CLAM-CHOWDER PIZZA

Clam-Chowder Pizza image

The clam pizza is thought to have been born in New Haven at Frank Pepe Pizzeria Napoletana, in the middle of the last century, and has since made its way south to New York City. My recipe honors no one particular preparation but does pay homage to the clam pan roasts of the Grand Central Oyster Bar. It uses as sauce the building blocks of a classic clam chowder - alliums slowly fried with bacon, then infused with clam juice and wine, reduced to a glaze and thickened with cream - and tops it with chopped clams, lemon zest and a spray of hot pepper flakes. This makes for a heavy pie. If you're having a hard time moving it around on the pizza peel before baking, place a sheet of parchment paper beneath the dough, which will help when you slide the pie to the hot surface of the baking stone in the oven.

Categories     pizza and calzones, main course

Time 1h15m

Yield 4 to 8 servings

Number Of Ingredients 13

12 medium-size quahog clams, usually rated "top neck" or "cherrystone," rinsed
1 1/2 cups dry white wine
1 tablespoon unsalted butter
1/4 pound slab bacon, diced
2 leeks, tops removed, halved and cleaned, then thinly sliced into half moons
3 cloves garlic, peeled and minced
3 tablespoons parsley, roughly chopped
1/2 cup heavy cream
Freshly ground black pepper, to taste
1 9-to-10-ounce ball pizza dough, ideally homemade (about 260 grams)
2 3/4 ounces fresh mozzarella, roughly torn
1 teaspoon lemon zest
Calabrian or other red-pepper flakes, to taste

Steps:

  • Place a pizza stone or tiles on the middle rack of your oven, and turn heat to its highest setting. Let it heat for at least an hour.
  • Put the clams in a large, heavy Dutch oven, add about 2 cups of water and 3/4 cup of the wine, then set over medium-high heat. Cover, and cook until clams have opened, approximately 10 to 15 minutes. (Clams that fail to open after 15 to 20 minutes should be discarded.) Strain clam broth through a sieve lined with cheesecloth or doubled-up paper towels, and set aside. Remove clams from shells, chop roughly and set aside.
  • Rinse out the pot, and return it to the stove. Add butter, and turn heat to medium low. Add bacon, and cook, stirring occasionally, until the fat has rendered and the bacon has started to brown, approximately 5 to 7 minutes. Use a slotted spoon to remove bacon from fat, and set aside.
  • Add the leeks to the fat, and cook, stirring frequently, for about 5 minutes, then add the garlic and half of the parsley. Continue cooking and stirring until the leeks are soft but not brown, about 5 minutes more.
  • Stir in the remaining wine and approximately 1 cup of the reserved clam stock (save the rest for another use), and continue cooking until the liquids have reduced almost to syrup.
  • Add cream and black pepper. Let the mixture come to a bare simmer, then allow to reduce and thicken, then add reserved clams and remove from heat. (You can do all this the day before you make the pizza, then refrigerate until ready to use.)
  • Make the pizza. Lightly flour a work surface, and stretch or roll the dough into a 12-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Using a pastry brush or a spoon, lightly paint the surface of the dough with some of the cream from the clams, leaving a half-inch border all around. Then top the pizza with the chopped clams, bacon and leeks, and the cheese. (If there is any remaining liquid, you can lightly - lightly! - drizzle the pie with it.)
  • Shake the pizza peel slightly to make sure the dough is not sticking. (Gently lift any sections that are sticking, and sprinkle the peel with flour.) Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Sprinkle with the remaining parsley, the lemon zest and red-pepper flakes to taste, then serve.

BEST CLAM PIZZA RECIPE

Best Clam Pizza Recipe image

Transport yourself to New Haven with this white clam pizza from Pasquale Jones in New York City.

Provided by Tasting Table Staff

Categories     Main Course

Time 1h

Number Of Ingredients 20

2 tablespoons olive oil1 garlic clove, minced
⅛ bunch (2 ounces) broccoli rabe
Kosher salt, to taste
20 littleneck clams
2 tablespoons olive oil
5 garlic cloves, thinly sliced
1 shallot, minced
1 parsley stem
1 thyme sprig
¼ cup white wine
1 cup heavy cream
Kosher salt and freshly ground black pepper, to taste
All-purpose flour, for dusting
4 balls no-knead pizza dough
Clam cream
Chopped clams
Chopped broccoli rabe
¼ cup roughly chopped parsley
Sicilian chile flakes, to taste
Lemon wedges, for serving

Steps:

  • Make the broccoli rabe: In a medium skillet over medium heat, add the olive oil and sauté the garlic until fragrant, 3 minutes. Add the broccoli rabe and cook until it's tender, 5 minutes. Season with salt. Transfer to a cutting board and roughly chop, then set aside.
  • Make the clam topping: Rinse the clams to wash off sand and debris. Soak for 30 minutes in salted water to allow the clams to purge any excess sand, then strain and rinse again.
  • In a large rondeau, add the olive oil and sweat the garlic, shallots, parsley stem and thyme over medium heat until translucent, 5 minutes. Add the white wine and the clams, stirring to coat. Cover the pan and allow the clams to steam until they open, 5 to 7 minutes. Remove from the heat and transfer the clams to a bowl, reserving the cooking liquid. Return the pan to medium heat and reduce the liquid until syrupy, 12 to 15 minutes. Strain the mixture and let cool completely.
  • Once cool enough to handle, remove the clam meat from the shells and roughly chop, discarding the shells.
  • In a medium bowl, whip the heavy cream to soft peaks, then stream in the reduced clam liquid and adjust for seasoning. Continue to whip the cream to medium peaks.
  • Make the pizza: Preheat the oven to 500º with a pizza stone on the middle rack. On a lightly floured surface, spread 1 ball of the pizza dough out into a 12-inch circle. Spread a quarter of the cream in a thin layer, leaving a 2-inch border around the surface of the dough. Top with a quarter of the chopped clams and broccoli rabe, 1 tablespoon of the chopped parsley and chile flakes. Transfer the pizza to the hot pizza stone until crisp and golden brown, 6 to 8 minutes. Remove from the oven, slice and serve with lemon wedges. Repeat with the remaining 3 balls of pizza dough.

GRILLED PIZZAS WITH CLAMS AND BACON

Grilled Pizzas with Clams and Bacon image

The flavorful topping on this pizza -- briny littleneck clams with slab bacon, fresh parsley, onion, garlic, white wine, and cream -- is almost like a cooked-down New England clam chowder, concentrated and delicious. Red-pepper flakes add some flash.Clams give the creamy sauce a salty, fresh-from-the-sea essence. They're then used as a topping along with bacon and parsley.

Time 1h

Yield Makes three 9-inch pizzas

Number Of Ingredients 10

2 ounces slab bacon, chopped

GRILLED PIZZAS WITH CLAMS

Grilled Pizzas with Clams image

A clam pizza with corn and pancetta is unexpected and delicious.

Provided by Martha Stewart

Categories     Pork Recipes

Yield Makes 6 nine-inch pizzas

Number Of Ingredients 11

2 cups dry white wine
2 1/2 pounds littleneck clams (about 2 dozen), scrubbed well
5 ounces pancetta, coarsely chopped
3 garlic cloves, finely chopped
3 cups fresh corn kernels (about 3 ears)
1 tablespoon coarsely chopped fresh oregano
2 tablespoons coarsely chopped fresh flat-leaf parsley, plus more for garnish
Coarse salt and freshly ground pepper
Pizza Dough for Grilled Pizzas
Extra-virgin olive oil
1 cup finely grated Parmesan cheese (4 ounces), plus more for sprinkling

Steps:

  • Bring wine just to a boil in a large saucepan over medium-high heat. Add clams, and cover pan. Cook, shaking pan occasionally, until clams open (check pan frequently after 8 minutes). As they open, transfer clams with a slotted spoon to a large bowl (discard any that remain closed after 10 minutes). When clams are cool enough to handle, remove from shells and coarsely chop; set aside.
  • Cook pancetta in a large skillet over medium-high heat, stirring occasionally, until crisp, 3 to 4 minutes. Transfer with a slotted spoon to paper towels to drain. Add garlic to skillet, and cook until fragrant, about 1 minute. Add corn kernels, and cook until tender and bright yellow, about 2 minutes.
  • Transfer corn to a large bowl. Stir in clams, pancetta, oregano, and parsley. Season with salt and pepper; set aside.
  • Heat a grill until medium-hot. Generously brush one side of pizza dough with oil; grill, oiled side down, until underside is golden brown and top begins to bubble, 3 to 5 minutes. Quickly brush top with oil; flip crust. Top with some of the cheese and some of the clam mixture. Grill until cheese is just melted, topping is hot, and crust is cooked through, 3 to 5 minutes more.
  • Slide pizza with a large spatula onto a cutting board. Drizzle with oil; sprinkle with more cheese. Season with salt and pepper. Repeat to make more pizzas.

RED CLAM PIZZA

Red Clam Pizza image

This pizza remains dairy-free until it hits the table, where you can decide to add Parmesan--or not. Not "fishy" tasting, plus the clams were delicious and not rubbery! My 9 year-old loves this pizza! For the sake of brevity, I'm not including a crust recipe--just use your favorite one. We enjoyed it with a New York Style crust. NEW HAVEN-STYLE CLAM PIZZA

New Haven-Style Clam Pizza image

Most cookware stores carry baker's peels (wooden, paddle-like implements used to slide pizza into ovens) and pizza stones; these tools make it easy to create a crust with character, but good crusts also require a very hot oven. In our experience, the most common flaw in home-made pizza is mozzarella overdose: Too much of it smothers the rest of the pie, causing what's below to steam into softness. The following pie is made without any mozzarella at all. Needless to say, the roster of toppings is flexible.

Yield Serves 2 as an entrèe or 4 as an hors d'oeuvre

Number Of Ingredients 11

1 teaspoon sugar
1 cup warm water
a 1/4-ounce package (2 1/2 teaspoons) active dry yeast
2 to 2 3/4 cups all-purpose flour
2 teaspoons salt
3 large garlic cloves, minced
1/4 cup olive oil
cornmeal for sprinkling baker's peel
12 littleneck clams, schucked, reserving liquor
1 teaspoon dried oregano, crumbled
2 tablespoons freshly grated Romano cheese

Steps:

  • 1. In a small bowl dissolve sugar in 1/4 cup water. Sprinkle yeast over water and let stand until foamy, about 5 minutes.
  • 2. In a large bowl stir together 2 cups flour, remaining 3/4 cup water, salt, and yeast mixture.
  • 3. Transfer dough to a floured surface and clean and oil large bowl.
  • 4. Knead dough vigorously, incorporating as much of remaining 3/4 cup flour as necessary to create a silky dough, a full 15 minutes.
  • 5. Transfer dough to prepared bowl, turning to coat slightly with oil, and cover bowl with 2 tight layers of plastic wrap. Let dough rise in a warm place 2 to 3 hours, or until doubled in bulk.
  • 6. While dough is rising, in a small bowl combine garlic and oil and chill, covered.
  • 7. Punch down dough and flatten on a lightly floured surface. Pounding with heel of hand and lifting, stretch dough carefully and work into a round about 15 inches in diameter (or into 2 smaller rounds).
  • 8. Put pizza stone on bottom shelf of oven and preheat oven to 500°F.
  • 9. Sprinkle baker's peel with cornmeal and slide dough onto it. Cover dough with a kitchen towel and let it rest, covered with the kitchen towel, about 15 minutes. While dough is resting, let garlic oil come to room temperature.
  • 10. Brush dough evenly with garlic oil, leaving a 1/2-inch border untouched. Arrange clams with a dash of reserved liquor over garlic oil and sprinkle with oregano and Romano.
  • 11. Shake and slide pizza off baker's peel onto pizza stone in oven. Reduce oven temperature to 450°F. and bake pizza 15 minutes, or until crust is medium brown.
  • 12. Serve pizza immediately with plenty of napkins. Serves 2 as an entrée or 4 as an hors d'oeuvre.
