BUTTERMILK BRAN MUFFINS
Steps:
- Preheat oven to 400 degrees.
- Grease twelve muffin cups or use paper liners.
- In a large bowl, combine oil, All-Bran cereal and buttermilk. Let sit for about 5 minutes.
- Add eggs, raisins, molasses, brown sugar and vanilla. Stir just until ingredients are incorporated.
- Add to the large bowl: wheat and white flours, baking soda, baking powder, cinnamon and salt.
- Fold into the wet ingredients.
- Scoop batter into greased muffin cups. Fill all cups evenly, as full as possible.
- Sprinkle with wheat bran or wheat germ (optional).
- Bake at 400 on center rack for about 15-18 minutes, or until muffin springs back when touched lightly.

- Stir All Bran, milk, applesauce, diced apple, oil and eggs together in a large bowl with a wooden spoon.
- Stir together dry ingredients in a separate bowl and create a well in the centre.

- Fill greased muffin tin and bake at 375 F for 15-20 minutes.

- In a food processor, finely blend half the cereal until it resembles fine crumbs. Add raisins and blend until finely chopped. Transfer mixture to a bowl with remaining cereal, flour, whole-wheat flour, sugar, baking soda, and salt; set aside.

- Preheat oven to 350°F.
- Line 12 regular-size muffin tins with paper liners (or 7 jumbo muffin tins).
- In a medium bowl mix together the All-Bran cereal with buttermilk; let sit for about 10-12 minutes stirring once.
- In another bowl whisk together the oil, egg, brown sugar and vanilla until well blended, then add to the buttermilk mixture; mix to combine with a wooden spoon.

- Preheat oven to 375°F Lightly spray muffin pans.
- In large bowl, combine cereal with milk, let stand 10 minutes.
- In separate bowl, combine flour, baking powder, cinnamon, baking soda and salt.
- Whisk brown sugar, egg, molasses and melted butter into cereal mixture.
- Pour over dry ingredients and sprinkle with blueberries.
- Stir just until moistened.
- Spoon into prepared muffin pan. Bake 25 to 30 mins or until tops are firm to the touch.
- Note: to sour milk, spoon 4 tsp lemon juice or white vinegar into glass measuring cup, pour in enough milk to make 1 1/2 cups. Let stand for 5 mins then stir.
- If using frozen blueberries, do not thaw before adding to the muffins.
