Steps:
- Preheat oven to 350˚F (180˚C).
- Combine eggs, milk, vanilla, and cinnamon in a large bowl.
- Dip bread slices into egg mixture and gently press into muffin tin coated with cooking spray.
- Bake for 20-25 minutes or until golden brown.
- Prepare filling and fruit slices while cups bake.
- Fill up the slices with the filling and fruit.
- Serve with a drizzle of maple syrup.

PARTY TOAST CUPS
Delicious crispy toast cups made from sandwich bread make the perfect bite sized party appetizer when topped with your favorite fillings.

Steps:
- Preheat oven to 350° F.
- Using a rolling pin, roll each slice of bread slightly use a 2-inch biscuit cutter or cookie cutter to cut out 3 rounds from each slice.
- Brush the inside of a mini muffin pan with butter. Carefully fit the bread rounds into the mini muffin pan and brush the inside of the bread rounds with butter also.
- Bake the empty cups for 10 minutes or until lightly golden.
- Remove from oven and fill the cups with your favorite fillings. Bake again for 5 to 7 minutes.
- Note: If serving a filling that does not need to be baked (ex: fruit, cold chicken salad, etc) then initially bake for 12 minutes and remove from oven and fill.
- Toast cups, before being filled, can be frozen for up to 2 months, in a freezer safe container. Just thaw, fill and bake!

BERRY TOAST CUPS

Steps:
- Put oven rack in middle position and preheat oven to 400°F.
- Combine berries, liqueur, vanilla, 2 tablespoons sugar, and a pinch of salt in a bowl and let macerate at room temperature, stirring occasionally, 20 minutes.
- While berries macerate, cut out 8 rounds from bread using cookie cutter, then roll each round with a rolling pin, pressing firmly, into a flat 3 1/4-inch round. Generously brush muffin cups with some butter and press bread rounds onto bottom and up side of cups. Brush with remaining butter and toast until bottoms are golden, about 10 minutes.
- While bread cups toast, beat cream with remaining tablespoon sugar using an electric mixer at high speed until it just holds soft peaks.
- Transfer 2 toast cups to each of 4 plates, then divide berry mixture among toast cups and top with whipped cream and any leftover liquid from berries.
MIXED BERRY FRENCH TOAST BAKE
Steps:
- Whisk together first 6 ingredients. Place bread cubes in a 13x9-in. or 3-quart baking dish coated with cooking spray. Pour egg mixture over top. Refrigerate, covered, 8 hours or overnight., Preheat oven to 350°. Remove berries from freezer and French toast from refrigerator and let stand while oven heats. Bake, covered, 30 minutes., In a small bowl, cut butter into brown sugar until crumbly. Top French toast with berries; sprinkle with brown sugar mixture. Bake, uncovered, until a knife inserted in the center comes out clean, 15-20 minutes. If desired, dust with confectioners' sugar and serve with syrup.

- Evenly divide HALF of the bread cubes between 2 ramekins (save other half for later). Add raspberries, blueberries and blackberries, evenly diving between both ramekins. Top berries with cream cheese cubes; add remaining bread cubes on top. Set aside.
- Whisk eggs, milk and maple syrup in a medium bowl until combined. Pour into ramekins, evenly dividing liquid between both. Use back of a spoon to gently press bread cubes down as much as possible into egg mixture. This helps bread cubes absorb liquid before baking.
- Cover with plastic wrap; put ramekins in refrigerator for at least 1 hour (or more). Unwrap occasionally; push bread cubes down again into liquid. They won't ever be fully covered... just get them into the liquid as much as possible for best results! TIP: Remove from refrigerator 25-30 minutes before baking (to take chill off). Preheat oven to 350°F during this time.
