAVE IT THERE!
  • Just as the mixture begins to boil (i.e. you see the first big bubbles break the surface) remove from the heat and continue to stir vigorously for 2 minutes.
  • Pour the caramel over the chilled shortbread, and leave to set for 20 minutes.
  • To finish:.
  • Melt 400g of milk chocolate in a glass bowl over boiling water. (For the best result, break the chocolate into pieces no smaller than 1 inch square, heat water until it is at a rolling boil, add chocolate, and then reduce to a simmer with only a few large bubbles and DO NOT TOUCH until most of the chocolate has melted).
  • Pour over the shortbread.
  • Now refrigerate for several hours until set.
  • Score each tin into 24 pieces.

1 1/4 cups unsalted butter, softened
1/4 cup all-purpose flour
1 large egg yolk, slightly beaten
28 ounces sweetened condensed milk (two 14-ounce cans)
6 ounces dark chocolate, coarsely chopped (60% cacao)
1 teaspoon light corn syrup
1/2 cup unsalted butter, softened, cut into cubes

Steps:

  • Preheat the oven to 350°F butter the bottom and sides of aa 9-by-13-inch baking pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the sugar and butter together until blended.
  • Add 2 cups of the flour and beat until well combined. Add the egg yolk and beat for a few seconds, or until just combined.
  • Turn the dough out onto a lightly floured work surface. Dust the top of the dough and your hands with a little flour. Use your hands to gently work the dough into a 6-by-6-inch square. You will have to turn the dough and sprinkle the top with flour as you go. Sprinkle the remaining 1/2 cup flour on the surface of the dough. Fold the dough over and knead until incorporated, then flatten the dough into a rectangle. Transfer the rectangle to the prepared pan and press it into the pan.
  • Prick the dough all over with a fork and bake in the center of the oven for 20 to 22 minutes, until golden brown. Transfer to a wire rack and let cool completely.
  • Put the sweetened condensed milk in a large microwave-safe bowl. Cook on 50 percent power (medium) for 4 minutes, stirring briskly halfway through, until smooth.
  • Cook on 30 percent power (medium-low) for 12 to 18 minutes, until very thick and caramel colored, stirring briskly every 2 minutes, until smooth.
  • Pour the caramel filling over the cooled shortbread and place the pan in the refrigerator until cool, about two hours.
  • In a large nonreactive metal bowl, combine the chocolate, corn syrup, and butter. Set the bowl over a saucepan of simmering water and cook, stirring with a rubber spatula, until the mixture is completely smooth. Remove the bowl from the pan and stir for 30 seconds to cool slightly. Pour the mixture over the chilled caramel layer and use an offset spatula to spread it into an even layer.
  • Put in the refrigerator for 1 hour, or until the glaze hardens.
  • Remove the pan from the refrigerator 30 minutes before serving so as not to crack the chocolate glaze. Cut into squares and serve.

2 cups plain flour
150 g butter
1/2 cup caster sugar
1/2 cup butter
1/2 cup soft brown sugar
4 cups sweetened condensed milk
2 cups milk chocolate (broken in to pieces)

Steps:

  • Rub the butter and flour together in a bowl until you have a mix which is similar to breadcrumbs or use food processor. Stir in the sugar. Spread the mixture evenly into a 9" (23cm) square tin which has been greased. Bake in a pre-heated oven at 170C/340F (160C/320F if fan assisted) for approximately 35 minutes until it is golden brown. Allow the base to cool.
  • Heat the filling ingredients together in a pot with lid on, making sure that you check and stir it VERY regularly (otherwise it will stick!) as it simmers making sure it doesn't simmer over. Continue stirring and checking until it thickens. Spread the filling evenly over the base and again allow to cool.
  • Melt the chocolate in a bowl over a simmering pan of water so that you can spread it over the filling.
  • When it has cooled, cut up into small squares with a sharp knife. Allow chocolate to soften slightly (maybe at room temperature for 15/20 mins) before or it will crack as you are cutting it, then you can put back in fridge!
