For the crust
10 ounces graham crackers (about 18 crackers)
3 tablespoons sugar
1/4 teaspoon kosher salt
10 tablespoons (141g) unsalted butter, melted
For the filling
1 1/2 pounds (680g) cream cheese, at room temperature
1 cup (208g) sugar
1/3 cup (85g) sour cream, at room temperature
1 tablespoon vanilla extract
Zest from 1 lemon (about 1 tightly packed teaspoon)
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/2 cup heavy cream, at room temperature
3 large eggs, at room temperature
2 cups (308g) fresh blueberries
For the blueberry sauce
3 cups (462g) fresh blueberries
1/2 cup (104g) sugar
2 teaspoons cornstarch
Zest from 1 lemon (about 1 tightly packed teaspoon)
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/3 cup water

Steps:

  • Preheat the oven: Position an oven rack in the center of the oven. Preheat it to 325°F.
  • Boil water: Fill a kettle or a large pot with water and cover it with a lid. Bring it up to a boil over high heat while you prepare the cheesecake filling. You will use the boiling water to create a hot water bath to bake the cheesecake.
  • Bake the cheesecake: Bake the cheesecake until slightly puffed up around the edges and 2 to 3 inches in the center is slightly jiggly (resembling Jell-O), about 1 hour 30 minutes. Turn the oven off and open the oven door about 1 inch. You can use a wooden spoon to prop the door open. Let the cheesecake finish setting in the oven until there is barely any jiggle left in the center, about 1 hour. Transfer to a wire rack to cool for 30 minutes. Loosely cover it with a clean kitchen towel and refrigerate it until fully cooled, at least 6 hours. The cheesecake will firm up and no longer jiggle in the center.

1-1/2 cups fresh blueberries
1/4 cup sugar
1 tablespoon lemon juice
2 teaspoons cornstarch
1 tablespoon cold water
CRUST:
1 cup graham cracker crumbs (about 16 squares)
2 tablespoons sugar
2 tablespoons butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 large eggs, room temperature, lightly beaten

Steps:

  • Preheat oven to 350°. In a small saucepan, combine the blueberries, sugar and lemon juice. Cook and stir over medium heat for 5 minutes or until the berries are softened. Combine cornstarch and water until smooth; stir into the blueberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool to room temperature. Transfer to a blender; cover and process until smooth. Set aside. , For crust, in a small bowl, combine the crumbs and sugar; stir in the butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, flour and vanilla. Add eggs; beat on low speed just until combined. Pour filling over crust. Drizzle with 3 tablespoons blueberry mixture; cut through batter with a knife to swirl., Return pan to baking sheet. Bake for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Serve with remaining blueberry sauce. Refrigerate leftovers.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/3 cup sugar
1 cup whipping cream, whipped
1/2 cup raspberries
ice cubes
1 pkg. (3 oz.) JELL-O Raspberry Flavor Gelatin

Steps:

  • Cook 1 cup strawberries and 2 Tbsp. water in small saucepan on medium heat 3 to 5 min. or until strawberries are softened, stirring constantly. Remove from heat.
  • Combine graham crumbs and butter; press onto bottom of 9-inch springform pan.
  • Bring 1/4 cup of the remaining water to boil. Add to unflavored gelatine; stir until completely dissolved. Beat cream cheese and sugar in large bowl with mixer until blended. Add cooked strawberries and unflavored gelatine; mix well. Gently stir in whipped cream; pour over crust. Top with raspberries and remaining strawberries. Refrigerate 2 hours.
  • Use remaining water and ice to prepare raspberry gelatin as directed on package, using the Speed-Set Method; slowly pour over cheesecake. Refrigerate 2 hours or until firm.

3/4 cup finely crushed graham cracker
3 tablespoons butter, melted
32 ounces cream cheese, softened
4 eggs, at room temperature
1 1/4 cups sugar
1 tablespoon fresh lemon juice
2 teaspoons vanilla
2 cups sour cream
1/4 cup sugar
1 teaspoon vanilla
1 quart strawberry
12 ounces seedless raspberry jam
1 tablespoon cornstarch
1/4 cup peach schnapps
1/4 cup water

Steps:

  • Combine pecans, graham cracker crumbs and butter in a bowl and mix well.
  • Press in a lightly buttered 10-inch springform pan and bake at 350º for 10 minutes.
  • Remove to a wire rack to cool completely.
  • Beat cream cheese in a large mixing bowl until smooth and creamy.
  • Add eggs, 1 1/4 c sugar, lemon juice and 2 tsps vanilla and beat well.
  • Spoon into the cooled prebaked crust.

  • The cheesecake will rise slightly, crack in several places, settle, and cracks will minimize.
  • Let stand 15 minutes at room temperature to cool.
  • Mix sour cream, 1/4 c sugar and 1 tsp vanilla and chill, covered in the refrigerator until ready to use.
  • After the 15 minutes of cooking time for the baked cheesecake, spread with the sour cream mixture and bake again at 350º for 5 minutes.
  • Let stand at room temperature to cool.
  • Chill, covered, for up to 2 days.
  • Rinse the strawberries and pat dry. Arrange pointed end up on top of the cheesecake.
  • Spoon raspberry glaze over the top.
  • Chill, covered, until glaze is set.
  • For glaze: Mix a small amount of jelly and the cornstarch in a saucepan. Add the remaining jelly, schnapps and water and mix well. Cook over medium heat for 5 minutes or until thickened and clear, stirring constantly. Cool to lukewarm, stirring constantly.

1 1/2 cups graham cracker crumbs (10 crackers)
1 tablespoon sugar
6 tablespoons (3/4 stick) unsalted butter, melted
2 1/2 pounds cream cheese, at room temperature
1 1/2 cups sugar
5 whole extra-large eggs, at room temperature
2 extra-large egg yolks, at room temperature
1/4 cup sour cream
1 tablespoon grated lemon zest (2 lemons)
1 1/2 teaspoons pure vanilla extract
1 cup red jelly (not jam) such as currant, raspberry, or strawberry
1/2 pint sliced strawberries
1/2 pint fresh raspberries
1/2 pint fresh blueberries

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust, combine the graham crackers, sugar, and melted butter until moistened. Pour into a 9-inch springform pan. With your hands, press the crumbs into the bottom of the pan and about 1-inch up the sides. Bake for 8 minutes. Cool to room temperature.
  • Raise the oven temperature to 450 degrees F.
  • To make the filling, cream the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed of the mixer to medium and add the eggs and egg yolks, 2 at a time, mixing well. Scrape down the bowl and beater, as necessary. With the mixer on low, add the sour cream, lemon zest, and vanilla. Mix thoroughly and pour into the cooled crust.
  • Bake for 15 minutes. Turn the oven temperature down to 225 degrees and bake for another 1 hour and 15 minutes. Turn the oven off and open the door wide. The cake will not be completely set in the center. Allow the cake to sit in the oven with the door open for 30 minutes. Take the cake out of the oven and allow it to sit at room temperature for another 2 to 3 hours, until completely cooled. Wrap and refrigerate overnight.
  • Remove the cake from the springform pan by carefully running a hot knife around the outside of the cake. Leave the cake on the bottom of the springform pan for serving.
  • To make the topping, melt the jelly in a small pan over low heat. In a bowl, toss berries and the warm jelly gently until well mixed. Arrange the berries on top of the cake. Refrigerate until ready to serve.

1 cup sugar
4 eggs
1 tablespoon cornstarch
1 tablespoon vanilla extract
1 tablespoon lemon juice
1 pint sour cream
1/2 cup sugar
1 teaspoon vanilla extract
1/2 cup sugar
2 tablespoons cornstarch
1 1/3 cups cherry juice, and
water
3 drops food coloring
2 cups drained canned cherries

Steps:

  • Prepare crust by mixing together crumbs, sugar, spices and almonds. Stir in butter, mixing well. Press into bottom and slightly up sides of 10-inch springform pan. Set aside.
  • Prepare filling by throughly beating all filling ingredients in food processor fitted with steel blade, scraping down sides occasionally if using mixer, beat at least 10-15 minutes until well blended. Pour into prepared pan. Bake at 350 for 35-40.
  • Remove from oven. Cool for 5-10 minutes. Mix together topping ingredients and pour over cake. Return to oven. Bake at 475 for 5-7 minutes. Cool. Cover. Chill for at least 4 hours.
  • Prepare glaze by mixing well sugar and cornstarch in saucepan.
  • Stir in cherry juice. Simmer over medium heat, stirring, until mixture comes to boiling. Simmer 2 minutes. Remove from heat. Cool 5-10 minutes. Stir in food coloring.
  • Spread cherries evenly over chilled cheesecake. Pour glaze over. Chill until ready to serve.

1/2 cup butter, melted and cooled
1 pint sour cream

Steps:

  • Preheat oven to 325 degrees F.
