We bring extra umami (a savoriness) to a traditional green bean casserole with the addition of dried shiitake mushrooms. Once rehydrated, they turn soft and earthy, and their soaking liquid adds oomph to the sauce as well. Our fried onion topping is made from scratch - first, a dip in buttermilk, then fried to crunchy perfection.

1 ounce dried shiitake mushrooms
4 tablespoons unsalted butter
1 white onion, diced
12 ounces cremini mushrooms, sliced
6 tablespoons all-purpose flour
4 cups low-sodium chicken or vegetable broth
Kosher salt
1 1/2 pounds green beans, trimmed and halved
3/4 cup heavy cream
Freshly ground black pepper
1 white onion, halved and thinly sliced
1 cup buttermilk
2 cups all-purpose flour
Kosher salt
Vegetable oil, for frying

Steps:

  • Make the casserole: Place the dried shiitake mushrooms in a small bowl and cover with boiling water, about 2 cups, and cover with plastic wrap. Let steep for 20 minutes. Strain through a fine mesh strainer, reserve 1/2 cup of the liquid and slice the steeped mushrooms.
  • Melt the butter in a large Dutch oven over medium heat. Add the diced onion; cook, stirring, until softened, 7 to 10 minutes. Add the cremini and shiitake mushrooms; saute until softened and most of the liquid has evaporated, 10 minutes. Sprinkle in the flour; cook, stirring, 1 minute. Add the broth and mushroom liquid. Bring to a boil, then reduce the heat to medium-low and simmer until thickened, 5 to 10 minutes.
  • Bring a pot of salted water to a boil. Add the green beans and cook until crisp-tender, 7 to 10 minutes. Drain; shake off any excess water and add to the mushroom sauce. Cook, stirring occasionally, until the beans are very tender and the sauce is thick, 10 to 12 minutes. Stir in the heavy cream and season with 2 teaspoons of salt and pepper.
  • For the topping: Soak the sliced onions in the buttermilk, 5 minutes. Combine the flour and 1 teaspoon salt in a medium bowl. Heat 2 to 3 inches vegetable oil in a large pot until a deep-fry thermometer registers 350 degrees F. Working in batches, drain the onion, toss with the flour and shake off the excess, then fry until golden, 4 to 6 minutes. Drain on paper towels.
  • Transfer the green bean mixture to a 4-quart baking dish and top with the fried onions. (The casserole and topping can be made up to 2 hours ahead; refrigerate the casserole. Bring to room temperature; reheat at 350 degrees F, 30 minutes. Top with the fried onion; bake 5 more minutes.)

3 slices thick-cut bacon (, diced)
1/2 cup finely chopped yellow onion
2 cloves garlic (, minced)
12 ounces fresh button or cremini mushrooms (, chopped)
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup half-and-half
1 cup chicken broth
1/2 cup shredded white cheddar cheese
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound fresh green beans (, trimmed, halved, and blanched (boil 5 minutes, place beans in ice water for a couple of minutes, drain))
1 can quality French fried onions
or gluten free French fried onions

Steps:

  • Preheat the oven to 350 degrees F.
  • Fry the bacon in a large skillet over medium-high heat until crispy. Add the onions and cook until soft and translucent, about 4-5 minutes. Add the mushrooms and garlic and cook for another 4-5 minutes until the mushrooms are soft. Transfer the mixture to a bowl.
  • Melt the butter in the same skillet and whisk in the flour. Once combined, continue whisking for another 2 minutes until the mixture has slightly deepened in color. Add the half-and-half and chicken broth while constantly whisking to prevent lumps. Once slightly thickened, add the cheese and whisk until melted and combined.
  • Next add the mushroom/bacon mixture along with the salt and pepper. Let the sauce simmer for a couple of minutes, then add the green beans. Stir to combine.
  • Pour the bean mixture into a 9x13 casserole dish and sprinkle the French fried onions all over the top. Bake uncovered for 30 minutes until bubbling and the onions are golden and crispy. Let sit for 5 minutes before serving.

The recipe, which originally called for four cups of cooked, cut green beans, one can of cream of mushroom soup, some milk, some soy sauce, a dash of pepper, and a canned French-fried onion, landed Reilly a spot in the Inventors Hall of Fame in 2002.I'm not trying to reinvent this holiday classic yet again, I'm just trying to make it even classic-er while making it taste more like the stuff that's supposed to be in it rather than commercial emulsifiers and salt. By the way, the green bean part of the casserole can be assembled up to a day ahead. Just leave off the top onions until you're ready to bake and bring the casserole out of the fridge about an hour before hitting the oven. 1 pound fresh green beans, trimmed and halved

2 large onions, thinly sliced on a mandoline
1/4 cup rice flour
5 tablespoons unsalted butter
12 ounces button mushrooms, quartered
1 teaspoon freshly ground black pepper
4 cloves garlic, minced
1 teaspoon freshly grated nutmeg
1/3 cup all-purpose flour
2 cups unsalted chicken broth
1 tablespoon sherry vinegar
2 cups half and half

Steps:

  • Heat oven to 350ºF with a rack in the middle.
  • Bring 3 quarts of water and 2 tablespoons of the salt to a boil in a large, heavy pot, such as a Dutch oven. Prepare an ice bath in a salad spinner. Add the beans to the boiling water, return to a boil, and cook until just tender, about 8 minutes. Drain the beans, then immediately transfer to the ice bath. Let sit until cool, about 5 minutes, then remove the basket insert and pour out the ice water. Spin the greens to dry them. Dry the pot well.
  • Next, pour 3/4 inch of oil into the now-dry pot, and bring to 375°F over medium-high heat. Line a half sheet pan or platter pan with paper towels and stash next to the cooktop.
  • While the oil heats, combine the onions and rice flour in a medium bowl and toss to coat the slices evenly in the flour. When the oil hits its target temp, carefully add about a quarter of the onion slices to the oil and fry, stirring occasionally, until golden brown, about 5 minutes. Use a spider to transfer to the prepared sheet pan and season lightly with salt. Repeat with the remaining onions, then set aside. (The onions can be made up to a week ahead and stored in airtight containment at room temperature.)
  • Melt the butter in a 12-inch cast iron skillet over medium heat. When the butter is foamy, add the mushrooms, the 2 teaspoons salt, and the pepper. Cook, stirring frequently, until the mushrooms have given off all of their liquid, the liquid has evaporated, and the mushrooms have browned, about 10 minutes
  • Add the garlic and nutmeg and cook, stirring constantly, until aromatic, about 30 seconds. Sift the flour over the mushrooms, then continue to cook, stirring, until the rawness has been cooked out of the flour, about 1 minute.
  • Stir in the vinegar and cook about 1 minute. Slowly stir in the broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, then stir in the half and half. Return to a simmer, then reduce the heat to low. Continue to simmer, stirring frequently, until the mixture is quite thick, about 12 minutes. Remove from the heat.
  • Stir in the green beans and half of the fried onions, then top with the remaining onions. Transfer to the oven and bake until the sauce is bubbly around the edges and the onions are deeply browned, about 10 minutes.

I am trying this for Thanksgiving this year! I might add a little white pepper, bacon or some red pepper flakes...but I have to try the original version first!

1 1/2 lbs fresh french beans, ends trimmed (green beans)
4 tablespoons butter, divided
2 tablespoons vidalia onions, finely chopped
4 ounces baby portabella mushrooms, cleaned and finely chopped (about 2 tablespoons)
2 tablespoons all-purpose flour
1 cup sour cream
fresh ground black pepper
1 1/2 cups corn flakes cereal (recommended ( Corn Flakes)
1/2 lb mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of salted water to a boil over medium heat then add the beans and cook until just tender (but still firm), about 5 to 7 minutes. Remove the beans from the water to a large bowl of ice water to preserve color and stop the cooking then drain the beans and set aside.
  • Melt 2 tablespoons of the butter in a large skillet over medium-high heat; Add the onions and saute until translucent.
  • Stir in the mushrooms, season with salt and pepper to taste, saute about 3 to 5 minutes.
  • Add the flour and stir for another minute, to cook out the raw flour taste, and then whisk in the sour cream.
  • Simmer for just a couple of minutes to bring the flavors together and taste for seasoning.
  • Cut the green beans into 2-inch pieces.
  • Melt the remaining 2 tablespoons of butter in a small pan. Crush the cereal flakes in a resealable plastic bag and add them to the pan with the butter, tossing to coat.
  • Spread the green beans over the bottom of a 9-inch casserole dish and pour all of the mushroom sauce mixture over the beans topping with the grated cheese.
  • Sprinkle with the buttered cereal flakes and bake in the preheated 400 degree F oven, until light golden brown and bubbly, approximately 20 minutes.
  • Remove from the oven and serve.
